Torta de Almendra a la Naranja – Almond Orange Cake


En estos días de lluvia, que mejor que disfrutar de una torta al calor de un té. Encontré esta receta entre las miles de la gran Martha, buscaba una receta sin mantequilla ni leche, dado que mi suegro debe mantener una dieta baja de productos lácticos, asi que voilá esta receta era justo lo que buscaba.
Estos días han sido verdaderamente cansadores, asi que una tortita para subir el ánimo es justo lo que se necesita.
Aquí les dejo esta rica y suave receta con la cual contribuyo al recetario de Cinzia “Gli Agrumi” y al Cook Book Challenge semana # 2 “Citrus”.

Ingredientes:
Naranjas – 6 medianas tipo Navel
Harina – 125 gr
Almendras molidas – 170 gr
Polvos de hornear – 1 ½ cucharadita
Sal – una pizca
Huevos – 6
Azúcar – 225 gr

Preparación:
Poner las naranjas enteras sin pelar en una olla profunda y cubrir con agua. Dejar hervir y cocinar por 2 horas. Colar y dejar enfríar.
Cortar las naranjas por la mitad y sacar cualquier semilla que pueda tener. Poner las naranjas en una procesadora de alimentos y procesar hasta que quede puré. Reservar.
En un bowl mezclar las almendras molidas con la harina, los polvos de hornear y la sal. A parte batir los huevos con el azúcar. Agregar el puré de naranja y la mezcla de harina. Mezclar bien.
Vertir la mezcla en un molde de 22 cms de diámetro previamente enmantequillado y enharinado.
Llevar a horno precalentado a 180ºC por 1 hora hasta que la torta resulte dorada.
Dejar enfriar y servir.

During these rainy days there’s nothing better to warm us up than enjoying a cake with a hot tea.
I found this recipe among the thousands of the great Martha. I was looking for a recipe without butter or milk, as my father-in-law should maintain a diet low in dairy products, so voila this recipe was just what I looking for.
These days have been really tiring, so a cake for cheer us up is just what we needed.
Here is this rich, soft recipe with which I contribute to Cinzia’s contest "Gli Agrumi" and the Cook Book Challenge Week # 2 "Citrus".

Ingredients:
Oranges - Navel 6 medium
Flour - 125 gm
Ground almonds - 170 gm
Baking powder - 1 ½ teaspoon
Salt - a pinch
Eggs - 6
Sugar - 225 gm

Directions:

Place whole unpeeled oranges in a deep pot and cover with water. Boil and cook for 2 hours. Strain and let cool.
Cut oranges in half and remove any seeds they may have. Place oranges in a food processor and process until pureed. Set aside.
In a bowl mix the ground almonds with the flour, baking powder and salt. Separately beat eggs with sugar. Add in the orange puree and flour mixture. Mix well.
Pour the mixture into a greased and floured 22 cm diameter pan.
Place in preheated oven at 180 º C for 1 hour until the cake is golden.
Let it cool and serve.

Soufflé de Queso al Pesto – Cheese Souffleé with Pesto




Whole kitchen en su Propuesta Salada para el mes de Enero nos invita a preparar todo un clásico de la gastronomía francesa, un Soufflé.
El Soufflé es ideal para una entrada o un acompañamiento. Personalmente lo prefiero como entrada, porque su textura suave nos prepara para los platos a seguir. Y como siempre, basta un poco de imaginación para crear con una receta básica de Soufflé distintos tipos de éste.
La receta me gustó mucho, la unica cosa es que aumenté un poco el tiempo de cocción.
Asi que aquí vamos con el resultado, pero antes quiero agradecerles tanto a todos ustedes por vuestras lindas palabres durante este periodo...vuestras palabras han sido de gran conforto. Mil Gracias!!
Ahora si, aquí vamos con la receta a la cual agregué solamente el pesto.

Ingredientes:

Mantequilla ablandada – 50 gr
Queso Gruyere rallado – 50 gr
Mantequilla – 20 gr
Harina – 20 gr
Leche – 250 ml
Sal y pimienta recién molida
Una pizca de pimienta de cayena
Yemas de huevo - 6
Claras de huevo - 10
Queso Gruyere finamente rallado – 240 gr
Pesto – 4 cucharadas

Preparación:
Precaliente el horno a 200ºC. Bata las claras con una pizca de sal hasta que esté a punto de nieve.
Engrase el interior de 8 recipientes de 8 cm de diámetro (o 4 recipientes para suflé de 10 cm de diámetro) con la mantequilla.
Ponga 50 g de gruyere rallado en uno de los recipientes, gírelo para cubrir el interior y luego vierta el gruyere sobrante en otro de los recipientes. Repita la operación pra recubrirlos todos.
Para hacer la bechamel, funda los 20 g de mantequilla en una cacerola. Añada la harina y cocínela durante 2 minutos. Sin dejar de remover, añada la leche fría y deje que hierva a fuego medio durante uno o dos minutos.
Vierta la bechamel en un cuenco. Sazónela ligeramente con sal, pimienta y cayena e incorpore las yemas con las varillas. Cubra el cuenco con film transparente y deje que se enfríe un poco. Agregar el pesto y mezclar.
Incopore enseguida, con unas varillas, una tercera parte de las claras con una mezcla templada para el soufflé y luego con una cuchara larga, vaya introduciendo el resto con una mano mientras espolvorea el gruyere con la otra. Deténgase cuando la mezcla esté amalgamada.
Introduzca esta mezcla en los recipientes de modo que quede 5 mm por encima del borde. Allane la superficie con una espátula y use la punta de un cuchillo para retirar la mezcla de los bordes de cada recipiente y así ayudar a que la mezcla suba.
Coloque los recipientes en una bandeja profunda resistente al calor, recubierta con una capa de papel encerado, y vierta dentro agua hirviendo para cubrir la mitad de la altura de los recipientes. Hornee los soufflé 8 minutos, dependiendo de la medida del molde.

Servir.

Whole kitchen in its salty proposal for the month of January invites to prepare a classic from the French cuisine, a soufflé.
The Soufflé is ideal as starter or side dish. Personally I prefer it as a starter, because its soft texture prepares us for the dishes to follow. And as always, just with a little imagination we can create from the basic recipe of the Soufflé different types of it.
I really liked this recipe, the only thing is that I increased a little the cooking time.
So here we go with the result, but first I want to thank you all so much for your kind words during this time ... your words have been of great comfort. Thanks a lot!
Now, here I go with the recipe to which the only variation I made was adding the pesto.

Ingredients:

Softened butter - 50 g
Gruyere cheese, grated - 50 g
Butter - 20 g
Flour - 20 g
Milk - 250 ml cold
Salt and freshly ground pepper
Pinch of cayenne pepper
Egg yolks - 6
Egg whites - 10
Finely grated Gruyere cheese - 240 g
Pesto - 4 tablespoons

Directions:
Preheat oven to 200ºC. Beat the egg whites with a pinch of salt until stiff peaks form.
Grease the inside of 8 containers or ramekins of 8 cm in diameter (or 4 soufflé containers 10 cm in diameter) with butter.
Put 50 g of grated cheese in one of the ramekins, turn to coat the inside and then pour the remaining cheese in the rest of the ramekins.
To make the bechamel, melt the 20 g of butter in a saucepan. Add flour and cook for 2 minutes. Stirring, add the cold milk and bring to a boil over medium heat for a minute or two.
Pour the bechamel in a bowl. Sprinkle lightly with salt, pepper and cayenne and stir in the egg yolks. Cover the bowl with plastic wrap and let cool slightly. Add the pesto and mix.
Then add a third of the whites with to the soufflé mixture, then with a long spoon, you introduce the rest with one hand and sprinkle the gruyere with the other. Stop when the mixture is amalgamated.
Pour this mixture in into the ramekins. Flatten the surface with a spatula and use the tip of a knife to remove the mixture from the edges.
Place the ramekins in a deep pan heat resistant, coated with a layer of wax paper and pour in boiling water to cover half the height of the containers. Bake the soufflé 8 minutes, depending on the measure of the mold.

Serve.

Galletitas de Lima - Lime Meltaways


Finalmente ha llegado el fin de semana! Esta semana ha sido bastante agitada, ya sabeís por via de suegro...lamentablemente hoy nos han confirmado la presencia de un tumor, en el esófago...ahora esperamos resultados de la biopsia para ver como combatir esta situación con el mejor de los resultados.
No les niego que ha sido difícil tratar de dar tranquilidad a mi marido, pero bueno aquí estamos todavía y enfrentaremos este periodo todos juntos. Les agradezco a todos por vuestras lindas palabras de conforto y apoyo, de verdad son muy apreciadas, de corazón se los agradezo!
Mañana tengo intenciones de ir a visitar a mi suegro en el hospital, y para levantarle un poco el ánimo tengo pensado de llevarle unas galletitas de lima, aprovechando che Cinzia ha lanzado su primer concurso de cítricos.
La receta que les traigo es de la fantástica Martha Stewart, son unas deliciosas galletas “Lime meltaway”, son maravillosas, lo recomiendo, basta solo una taza de té y ya tienen una fantástica merienda. Con esta receta doy mi aporte al concurso de Cinzia “Gli Agrumi”.

Ingredientes:
Mantequilla – 170 gr a temperatura ambiente
Azúcar en polvo (flor) – 45 gr + 80 gr
Lima (limón de pica) – ralladura de 2 limas y 1 cucharada de jugo
Vainilla – 1 cucharada de extracto
Harina – 280 gr
Maizena – 2 cucharadas
Sal – una pizca

Preparación:
En un bowl batir la mantequilla con 45 gr de azúcar en polvo hasta que se vuelva pálida y espumosa. Agregar la ralladura, el jugo y el extracto de vainilla. Mezclar.
Separadamente mezclamos la harina con la maizena y la sal. Luego agregamos a la mezcla de mantequilla y mezclamos.
Dividir la masa en dos. En papel de horno envolvemos una mitad de la masa formando un rollo de unos 3 cms de diámetro. Y hacemos lo mismo con el resto de la masa. Llevamos nuestros rollos al refrigerador por al menos 1 hora (yo lo puse en el congelador por 30 minutos) para que tome consistencia. Cuando la masa esté fria y dura, la cortamos con un cuchillo en redondelas de medio centímetro.
Distribuir las galletitas en una bandeja de horno cubierta con papel, dejando espacio entre ellas. Llevar al horno precalentado a 180°C y hornear por 12 minutos.
Dejar enfríar por 8 minutos y mientras están aún calentitas las ponemos en una bolsa con el resto del azúcar en polvo. Agitamos (con cuidado) para esparcir el azúcar y listo!

And the weekend is finally starting! This week has been pretty hectic, you know because of my father-in-law ... unfortunately today we’ve been confirmed of the presence of a tumor in his esophagus ... now we are waiting for the biopsy results in order to see how to combat this situation with the best results.
I can’t deny that it has been difficult trying to reassure my husband, however, we are holding together and we will face this period all together. I thank you all for your kind words of comfort and support are highly appreciated!
Tomorrow I have plans of going to visit my father-in-law in the hospital, and to lift his mood a little I have thought of bringing some lime cookies, having as an excuse that Cinzia launched its first contest of citrus recipes.
The recipe that I ‘m posting today is from the great Martha Stewart, these are delicious cookies "Lime meltaway" are wonderful, I recommend it, you will only need a cup of tea and you are set!. With this recipe I give my contribution to Cinzia’s contest "Gli Agrumi".

Ingredients:
Butter - 170 g at room temperature
Powdered sugar - 45 g + 80 g
Lime - 2 lime zest and 1 tablespoon of juice
Vanilla - 1 teaspoon of extract
Flour - 280 g
Cornstarch - 2 tablespoons
Salt - a pinch

Directions:
In a bowl beat butter with 45 grams of powdered sugar until pale and fluffy. Add the zest, juice and vanilla extract. Mix.
Separately mix the flour with cornstarch and salt. Then add to the butter mixture and mix.
Divide dough in half. Wrap in parchment paper one half of dough into a roll about 3 cm of diameter. Do the same with the remaining dough. Place the rolls in the refrigerator for at least 1 hour (I put them in the freezer for 30 minutes) so they get consistent. When the dough is cold and firm, with a knife cut it in round of half cm.
Distribute the cookies on a baking tray covered with parchment paper, leaving space between them. Bake in preheated oven at 180 ° C and for 12 minutes.
Let cool for 8 minutes and while still warm put them in a bag with the remaining powdered sugar. Shake (gently) to cover the cookies with the sugar and voila!

Sopa de Cebolla - Onion Soup


Este año digamos que no lo hemos empezado muy bien…trataría de evitar las cosas tristes y los momentos difíciles pero he encontrado en ustedes amistades y apertura. Estos días han sido un poco difíciles para mi marido y su familia, la cual es ahora mi familia...mi suegro está en el hospital hace ya unos días, su situación digamos no es de la mejores, le han encontrado aparentemente un tipo de tumor en una vértebra de la columna...los médicos están haciendo análisis para ver bien de qué se trata...ver mi marido, mi suegra y mi cuñada en esta situación del “no saber” me tiene en ansia y con bajo de ánimo...el sólo pensar que pudiese pasar algo a mi suegro nos angustia...hace ya dos años mi suegro se sometió a una operación porque le habían encontrado nódulos malignos en la tiroide con metástasis, cosa que luego de dos terapias radioactivas pareciera estar bajo control, y ahora este año empezamos con esta noticia...en fin, espero sólo que la vida nos dé la fuerza a nosotros y a mi suegro, al cual cariñosamente llamo siempre “Babbo” (“Papá” en Italiano), de enfrentar esta situación y que salga todo bien.

En fin chicos, quería compartirlo con ustedes para recordales que la vida nos pone siempre en estas situaciones para darnos cuenta de las cosas que son verdaderamente importante en la vida, y cómo cada día es un milagro. Y que las cosas simples y que damos por hecho son vitales, como la salud, el estar juntos y el poder cada día despertar junto a los que queremos.
Sólo un pensamiento y una situación que quería compartir con ustedes.
Pero bueno, estoy segura que todo saldrá bien, asi que al mal tiempo buena cara como dicen.
Aquí les traigo una receta, una de aquellas que representan la semplicidad de la vida pero que nos dan calor y alimento! Es una fantástica sopa de cebolla, típica de la cocina francesa, aquí va la receta y con esta receta doy mi aporte al HEMC#50 “Sopas”.

Para 3 personas
Ingredientes:
Mantequilla – 30 gr
Cebollas – 700 gr cortadas en rodajas finas
Vino blanco – 50 ml
Caldo vegetal – 800 ml
Sal y pimienta

Preparación:
En una olla suficientemente profunda derretir la mantequilla y agregar la cebolla cortada en rodajas. Salpimentar y cocinar a fuego bajo por 1 hora, hasta que la cebolla esté bien dorada. Hay que revolverla constantemente, para evitar que la cebolla se queme. Pasada la hora y cuando la cebolla esté bien dorada agregamos el vino y dejamos evaporar. Luego aumentamos la llama del fuego de la cocina y agregamos el caldo. Dejar hervir y cocinar por unos 15 minutos. Condimentar y servir. Pueden servirla con pan dorado al ajo, queda una maravilla!

This year hasn’t started very well ... I would like to avoid sad and difficult stories but I found in all of you friendly community. These days have been tough for my husband and his family, which is now my family ... my father in law has been in the hospital for few days now, his situation is not the best, the doctors apparently found a type of tumour in a vertebra of the spine ... they are still running tests to see clearly what it is ... watching my husband, my mother in law and my sister in law going through this situation of "not knowing" has me on anxiety and in a low mood … the thought that something could happen to my father in law is distressing. Two years ago my father in law underwent an operation because doctors found malignant nodules in the thyroid with metastases, which after two radioactive therapies seems to be under control, and now this year we started with this awful new ... I really hope that life gives us the strength to us and my father in law, I often call him "Babbo" (which means “Dad” in Italian), to go through this situation.

Anyway guys, I wanted to share this just to remind you that life always put us in these situations to realize things that are truly important, and how each day is a miracle. Simple things that we take for granted are vital, such as health, being together and to be able to wake up every day next to those we care.
Just a thought and a situation I wanted to share with you.
But I'm sure everything will be okay, everything has to be Ok! That will be my spirit!
Here I bring you a recipe, one of those representing the simplicity of life, but that give us warmth and comfort! It's a fantastic onion soup, here's the recipe and with this recipe I give my contribution to HEMC#50 "Soups".

For 3 people
Ingredients:
Butter - 30 g
Onions - 700 grams thinly sliced
White wine - 50 ml
Vegetable stock - 800 ml
Salt and pepper

Directions:
In a pot deep enough melt the butter and add the sliced onions. Season and simmer for 1 hour, until the onion is golden brown. You have to stir constantly to avoid burning the onions. After the hour and when the onion is well browned add the wine and let evaporate. Then increase the flame of the hob and add the broth. Boil and cook for about 15 minutes. Season and serve. Serve with garlic bread, it’s fantastic! Enjoy!

Estoy de vuelta con un Pan Casero Integral - I’m back with a Wholemeal Bread


Lo sé, ha pasado poco más de un mes desde mi última entrada en el blog, ha sido un largo exilio, sobre todo porque extrañaba esta hermosa comunidad de food bloggers!
El mes pasado fue un mes “Full”, entre viajes por trabajo, el trabajo mismo, las fiestas de fin de año, las compras navideñas y para más remate, durante el mes de diciembre, se nos inundó casa 3 veces, si! No una, sino 3 veces!!!!!
La primera vez, gracias a la misericordia de Dios pero lamentablemente para mi maridito, yo no me encontraba en casa, dado que me encontraba en viaje, no les explico qué cosa se encontró mi marido en casa, salió todo por el baño, dado que nos encontramos en el primer piso de un departamento, el nuestro fue el más dañado... ( a todo esto para el futuro nunca màs un primer piso!) la empresa que se ocupa de limpiar las cañerias tuvo que venir 3 veces hasta que finalmente (al menos hasta ahora va todo tranquilo) pudieran encontrar y resolver el problema. Uno de nuestros vecinos, haciendo trabajos de remodelación en su baño terminó botando restos de yeso y piedras en los tubos de descarga, ehh si! Yo pedía su ejecuciòn!! No les explico la desesperación cuando el agua no para de salir y no sabes qué hacer...mi pobre maridito las tres veces, tuvo que ir a tocar las puertas de los vecinos para pedirles de no descargar en baño, y lamentablemente durante horarios poco apropriados...En fin, la Odisea ha terminado por el momento y espero que para siempre. El resultado? Muebles dañados por el agua, desinfección profunda de la casa y logramos conocer todos los vecinos...
Y ahora... Nuevo Año y nuevas recetas no??? Lista y dispuesta para continuar esta linda aventura junto a ustedes!
Aquí les traigo esta deliciosa receta, un pan casi integral porque utiliza los dos tipos de harina, pero delicioso, crujiente en sus bordes y delicado en su miga. Con un poco de mermelada o solamente mantequilla quedará delicioso para el desayuno o la merienda.

Ingredientes:
Agua – 225 ml tibia
Miel – 1 ½ cucharada
Levadura fresca – 20gr
Harina de fuerza blanca – 300 gr
Harina integral – 150 gr
Mantequilla – 50 gr fría y cortada en cubos
Sal – 1 cucharadita

Preparación:

En un bowl pequeño mezclar el agua con la miel y la levadura. Dejar reposar por unos 5 minutos.
En un suficientemente grande mezclar las harinas con la mantequilla y la sal. Agregar le mezcla de levadura. No debe quedar ni seca ni muy mojado.
Amasar la mezcla en una superficie enharinada por lo menos por 10 minutos o lo pueden hacer también con el gancho para amasar.
Poner la masa en un bowl aceitado y cubrir con papel transparente de cocina (o una bolsa plástica) por 3 horas. Cuando habrá duplicado su volumen, hundir la masa con el puño de la mano y amasar en una superficie enharinada por 1 minuto. Darle forma ovalada a la masa y aplastar con la mano.
Transferir la masa a una bandeja un poco enharinada y con un cuchillo afilado realizar 4 cortes sobre la superficie. Salpicar un poco de harina sobre la masa y cubrirla con un paño. Dejar reposar por unos 45 minutos en un lugar cálido.
Mientras tanto precalentar el horno a 200ºC. Hornear el pan por 30 minutos.

I know, it’s been over a month since my last blog entry…it’s been a long exile, especially since I missed this beautiful community of food bloggers!
Last month was a month "Full", with trips for work, the work itself, the holidays, holiday shopping and last but worst, during the month of December, our house flooded three times, yes! Not once but 3 times !!!!! The first time, thanks to the mercy of God, but unfortunately for my hubby, I wasn’t at home because I was traveling, I just don’t have words to explain what my husband found at home, everything came out from the toilet, since we live in the first floor, our flat was the most damaged ... the company that deals with cleaning of the pipes came 3 times before (at least so far everything goes quiet) they could find and resolve the problem. One of our neighbors, doing remodeling work in his bathroom finished throwing stones and remains of gypsum in the discharge tubes, uhh yeah! I asked his death! It was a complete desperation…the water was coming out and out and we weren’t able to stop it ... my poor hubby three times, had to go and knock on doors of neighbors to ask them not to use the toilets, and unfortunately during odd hours ... Anyway, the Odyssey is over for now and hopefully forever. The result? Furniture damaged, deep disinfection of the house and we got to meet all the neighbors ...
And now ... New Year and new recipes! I’m ready and willing to continue this wonderful adventure with all of you!
I'm bringing this delicious recipe, a wholemeal bread because that uses two types of flour, but delicious, crispy on the edges and delicate in the inside. With a bit of jam or butter it will make a great snack or breakfast.
Here is the recipe and I'll catch up with your blogs instantly!


Ingredients:
Water - 225 ml warm
Honey - 1 ½ tablespoon
Fresh yeast - 20g
Strong White bread flour - 300 g
Wholemeal flour - 150 g
Butter - 50 g cold diced
Salt - 1 teaspoon

Directions:

In a small bowl mix the water with honey and yeast. Let stand for 5 minutes.
In a large bowl mix the flour with butter and salt. Pour the yeast mixture. It should not come too wet or too dry.
Knead the mixture on a floured surface for at least 10 minutes or you can also make the dough with the mixer.
Place dough in oiled bowl and cover with cling film (or plastic bag) for 3 hours. When will double in size, knock it back by punching it down with your fist and then knead it on a floured surface for 1 minute. Give it and oval shape and flatten the dough by hand.
Transfer the dough to a floured tray and with a sharp knife make 4 cuts on the surface. Sprinkle a little flour on dough and cover with a tea towel. Let stand for about 45 minutes in a warm place.
Meanwhile preheat the oven to 200 º C. Bake the bread for 30 minutes.
