Mousse de Chocolate Blanco – White Chocolate Mousse


Para celebrar 3 años de matrimonio y concluir la cena de aniversario decidí preparar este rico postre, que consiste en un mousse de chocolate blanco con frutillas. Queria preparar algo especial, no muy empalagoso pero igualmente dulce. Quedamos encantados con el resultado, un mousse muy suave y cremoso.

Para 2 personas
Ingredientes:
Para el mousse
Chocolate blanco – 50 gr
Crema para batir – 75 ml
Huevos – 1 clara
Gelatina – ½ hoja
Azúcar – 25 gr

Para decorar
Frutillas
Azúcar de caña
Chocolate blanco en pedazitos

Preparación:
Como primera cosa, batimos la crema hasta doblar su volumen y la refrigeramos.
Mientras tanto derretir el chocolate a baño maria.
En un bowl pequeño ponemos la hoja de gelatina con un poco de agua fría para ablandarla, dejar en el agua por lo menos unos 5 minutos.
Mientras tanto batir la clara a nieve agregando mitad del azúcar al inicio y el resto cuando esté casi lista.
Cuando la gelatina se habrá ablandado, la estrujamos y le agregamos 2 cucharadas de agua caliente. Revolver hasta que se disuelva bien.
Agregar la gelatina disuelta al chocolate blanco derretido, revolviendo para que se mezcle bien.
Luego agregamos la mezcla de gelatina y chocolate a la clara batida a nieve y mezclamos delicadamente. Finalmente agregamos la crema refrigerada con mucho cuidado.
Las frutillas las puse en una olla a fuego dulce con el azúcar de caña hasta que empezaron a soltar el jugo y formar una salsa. El mousse lo compusé así: en el fondo del vaso un poco de salsa con frutillas y pedacitos de chocolate blanco, luego un poco de mousse y así sucesivamente hasta terminar todos los ingredientes. Decorar la superficie con frutillas, menta y chocolate blanco.
Refrigerar por unas horas.
Servir.

To celebrate 3 years of marriage and conclude the anniversary dinner I decided to prepare this delicious dessert, which consists of a white chocolate mousse with strawberries. I wanted to prepare something special, not sickly sweet but still a bit sweet. We were delighted with the result, a very soft and creamy mousse.
Here is this fantastic recipe of Rachel Allen. With this recipe I want to participate to the collection of recipes "Passione al Cioccolato" from the blog Dolcemente Neve.

Serves 2
Ingredients:
For the mousse
White Chocolate - 50 g
Whipping cream - 75 ml
Eggs - 1 egg white
Gelatin - ½ sheet
Sugar - 25 g

To decorate
Strawberries
Cane
White Chocolate into bits

Directions:
As first thing, whip the cream until doubled in volume and refrigerate.
Meanwhile melt the chocolate in double boiler over simmering water.
In a small bowl put the sheet of gelatin with a little cold water to soften it, leave it for at least 5 minutes.
Meanwhile beat the egg white until firm adding half sugar at the beginning and the rest when is almost firm.
When the gelatin will have softened, strain it and add 2 tablespoons of hot water. Stir until dissolved.
Add dissolved gelatin to the melted white chocolate, stirring to mix well.
Then add the gelatin mixture and the white chocolate to the egg white and mix gently. Finally add the whipped cream carefully.
I put strawberries in a pot with a few tbsp of cane sugar over low heat until the juice began to drop and form a sauce. The mousse was composed as follows: in the bottom of the glass a bit of sauce with strawberries and white chocolate chunks, then a bit of mousse and so on until you finish all the ingredients. Decorate the surface with strawberries, fresh mint and white chocolate.
Refrigerate for a few hours.
Serve.

Brigadeiro


Me ha siempre gustado el Brasil...su gente, sus paisajes, su comida, sus playas, su música y la alegría a flor de piel de su pueblo. He siempre tenido un gran respeto y afecto por esta tierra, sintiéndola casi como si fuera parte mía. Nosé si pasa solo a mi, pero es como si sintiera de tener una segunda patria...Adoro mi país y también Italia, pero Brasil me ha siempre cautivado...He visitado varias veces este hermoso país, del cual conservo sólo hermosos recuerdos y siento una “saudade” que me hace querer volver a la primera oportunidad.
Los caminos de la vida me han llevado a construir una larga y linda amistad en ese país, una de esas amistades que duran y sobreviven a pesar del tiempo, la distancia y la falta...Conocí a mi magnifica amiga brasileña hace ya 12 años, a lo largo de los cuales hemos testimoniado y seguido la vida del otra, diplomas, universidad, trabajos, matrimonios y recientemente me ha hecho tia.
Mi querida amiga hace un tiempo me mandó esta deliciosa receta de estos dulces típicos que se preparar especialmente para las fiestas y celebraciones, sobre todo para los más pequeños. Es muy fácil y rápida de preparar y el resultado es fantástico.
Aquí les dejo esta receta llena de nostalgia por esta tierra.

Ingredientes:
Leche condesada – 1 lata
Margarina o Mantequilla sin sal – 2 cucharadas
Cacao en polvo – 4 cucharadas
Chocolate granulado para decorar


Preparación:
En una olla ponemos a fundir la leche condesada, con la margarina o mantequilla y el cacao.
Cocinar a fuego medio y mezclar con una cuchara de palo. Cocinar hasta que la mezcle se empice a desprender de la olla. Cuando veamos que pasandola cuchara de palo en el fondo de la olla, la mezcla de separa.
Dejar enfríar. Untarse las manos con mantequilla y hacer las bolitas cubriéndolas con el chocolate.
Dejar reposar un poco en el refrigerador, en modo que tomen consistencia.

I have always had a soft spot for Brazil ... for its people, its landscapes, its food, the beaches, the music and the well known joy and happiness of Brazilians. I've always felt a great respect and affection for this country, feeling almost like a part of me. I don’t know if only happens to me, but I feel like I have a second home country ... I love my country and Italy, but Brazil has always fascinated me ... I have visited several times this beautiful country, of which I keep only beautiful memories and I feel a "saudade" that makes me want to return at the earliest opportunity.
The paths of the life brought me to build a long and beautiful friendship in that country, one of those friendships that last and survive despite time, distance and lack of presence ... I met my wonderful Brazilian friend 12 years ago, and we have witnessed and followed the life of the other: diplomas, university, jobs, marriage, and recently I became aunt.

My dear friend a while ago sent me this recipe for these delicious sweets that are prepared especially for parties and celebrations, especially for children. It's easy and quick to make and the result is fantastic.
Here is the recipe full of nostalgia for the land.


Ingredients:
Condensed milk - 1 can
Unsalted margarine or butter - 2 tablespoons
Cocoa powder - 4 tbsp
Granulated chocolate to decorate

Directions:

Melt in a pot the condensed milk, the margarine or butter and cocoa.
Cook over medium heat and stir with a wooden spoon. Cook until the mixture starts to detach from the pot. When we see that passing our wooden spoon at the bottom of the pot, the mixture separates, then it’s ready.
Allow to cool for a while. Grease your hands with some butter and make balls then cover them with the chocolate.
Let them stand a bit in the refrigerator, so can take consistency.

Chili con Carne - Chili with beans and Ground beef



Whole kitchen en su Propuesta Salada para el mes de Octubre nos invita a preparar todo un clásico de la cocina Tex-Mex, un Chili con Carne.
Nunca había probado preparar el chili con carne en casa, y la verdad es que el resultado fue muy satisfactorio, por lo que atesoraré esta receta para mis cenas y almuerzos de tacos y burritos!

Aquí les dejo esta deliciosa receta.

Ingredientes:
Cebolla - 2 medianas
Dientes de ajo - 2
Zanahorias - 2 medianas
Apio – 2 pencas
Pimientos rojos - 2
Guindilla en polvo – 1 cucharadita
Comino molido - 1 cucharadita
Canela solida - 1 cucharadita
Sal marina
Pimienta negra recién molida
Porotos rojos cocidos ** - 700 gr
Tomate en lata troceado – 800 gr
Carne de ternera picada – 500 gr
Cilantro fresco – 1 manojo
Vinagre balsámico – 2 cucharadas
Aceite de oliva
** Podéis poner alubias blancas, o mitad y mitad, también garbanzos, lo dejo a vuestro gusto.


Preparación:

Pelamos y picamos muy fino las cebollas, el ajo, las zanahorias y el apio. Continuamos partiendo por la mitad los pimientos rojos, retiramos los tallos y las semillas y lo picamos (aquí podéis hacerlo fino o grueso, según vuestro gusto).

Ponemos en una olla a fuego medio el aceite y vertimos todas las verduras que hemos picado, añadimos la guindilla, el comino, la canela, la sal y la pimienta, lo dejamos freír todo durante unos 7 minutos sin dejar de remover o hasta que veamos que las verduras estén tiernas.

Agregamos la carne picada, y la vamos deshaciendo con la espátula de madera hasta que nos quede suelta, seguidamente añadimos el tomate y las judías. Agregamos unos 400 ml. de agua.

Del cilantro solo vamos a utilizar los tallos, que picaremos muy finito, lo añadimos a la olla. Añadimos el aceto/vinagre balsámico, lo salpimentamos un poco más.

Lo llevamos a ebullición y una vez llegado a este punto lo dejamos cocer todo a fuego bajo con un suave hervor, con la olla medio tapada durante una hora, removiendo de vez en cuando para que no se pegue.

Servir tibio.

Whole Kitchen in its salty proposal for the month of October invites us to prepare a classic of the Tex-Mex cuisine, the Chili con Carne.
I had never tried to prepare the chili at home, and the truth is that the result was very satisfactory, so I will treasure this recipe for my dinner and lunch parties of tacos and burritos!

Here is this delicious recipe.

Ingredients:
Onion - 2 medium
Garlic cloves - 2
Carrots - 2 medium
Celery - 2 stalks
Red peppers - 2
Chili powder - 1 tsp
Ground cumin - 1 tsp
Solid cinnamon - 1 tsp
Sea salt
Freshly ground black pepper
Red beans - 700 g cooked
Canned chopped tomatoes - 800 g
Ground beef - 500 g
Fresh coriander - 1 bunch
Balsamic vinegar - 2 tablespoons
Olive oil
** You can use white beans, or half and half, also peas, I leave it to your liking.

Directions:
Peel and finely chop the onions, garlic, carrots and celery. Continue cutting in half the red peppers, remove stems and seeds and chop (here you can cut it thin or thick, according to your taste).

Pour in a pot over medium heat the oil along with all chopped vegetables, add the chili, cumin, cinnamon, salt and pepper, let it all fry for about 7 minutes, stirring or until we see vegetables are tender.

Add ground beef, and press it with wooden spatula until it loose , then add the tomatoes and beans. Add about 400 ml. water.

From the coriander we will just use the stems, chop them very finely, and add them to the pot. Add the balsamic vinegar, and season it a bit more.

Let it boil and once it gets to this point let it cook over low heat to a gentle boil, with the pot partially covered for one hour, stirring occasionally to prevent sticking.

Serve warm.

Trenza de Pan Brioche – Brioche Braided Bread


Finalmente ha llegado el World Bread Day! Para celebrar este alimento tan versátil, delicioso y esencial de nuestra alimentación, he decidido preparar un pan suave, sabroso y que ha dejado un aroma que se sentía desde fuera de la casa.
La receta del Pan Brioche es una receta de las “Hermanas Simili” que encontré aquì, y debo decir que esta misma receta se presta para creaciones distintas de pan.
Les aseguro que no se arrepentirán, cuando vi el resultado final, me emocioné...es increíble cómo con nuestras manos y algunos ingredientes que parecen sin sentido por si solos pero que mezclados entre sí, se cree un pan, el alimento básico de nuestra alimentación.
Aquí les dejo la receta.
Con esta receta contribuyo al World Bread Day y al Cookbook Challenge #48.

Ingredientes:
Para la masa de levadura
Harina de fuerza – 150 gr
Agua – 90 gr
Levadura fresca – 30 gr

Para la masa
Harina de fuerza – 350 gr
Agua – 50 gr
Mantequilla – 100 gr a temperatura ambiente
Azúcar – 30 gr
Sal – 10 gr
Huevos - 2

1 Huevo batido para pincelar


Preparación:
Amasar todos los ingredientes de la masa de levadura, poner en un bowl y dejar reposar por 40 minutos hasta que doble su volumen.
Mezclar a parte el resto de los ingredientes. Poner la masa de la levadura sobre una superficie y estirarlo con las manos. Poner en el medio de esta masa de levadura la segunda masa. Amasar ambas masas hasta que estén bien mezcladas (no deben quedar ninguna marca blanca).
Poner la masa en un bowl enmantequillado y dejar reposar por 1 o 1 ½ hora.
Dividir la masa en 3 partes iguales y hacer 3 rulos de igual dimensión. Hacer la trenza y ponerla en una bandeja con papel de horno. Tapar la trenza y dejar reposar unos 30- 40 minutos. Pincelar la supeficie con el huevo batido.
Llevar al horno ya encendido a 180º por unos 30 minutos.

Finally the World Bread Day has arrived! To celebrate this versatile, delicious and essential food, I decided to prepare a soft and tasty bread which left an aroma that was able to be distinguished from outside our home.
The Brioche Bread recipe is a recipe of "Simili Sisters," and I must say that this same recipe is suitable for different creations of bread.
I assure you will not regret to try it, when I saw the final result, I was thrilled ... it's amazing how with our hands and some ingredients that seem meaningless by themselves but combined, we can create a bread.
Here is the recipe.
With this recipe I give my contribution to the World Bread Day and the Cookbook Challenge # 48.

Ingredients:
1. For the yeast dough
Strong bread flour - 150 g
Water - 90 g
Fresh yeast - 30 g

2. For the dough
Strong bread flour - 350 g
Water - 50 g
Butter - 100 g at room temperature
Sugar - 30 g
Salt- 10 g
Eggs - 2

1 beaten egg for brushing


Directions:
Mix all the ingredients of the first dough, put it in a bowl and allow to prove for 40 minutes until doubled in size.
Mix the rest of the ingredients. Place the first dough on a surface and pull it with your hands. Set in the middle of the dough (the first one) the second dough. Knead until well blended (should not be any white stripe or line).
Put the dough in a greased bowl and allow to prove for 1 or 1 ½ hour.
Divide dough into 3 equal parts and make 3 curls. Make the braid and put it on a tray line with baking paper. Cover the braid and allow to prove again for about 30 - 40 minutes. Brush the surface with the beaten egg.
Place in the oven at 180ºC for 30 minutes.

Mousse de Chocolate (Chocolate Mousse)


Ésta es una receta muuuuuy chocolatosa! Ya saben, una de aquellas con las cuales nos premiamos. Últimamente no he estado muy en forma, creo que sea el cambio de estación y un poco de cansancio, por lo que para levantarme el ánimo decidí de preparar este rico mousse, bajo en calorías porque en lugar de utilizar la crema, uso el yogurt! No es genial??? Por lo que a premiarse se ha dicho!!
Aqui les dejo esta receta de Angela Nielsen, a la cual hice un pequeño cambio, reemplazando el yogurt griego (al cual descubrí de ser alérgica) por el yogurt normal, eso sí tiene que ser un yogurt bien cremoso.
Aquí les dejo la receta, la cual utilizo para ponerme al dia con el Cookbook challenge semana 46 “Cups”.

Para 4 personas
Ingredientes:
Chocolate Amargo – 85 gr
Cacao en polvo – 1 cucharada + para espolverear
Café en polvo – ½ cucharadita
Extracto de vainilla – ½ cucharadita
Huevos – 2 claras
Azúcar – 1 cucharada
Yogurt – 50 gr de yogurt blanco (yo usé Müller)

Preparación:
Cortar el chocolate finemente. Aparte mezclar, el cacao, el café y la vainilla con 2 cucharadas de agua fría. Vertir la mezcla en el chocolate y derretir a baño maría, revolviendo.
Añadir a la mezcla 2 cucharadas de agua caliente y revolver. Dejar enfriar. Una vez frío, añadir el yogurt.
Batir las claras a nieve y añadir el azúcar.
Añadir una parte de las claras al chocolate, mezclando desde el fondo hacia la superficie con una espátula metálica, delicadamente. Añadir el resto de las claras y mezclar.
Distribuir la mezcla en 4 pocillos y llevar al refrigerador por al menos unas 3 horas (yo las dejé toda la noche).
Antes de servir, espolverear con cacao y servir.

This is a very chocolaty recipe! You know, one of those with which we reward ourselves. Lately I have not been a bit blue, it might be due to the season change and also I’m a little tired, so I decided to treat myself and to prepare this delicious mousse, low in fat because instead of using the cream, you can use yogurt! Isn’t that cool??
This recipe is by Angela Nielsen, I made a small change by replacing the Greek yogurt (which I found to be allergic) by the normal yogurt, it does have to be a creamy yogurt.

Here is the recipe, and in order to catch up with the Cookbook challenge, this is my contribution for the week 46 "Cups."

Serves 4
Ingredients:
Dark chocolate – 85g
Cocoa powder - 1 tbsp plus extra for dusting
Coffee granules - ½ tsp
Vanilla extract - ½ tsp
Eggs - 2 egg whites
Sugar - 1 tbsp
Yogurt – 50 g full fat

Directions:
Cut the chocolate finely and put it in a double boiler. Mix, cocoa, coffee and vanilla with 2 tbsp of cold water. Pour the mixture into the chocolate and melt in double boiler over simmering water, stirring occasionally.
Add 2 tablespoons of hot water and stir. Allow to cool. Once cool, add the yogurt.
Beat the egg whites and add the sugar.
Add a proportion of whites to chocolate mixture from the bottom to the surface with a metal spatula, gently. Add the remaining whites and mix.
Distribute the mixture into 4-well and refrigerate for at least 3 hours (I left them overnight).
Before serving, sprinkle with cocoa and serve.

“Mezze penne rigate” con Tomatitos y zapallitos italianos (Mezze penne rigate with cherry tomatoes and zucchini)


Finalmente Viernes! Estos días han sido muy cansadores, entre trabajo, viajes, la casa, la familia, etc. Por ello, para celebrar este inicio de fin de semana e reponer bien las pilas qué mejor que un buen plato de pasta! Apenas llegue mi maridito destaparemos una buena botella de vino y bienvenido fin de semana!
Con esta receta contribuyo al Cookbook Challenge, al tema de la semana 47 “Italian” - con el cual me estoy aún poniendo al dia.

Aquí les dejo esta receta que saqué de la revista Sale & Pepe y a la cual hice unas pequeñas modificaciones.

Ingredientes:
Pasta corta – 320 gr (yo usé mezze penne)
Zapallitos italianos – 2
Tomatitos cherry – 300 gr
Parmesano rallado – 50 gr
Pan rallado – 50 gr
Orégano – 1 cucharadita
Ajo – 1 diente
Aceite de oliva
Ají molido o merkén – a gusto
Sal – a gusto

Preparación:
Lavar y cortar los zapallitos italianos y los salteamos en una grilla. Lavar y cortar los tomatitos y ponerlos en un colador de pasta con sal por 30 minutos. Luego los mezclamos con los zapallitos italianos.
En un pocillo mezclar el pan rallado con el queso rallado y el orégano.
Mientras tanto llevamos a hervor una olla con suficiente agua salada donde coceremos la pasta. Proseguir con la cocción de la pasta al dente.
Mientras tanto en una olla pequeña ponemos 4 cucharadas de aceite con 1 diente de ajo y el picante o merkén. Salteamos el ajo hasta que esté dorado. Luego lo sacamos del aceite.
Cuando la pasta será pronta, la colamos y condimos con la mezcla de aceite y picante y los zapallitos italianos y tomates. Agregar 2/3 de la mezcla de queso rallado con pan rallado.
Aceitar un pyrex y distribuir una cucharada de la mezcla de pan rallado. Distribuir la pasta y sobre la superficie ponemos otras 3 cucharadas de aceite y espolvereamos con el resto de la mezcla de pan rallado y queso rallado.
Llevar al horno a 200º por 15 minutos. Luego aumentamos la temperatura a 220º y gratinamos la pasta por 5 minutos.
Servir.

Finally Friday has arrived! These days have been very tiring, between work, travel, home, family, etc. So to celebrate the start of the weekend and to charge batteries properly what better than do it with a good dish of pasta! As soon as my hubby gets home we will uncork a good bottle of wine and… welcome weekend!
With this recipe I give my contribution to the Cookbook Challenge, the theme of the week N. 47 is "Italian" - I am still catching up…

Here is the recipe I got from Sale & Pepe magazine and to which I made some subtle modifications.

Ingredients:
Short Pasta - 320 g (I used “mezze penne”)
Zucchini - 2
Cherry tomatoes - 300 g
Grated parmesan - 50 g
Bread crumbs - 50 g
Oregano - 1 teaspoon
Garlic - 1 clove
Olive oil
Powder Chili or merkén - to taste
Salt - to taste

Directions:
Wash and cut zucchini and grill them in a grill pan. Wash and chop the tomatoes and put them in a pasta colander with salt for 30 minutes. Then mix with the zucchini.
In a small bowl, mix the bread crumbs with the grated parmesan and the oregano.
Meanwhile bring to boil a pot with salty water where we will cook the pasta. Cook the pasta al dente.
Meanwhile in a small saucepan, put 4 tablespoons of oil with 1 clove of garlic and the chili or merkén. Sauté garlic until golden. Then remove it from the oil.
When the pasta is ready, strain it and season it with the oil and chili, then add the zucchini and tomatoes. Add 2 / 3 of the grated cheese mixture with bread crumbs and mix.
Grease a baking dish and spread a spoon of the mixture of bread crumbs. Distribute the pasta on it and add on top another 3 tablespoons of oil and sprinkle it with the remaining mixture of bread crumbs and grated cheese.
Bake at 200 º for 15 minutes. Then increase the temperature to 220 º and gratiné pasta for 5 minutes.
Serve.
