En estos dias frenéticos natalicios no hay nada mejor que tomarse una pausa para disfrutar de nuestro entorno. Me encanta este periodo, pero al mismo tiempo me pone un poco triste, esa “saudade” que me llena cada vez que en este tipo de fechas me recuerda lo lejos que me encuentro de mi tierra, de mis raíces, mis costumbres, mi gente, mi familia, mis amigos y mis recuerdos. No me arrepiento absolutamente de mis decisiones ni de mi vida aquí, por el contrario no podria imaginar mi vida distintamente a lo que hoy he construido junto a mi marido, hemos tenido la suerte de crearnos una vida con logros y satisfacciones personales y profesionales y sé que aún me queda por recorrer, pero indistintamente es normal sentir la falta de los míos, y sé que mi marido lo nota y no lo puedo evitar...no puedo evitar de pensar a mi amada y única abuela (única porque de verdad es única en su especie, a sus ochenta y tantos años aùn manda como un comandante de alto rango, como todas las abuelas chilenas creo) que cada año como el grinch detesta la navidad porque la emociona en un cierto sentido y a ella no le gusta mostrarse emotiva...cómo prepara cada año el delicioso pavo para la noche de navidad y mi madre que prepara una mesa especial, llena de detalles, mi papá, mis hermanos, mis sobrinos, en fin todos aquellos que dan un sentido a la navidad. Este año serà distinta la navidad, mi suegro como saben ya no está ni su hermoso pesebre que cada año preparaba con tanto amor y dedicación, pero sé que en un cierto modo nos acompañará donde quiera que esté, será una navidad distinta pero concientes de que hemos atravesado un año de dolor pero que igualmente la vida nos regala siempre la felicidad, como es el caso de nuestra esperada Sofia que dentro de un par de meses llegará a nuestras vidas! Por ello a veces es bueno detenerse en estos frenéticos dias, preparar un buen té y pensar...pensar a nuestros seres queridos que ya no están o se encuentran lejos, agradecer todo aquello que la vida nos dona cada dia y disfrutar, disfrutar al máximo cada momento y experiencia junto a los nuestros.<br />
Aquí les traigo una riquísima receta para las galletas de jengibre que abundan en esta época y nos hacen recordar tantas cosas especiales de estas fechas. Espero que la disfruten.<br />
<br />
<b>Ingredientes:</b><br />
Mantequilla – 150 gr<br />
Azúcar – 125 gr<br />
Harina – 360 gr<br />
Melaza – 113 gr<br />
Bicarbonato – 1 cucharadita<br />
Jengibre molido – 2 cucharaditas<br />
Canela molida – 1 cucharadita<br />
<br />
<b>Preparación: </b><br />
Calentar el horno a 180°C. Mientras tanto en una olla derretir la mantequilla con el azúcar y la melaza. A parte en un bowl cernimos la harina con el bicarbonato, el jengibre y la canela, agregar la mantequilla derretida con el azúcar y la melaza y mezclar. Amasar por pocos segundos hasta que la mezcla se junte (no debe quedar muy húmeda). Aplastar la masa en forma redonda con un grosor de 2 cms, cubrir con papel transparente y refrigerar por 30 minutos. Después sacar del refrigerador y en una superficie enharinada extender la masa con un grosor de unos 5 mm. Cortar las formas de las galletas y distribuir en una bandeja de horno con papel mantequilla. Hornear por unos 10 minutos hasta que los bordes estén dorados, sacar del horno y dejar reposar hasta que se enfríen. <br />

Mi primer Pandoro! El Pandoro es un dulce típico de la tradición navideña Italiana, como el Panettone, la diferencia con éste es que el Pandoro es muy simple, no lleva fruta seca ni nada por el estilo, pero aún así es un dulce delicioso, muy blando e ideal para disfrutar en estas fiestas. Atención! No aptos para impacientes, de hecho tuve que esperar casi 10 horas para que fermentara!!! Pero al final la espera valió la pena. Ya estoy con el espíritu navideño a 1000, escuchando villancicos y ya ayer armamos nuestro árbol navideño, hoy por suerte trabajo desde casa asi que tendré un poco más de tiempo para definir el menú de navidad, mientras tanto disfruto este delicioso Pandoro.<br />
La receta es de las famosas hermanas Simili, muy conocidas aquí en Italia. Espero que lo disfruten tanto como yo!<br />
<br />
<b>Levadura</b><br />
<i>Ingredientes: </i><br />
Levadura fresca – 15 gr<br />
Agua tibia – 60 gr<br />
Harina de fuerza – 50 gr<br />
Azúcar – 1 cucharada<br />
Huevos – 1 yema<br />
<br />
<i>Preparación:</i><br />
Fundir la levadura en el agua tibia, agregar el azúcar, la yema y la harina y batir hasta que resulte bien mezclado y liso. Cubri y dejar efrmentar hasta que dobre el volumen por 1 hora.<br />
<br />
<br />
<b>Primera Masa</b><br />
<i>Ingredientes:</i><br />
Harina de fuerza – 200 gr<br />
Levadura fresca – 3 gr<br />
Azúcar – 25 gr<br />
Mantequilla – 30 gr a temperatura ambiente<br />
Agua – 2 cucharadas<br />
Huevos - 1<br />
<br />
<i>Preparación:</i><br />
Mezclar los 3 gr de levdura con las 2 cucharadas de agua. Agregarlo a la levadura preparada anteriormente y continuamos agregando el azúcar, la harina y el huevo, mezclar bien y luego agregar la mantequilla, mezclar hasta que quede homogéneo. Cubrir y dejar fermentar hasta que doble el volumen, por unos 45 minutos en un lugar tibio.<br />
<br />
<b>Segunda Masa</b><br />
<i>Ingredientes:</i><br />
Harina de Fuerza – 200 gr<br />
Azúcar – 100 gr<br />
Huevos – 2<br />
Sal – 1 cucharadita<br />
Vainilla – las semillas de un palito<br />
<br />
Mantequilla – 140 gr a temperatura ambiente cortada en trocitos<br />
<br />
<i>Preparación:</i><br />
Unir a la primera masa los huevos, el azúcar, la harina, la sal y las semillas de la vainilla. Mezclar hasta que todo quede homogeno (yo usé el gancho para amasar por unos 5 minutos). Aplastar la masa y doblarla, luego la ponemos en un bowl engrasado con mantequilla, cubrir y dejar fermentar por 1 hora y 30 minutos hasta que doble el volumen.<br />
Pasada la hora y media, ponemos el bowl con la masa en el refrigerados por unos 40 minutos.<br />
Finalmente la sacamos del refrigerador y con un uslero la tiramos con forma cuadrada. Poner en el centro de la masa la mantequilla y cerrar las esquinas llevándolas al centro, aplanar con el uslero a forma rectangular y doblar en 3. Cubrir y dejar reposar en el refrigerador por 20 minutos. Repetir el mismo procedimiento por 3 veces. Finalmente, pasados los 20 minutos del último reposo, la sacamos del refrigerados y con las manos enmanmtequilladas la rodamos como una bola juntando los bordes. Poner la masa (la parte lista en el fondo y donde quedan las marcas de los bordes hacia arriba) en un molde de Pandoro (para entendernos a forma de estrella, yo usé un molde de 1 litro) bien enmantequillado , cubrir y dejar reposar en un lugar tibio, yo lo dejé en el horno cerrado, y desde este momento no queda nada más que esperar, esperar y esperar...yo esperé casi 10 horas! Como dicen las hermanas Simili, es importante que la masa salga de los bordes del molde.<br />
Cuando ésto suceda, calentamos el horno a 170°C y llevamos nuestro Pandoro por 15 minutos, luego bajar la temperatura a 160°C y continuar a hornear por 10 minutos más, hacer la prueba del palito y sacar. Apenas esté frio desmoldamos y cubrimos con azúcar flor (impalpable).<br />

Ayyyy por fin que ha llegado el fin de semana y en verdad es que ya estaba haciendo la cuenta regresiva, estoy casi siempre llena de cosas y ando un poco mal genio! Pero ya me meto en el cocina y logro distraerme...mi bebita se hace sentir cada vez más, patea fuertemente y a veces me toma de improviso que quedo doblada! Por suerte el resultado de la glucosa salió perfecto, y aunque luego de tan dulce examen (de hecho te hacen beber 75 gr de glucosa pura concentrada y te sacan sangre 3 veces) me haya prometido, nada de dulces por al menos un par de semanas, pues al parecer mi cuerpo logra metabolizar el dulce rapidamente porque ya al siguiente dia estaba con ganas de cosas dulces! por lo que con resultados OK puedo aun concederme algunos dulcecillos!<br />
<br />
Hoy ya tengo un dulce premio en el horno que se está cocinando pero será para un próximo post, por hoy les dejo esta torta liviana, porque usa el aceite en vez de la mantequilla, y queda con unos colores preciosos, que he prepardo para merienda y el desayuno, encontré varias versiones muy similes asi que es simple encontrarla en la red. Espero que les guste.<br />
<br />
<b>Ingredientes:</b><br />
Harina – 300 gr<br />
Huevos – 4<br />
Aceite – 250 ml<br />
Azúcar – 250 gr<br />
Leche – 250 ml<br />
Polvos de hornear – 1 cucharada<br />
Cacao – 2 cucharadas<br />
<br />
<b>Preparación:</b><br />
Batir los huevos con el azúcar hasta que quede cremoso. Agregar el aceite y la leche y suceviamente la harina cernida con los polovos de hornear. <br />
Dividir la mezcla en dos partes iguales y a una le agregamos el cacao y mezclamos bien.<br />
Aceitar un molde de torta de unos 22 cm y con un cucharón alternamos las mezclas, comenzando con la mezcla clara y luego con la de cacao, y asi sucesivamente hasta terminar.<br />
Llevar al horno precalentado a 180°C por unos 35 – 40 minutos.<br />

Finalmente llega el Viernes, parecía que no iba a llegar nunca, pero finalmente aquí estamos, listos para comenzar un nuevo fin de semana y a salirnos un poco de la dieta! Sí, tuve control esta semana y el doctor me dijo que habia subido mucho de peso en 1 mes (3 kilos!) es que yo nosé dónde están estos 3 kilos, la talla es siempre la misma, mi panza obviamente crece cada vez más y para que decirles de mi talla de sostén (sujetador)... no puedo echarle la culpa a mi pobre bebé (por cierto a muchos que me han preguntado se trata de una lindísima bebita!!) qué culpa tiene que la madre se parezca cada dia más a una mamma Vaca...bueno tendré que cuidarme, pero vamos que este periodo se nos concederá una que otra vez un dulcecito...bueno segùn mi doctor NO, tengo que evitar lo más que puedo, y solo para tener más cargo de conciencia hoy luego del almuerzo no pude resistir a probar un chocolate que me trajo mi hermana desde Argentina, pues aqui si puedo dar la culpa a mi bebita, dado que es ella que me pide cosas dulces!!<br />
Mañana tendré que someterme a un examen de glucosa y creo que con ello se me pasarán todas las ganas de dulces!<br />
<br />
Mientra tanto, aqui les dejo una riquisma receta para preparar pancakes adaptada de Leila Lindholm, un excelente y muy goloso desayuno para comenzar un fin de semana como se debe! Siempre que el Doctor no lo sepa...<br />
<b><br />
Ingredientes para 6 -8 pancakes</b><br />
Harina – 230 gr<br />
Polvos de hornear – 2 cucharaditas<br />
Sal – ½ cucharadita<br />
Azúcar – 3 cucharadas<br />
Mantequilla – 20 gr y un poco más para cocinar los pancakes<br />
Leche – 250 ml<br />
Huevos – 1<br />
Ralladura de limón <br />
<br />
<b>Preparación:</b><br />
Mezclar la harina con la sal, el azúcar y la ralladura. Agregar el huevo, el burro derretido y la leche. Mezclar todo hasta que resulte una mezcla lisa sin grumos.<br />
En un sartén ponemos a derretir un poco de mantequilla y versamos una parte de la mezcla (yo para medirlos usé un cucharón) y cocinar por un lado, luego continuar la cocción por el otro lado y asi hasta que terminemos la mezcla.<br />
Servir con azúcar glas y jarabe de arce o mantequilla derretida.<br />

No estaba muerta y tampoco andaba de parranda…aunque tal vez un poco de ésta ultima si…<br />
Han pasado meses!! Meses!! Desde que no escribía, pero tengo varias excusas... al final de cada dia me decía, bueno mañana si o si escribo, no crean que no he cocinado este último tiempo lo he hecho, sólo que ya muchas recetas quedaron ahí, ya digeridas y jamás fotografiadas...<br />
De todas maneras estaba por darles mis excusas por este largo exilio, he extrañado mucho este mundo pero han habido ciertas situaciones que me han llevado a alejarme y quedarme corta de tiempo, veamos por cual empezamos:<br />
1. Con mi marido hace 3 meses nos cambiamos de casa! Si, se acuerdan de los problemas que tenía en el departamento? Que se me había inundado varias veces, pues bueno dado que el problema no venia solucionado, decidimos enfrentar una mudanza, estamos mucho mejor, con más espacio y lo mejor de todo es que el ruido de la cañeria no se siente y no tengo que salir arrancando cada vez que pienso que la casa se inundará...<br />
2. Tuve varios viajes de trabajo entre medio, que por suerte ahora por un tiempo se tranquilizarán...<br />
3. He estado con MUCHO trabajo y muy cansada últimamante<br />
4. Hace poco volví a casa para estar un poco con mi familia y mi gente, pasamos casi 3 semanas en nuestro querido Chile, asi que ahora de vuelta a la realidad<br />
5. Tan tan tan!! Seremos padres!!! Lo que explica mi pereza y cansancio constante, sin dejar de mencionar que los primeros 3 meses no me pude ni acercar a la cocina dado que la naúsea era tan fuerte que pasamos con mi marido comiendo solo cosas listas o que nos preparaba mi suegra o amigos...<br />
<br />
Bueno se me acabaron las excusas pero creo de haber resumido dónde he estado últimamanete no creen?? De todas maneras ya me meto a full con vuestros blogs, sobre todo que ya se acercan las fiestas de fin de año, que emoción poder compartir nuevas y deliciosas recetas.<br />
Aquí les dejo una receta de un riquísimo risotto...ideal en estos dias de frio!! <br />
Para 3 personas<br />
Ingredientes:<br />
Arroz para risotto – 250 gr<br />
Zapallitos italianos – 3 medianos<br />
Cebolla – 1 mediana picada fina<br />
Vino blanco – 1 vaso de vino<br />
Caldo de verdura – 750 ml<br />
Mantequilla – 50 gr<br />
Queso parmesano rallado – 70 gr<br />
Sal y pimienta a gusto<br />
Aceite de oliva<br />
<br />
Preparación:<br />
Primero lavamos bien los zapallitos y los cartamo en cuadritos. En un sartén ponemos a calentar unas dos cucharadas de aceite con dos cucharadas de la cebolla picada y agregamos los zapallitos hasta que esté al dente.<br />
Mientras tanto en una olla ponemos a calentar 3 cucharadas de aceite y blanqueamos el resto de la cebolla picada. Agregar el arroz y saltear. Agregar el vino blanco y esfumar. Una vez que el vino se haya esfumado comenzamos a agregar el caldo de verduras con un cucharón y cocinamos el arroz, sin dejar que el arroz se seque, agregar el caldo cada vez que sea necesario durante todo el tiempo de cocción del arroz. Agregar sal y pimienta a gusto. A mitad cocción agregamos los zapallitos italianos y terminamos de cocinar el arroz. Cuando esté listo mantencar con la mantequilla y agregar el queso parmesano. Servir de inmediato.<br />

Y si…desaparecí literalmente de la faz de la tierra… éste útimo periodo ha sido de locos, me ha tocado trabajar como una maníaca a lo que se le agregan viajes fuera del país por trabajo, y ya cuado el efecto jet lag está pasando me toca de nuevo tomar el avión e ir hasta la otra parte del mundo. No me malentiendan, me fascina mi trabajo, tengo la oportunidad de viajar y conocer lugares, personas y culturas nuevas, estar a contacto con personas de gran profesionalidad. La única cosa que lamento es que en estos viajes no alcanzo a conocer los lugares, muchas veces mi trabajo me obliga a conocer sólo el hotel y el lugar de trabajo, ida y vuelta...aún así tengo la oportunidad de ver caras nuevas, cosa que me llena y alimenta el alma. La única cosa que lamento estando fuera es: estar lejos de maridín, lejos de mi cocina y lejos de mi almohada... <br />
Y si a ésto le agregamos la vida de cada dia, de dueña de casa, de chequeos mèdicos, de peleas con los hospitales, porque nada te lo hacen fácil, ayy si, aquí en Italia para la hora que te dan los resultados de una biopsia o te dan hora para un médico sin pasar privadamentte, pasa tanto tiempo que para el momento que te toca, ya te has sanado, o peor, la enfermedad no tiene vueltas...adoro este país, pero en este sentido nada te lo ponen fácil, y te tienes que armar de santa paciencia o de desahogarte con el primer empleado público gritándole como una loca... por lo que podrán imaginar estos días cocina casi cero, creatividad y aventura en nuevas recetas cero. Me pondré al dia, pero ya me toca viajar de nuevo, asi que mis visitas bloggeras serán un poco interrumpidas...<br />

Mientras trato de les dejo aqui una receta deliciosa.<br />
<br />
Para 2 personas<br />
<b>Ingredientes:</b><br />
Pimientones (rojo, amarillo o verde) – 2 partidos por la mitad<br />
Queso feta – 150 gr cortada en pequeños cubitos<br />
Cebolla roja – 1 pequeña<br />
Tomates cherry – 80 gr troceados<br />
Pan rallado – 40 gr (queda mejor con migas de pan frescas)<br />
Aceite de Oliva – 20 ml<br />
Sal, Pimienta <br />
Azúcar – una pizca<br />
Albahaca fresca – picada, 2 cucharadas<br />
<br />
<b>Preparación:</b><br />
En un bowl, mezclar el queso feta con la cebollas, los tomatitos y albahaca, salpimentar y agregar una pizca de azúcar. Dividir la mezcla en las mitades e los pimentones.<br />
Agregar las migas de pan sobre la mezcla de feta y el aceite de oliva. Llevar al horno precalentado a 180°C y hornear por unos 50 minutos, o hasta que los pimentones estén suaves y la superficie dorada.<br />

Indiscutiblemente el tiempo pasa y aunque si quisiéramos pararlo algunas veces los cumples llegan y con ellos los años..de todas maneras es siempre una excusa para celebrar y comer cosas ricas, por lo que son bienvenidos, aunque a veces los años empiezan a pesar, pero bueno como decia sabiamente Babbo “tienes que dar la vida a los años y no los años a la vida” . Les traigo esta deliciosa torta que preparé en ocasión de mi cumple. No alcancé a sacar la foto del interno, dado que no quedaron ni las migas.<br />
Aqui dejo la receta! Un besote a todos y que tengan una linda semana!<br />
<br />
Para 8-10 personas (para un molde de torta de 20 cms de diàmetro)<br />
<b>Ingredientes:</b><br />
Para el bizcocho<br />
Mantequilla - 150 gr a temperatura ambiente<br />
Azúcar - 100 gr<br />
Huevos - 3 batidos<br />
Harina - 100 gr<br />
Polvos de hornear - 1 cucharadita<br />
Semillas de Amapolas – 50 gr <br />
<br />
Para la baña del bizocho<br />
Azúcar – 100 gr<br />
Agua – 75 ml<br />
Jugo de limón – de 1<br />
<br />
Para la Cobertura y Relleno<br />
Queso crema – 250 g<br />
Mantequilla sin sal – 200 g<br />
Azúcar flor (en polvo) – 600 g<br />
Jugo de limón - 1 cucharada<br />
<br />
Frambuesas para decorar y semillas de amapolas<br />
<b><br />
Preparación:</b><br />
Preparar el molde de la torta engrasàndolo con mantequilla y cubriendo levemente con harina los bordes. Con papel de horno (papel mantequilla) cortar un cìrculo del diametro del molde y ponerlo dentro de èste.<br />
En un bowl, con un batidor eléctrico o como prefieran, batir la mantequilla hasta que sea una crema. Agregar el azúcar y batir hasta que la mezcla estè clara y muy cremosa. Agregar de a poco los huevos batidos y batir. Cernir la harina y los polvos de hornear, agregar las semillas de amapolas y mezclar bien.<br />
Poner la mezcla en el molde ya enmantequillado y con el papel mantequilla en el fondo. Llevar al horno por unos 25-30 minutos o hasta que estè cocinada (recuerden de controlar introduciendo el molda dientes en el centro de la torta).<br />
Sacar del horno y dejar reposar por unos 10 minutos. Cuidadosamente desmoldar la torta y transferirla en una rejilla.<br />
Mientras tanto preparar la baña. Calentar el agua con el azúcar y el limón revolviendo hasta que se disuelva todo. <br />
Cortar la torta horizontalmente en tres partes y bañarla con el jarabe de azúcar y el limón. Dejar enfriar.<br />
Preparar el relleno, batiendo la mantequilla con el queso crema y sucesivamente el azúcar flor (en polvo) con el jugo de limón. Cuando la torta esté completamente fria se puede proceder con el relleno y la cobertura.<br />
Finalmente decorar con frambuesas y semillas de amapolas. <br />

Poppy seeds - 50 g<br />

225g cream cheese<br />
200g unsalted butter<br />
600g icing sugar<br />

Lemon Syrup<br />
Sugar – 100 g<br />
Water – 75 ml<br />
Lemon Juice - from 1 lemon<br />

Directions:</b><br />
Prepare cake pan, line and grease with butter and cover the edges lightly with flour. <br />
In a bowl, with electric mixer, beat the butter until it is creamy. Add sugar and beat until mixture is clear and very smooth. Add a bit of beaten eggs and beat. Sift flour and baking powder, add the poppy seeds and mix well.<br />
Put the mixture into the buttered cake pan and the parchment paper in the background. Bake for 25-30 minutes or until cooked (remember entering the mold control teeth in the center of the cake).<br />
Remove from oven and let stand for 10 minutes. Carefully unmold the cake and transfer it into a grid.<br />
Meanwhile prepare the syrup. Heat water with sugar and lemon, stirring to dissolve it, bring to the boil.<br />
Slice cake horizontally into three parts and brush the cake with the syrup. Allow to cool.<br />
Prepare the filling by beating the butter with cream cheese and powdered sugar with the lemon juice. <br />
Once cake is completely cool you can proceed with the filling and icing.<br />
Finally garnish with raspberries and poppy seeds.<br />

El Casatiello es una torta salada típica de la tradición Napolitana que se prepara especialmente en Pascua. <br />
Aquí en Italia a diferencia de Chile, dan como feriado el lunes después de Pascua (en Chile dan feriado el Viernes Santo) y muchas personas aprovechan para realizar un picn nic o un paseo al aire libre, el Casatiello es casi un infaltable en estos paseos! <br />
En casa lo hemos disfutado como antipasto, y queda una delicia!<br />
Aquí les dejo la receta.<br />
<br />
<b>Ingredientes:</b><br />
Harina – 1 kg<br />
Levadura fresca – 15 gr<br />
Agua tibia – 500 ml<br />
Manteca – 125 gr derretida (la receta original utiliza 250 gr de manteca no derretida, yo la derretí en modo que diera más fácilmente y con menos cantidad la suavidad a la masa)<br />
Sal a gusto<br />
Pimienta gusto<br />
Queso – 300 gr yo usé queso scamorza pero pueden utilizar el que prefierancomo Gouda, Emmental, etc<br />
Chorizo – 250 gr la receta original utiliza un salame de Napolis pero yo preferí darle un toque personal y el chorizo quedó perfecto!<br />
Salame y/o Jamón prosciutto o Serrano – 150 gr o cuanto quieran<br />
Huevos – 4 -5 frescos<br />
<br />
<b>Preparación:</b><br />
Disolver la levadura en el agua tibia y dejar reposar por almenos 10 minutos. Poner la harina a fuente y en el hueco ponemos la levadura con el agua (podemos hacer todo con el gancho de amasar de nuestra máquina). Agregar la manteca derretida (cuidado que no esté hirviendo) sal, pimienta, y amasar todo. Yo puse todo en la máquina por unos 7 minutos hasta que la masa absorve todo. <br />
Dejar la masa reposar por una media hora cubierta con un paño de cocina hasta que habrá doblado su volumen.<br />
Extender la masa en forma rectangular con un grosor de 1 cm. Dejando un poco de masa a parte para poder hacer las tiritas para los huevos. <br />
Disponer el jamón, el salame, el queso y el chorizo sobre la superficie hasta cubrirla bastante (no exageren con la cantidad) dejando los bordes libres. Pincelar los bordes con un poco de agua y enrollar la masa por el largo como un brazo gitano. <br />
Poner la masa en un molde aceitado a forma de bizcocho savarín (de queque) e unir las puntas. Colocar sobre la superficie los huevos enteros (crudos y frescos) y colocar sobre éstos las tiritas de masa a forma de cruz. Cubrir la masa con un paño de cocina y dejar reposar por 2 horas. <br />
Llevar el casatiello al horno precalentado a 160°C por 1 hora e 10 minutos.<br />
Dejar enfríar y servir.<br />

Fresh yeast - 15 g<br />
Warm water - 500 ml <br />
Pure Lard- melted 125 g (original recipe uses 250 grams of lard not melted, I melted in a way that would more easily and with less soft to the mass) <br />
Salt to taste <br />
Pepper taste <br />
Cheese - I used 300 g scamorza cheese but it’s obviously your choice, Emmental, Gouda, all would be OK <br />
Chorizo - 250 g - original recipe uses a salami from Naples but I preferred to give a personal touch and the sausage was perfect! <br />
Salami or prosciutto or Serrano ham - 150 g, or whatever you want <br />
Eggs - Fresh 4 -5 <br />

<b>Directions: </b><br />
Dissolve yeast in warm water and let stand for at least 10 minutes. Put the flour on a surface making a well in the centre and pour the yeast with the water (we can do everything with the dough hook of your machine). Add melted lard (be careful not boiling) salt, pepper, and knead it. I put everything in the machine for about 7 minutes until the dough absorbs everything. <br />
Let the dough rest for half an hour covered with a clean tea towel until it will double in size. <br />
Roll out the dough into a rectangular shape with a thickness of 1 cm. Leaving aside some dough to make strips for eggs. <br />
Arrange the ham, salami, cheese and sausage on the surface to cover enough (do not overdo it with the amount) leaving the edges free. Brush the edges with a little water and roll the dough from the length. <br />
Put the dough in a greased ring cake pan and join the ends. <br />
Placed on the surface the whole eggs (raw and fresh) and place over eggs the strips of dough crosswise.<br />
Cover the dough with a tea towel and let stand for 2 hours. <br />

Lo sé, mi ausencia ha durado bastante, y finalmente tengo el coraje de escribir...Babbo lamentablemente nos dejó hace unas semanas, el dolor por el que hemos pasado nos ha llevado a dar un paso atrás y buscar momentos de silencio, reflexión y de sanación...<br />
Han sido semanas de búsqueda del equilibrio emocional, de metabolizar lo sucedido y de busar el conforto de su partida...ha dejado un vacío tan grande...lamentablemente no pude volver a disfrutar de un almuerzo de domingo con él, pero sí estuve con él hasta el final, acompañándolo en su viaje, y ahora quedan sólo los recuerdos de una persona que día tras día se ocupó de ser mi padre aquí, de alguien que me quizo incondicionalmente como si fuera su propia hija, de una persona que detrás de su apariencia estricta lograba transmitir todo su cariño con su mirada, y con sus gestos...de alguien que amaba la vida, las cosas simples, la buena mesa, la fotografía, y su familia sobre todas las cosas...<br />
Agradezco mucho a todos quienes siguieron pasando y dejándome mensajes en estas semanas, preguntándo por mi y si todo estaba bien, gracias de veras! Es increíble que uno pueda encontrar en la blogesfera un lugar de encuentro y entendimiento con personas que no conoces que pero que de cualquier modo forman parte de una parte de tu vida...Les estoy muy agradecida...<br />
Me pondré sin duda al día con todas vuestras recetas y Blogs, que de seguro en este período han cocinado muchas cositas ricas, y visitaré apenas posible a mis nuevos seguidores!<br />
Y como imaginarán, no he tenido mucho tiempo para meterme en la cocina y para ser honesta tampoco muchas ganas, digamos que ha sido un periodo de descanso, un break para tomar un respiro y comenzar a recargar baterías.<br />

Zucchini o zapallitos italianos – 2 medianos<br />
Albahaca – a gusto<br />
Queso parmesano rallado – 50 gr<br />
Piñones – a gusto<br />
Aceite de Oliva – 1 vasito<br />

Preparación:<br />
Cortar los zapallitos en palitos o en rodajas, cocinar a fuego medio en un sartén con un poco de aceite de oliva hasta que se ablanden. Reservar algunos para decorar. Poner el resto de los zapallitos en un procesador con la albahaca, el aceite de oliva, el queso rallado los piñones y los condimentos, procesar todo hasta que quede una salsa. Agregar sal o pimienta o gusto.<br />

Zucchini - 2 medium<br />
Basil <br />
Grated Parmesan cheese - 50 g<br />
Pine nuts<br />
Olive oil - 1 cup<br />
Sal<br />
Pepper<br />

Directions:<br />
Cut zucchini into sticks or slices, cook over medium heat in a skillet with a little olive oil until tender. Reserve some for garnish. Put the rest of the zucchini in a food processor with basil, olive oil, grated cheese, pine nuts and spices, processing all down to a sauce. Add more salt and pepper and taste.<br />

Aquí estoy de vuelta...lamentablemente la situación de mi suegro me ha mantenido lejana de la blogesfera durante estos últimos días.<br />
<i>Babbo</i> en estos momentos se encuentra en el hospital, durante los últimos 5 días, su hígado a dejado de producir proteínas lo que le ha provocado dolores intolerables y una extrema hinchazón en cuerpo impidiéndole de caminar o moverse. Qué decirles, verlo en sufrimiento, que producto de la morfina apenas podía hablar, con esa mirada que sólo transmitía dolor y pedía ayuda, ver a mi <i>Babbo</i> cansado y casi irreconocible, me ha roto el corazón...las decisiones de la naturaleza muchas veces son dolorosas cómo alguien sabiamente me ha dicho, y en este momento, consciente que científicamente el pronóstico no es alentador, entrego mi esperanza a Dios y que se haga su voluntad. <br />
No hay nada que quisiera más que volver a disfrutar de un almuerzo de domingo con él, cómo hemos hecho en estos cuatro años, de escucharlo decir siempre la suya, porque siempre tiene algo que decir, sin importar el tema...de verlo nuevamente armar su hermoso y único pesebre de navidad con esa vitalidad y mirada de niño que lo ha siempre caracterizado, de escucharlo insistir incansablemente en que yo probara y comiera lo que él me decía, de verlo repetirse a escondidas un trocito de torta o del dulce de la ocasión, de verlo cómo trataba y se esforzaba en hablar español, siguiendo un libro que había comprado especialmente para comunicar con mi familia....<i>Babbo, “Ti voglio tanto bene”</i> (te quiero mucho) fueron mis palabras antes de empezar el tratamiento de radioterapia, me abalancé sobre él tratando de parar el tiempo por miedo a lo que podría venir y él me abrazó fuertemente diciéndome que lo sabía...<br />
Uno siempre escucha “disfruta cada momento como si fuera el último” pero estamos siempre muy ocupados con nuestras vidas y creemos que aún la vida nos dará casi eternamente esos momentos y las personas que queremos, hoy sólo pienso que daría cualquier cosa por disfrutar un simple almuerzo con <i>Babbo</i>...y en esta esperanza me quedaré hasta que pueda...<br />
Y bueno queridísmos amig@s, mil disculpas por no poder visitar tan a menudo vuestros hermosos blogs, pero en este momento trato de dar el mayor tiempo a mi <i>Babbo</i>.<br />
<br />
Aquí les dejo una simple y deliciosa receta de origen griego que se llama “Spanakopita” y que ví en un programa de TV Italiano, espero que la disfruten.<br />
<br />
<b>Ingredientes:</b><br />
Masa Hojaldre – 2 rollos/láminas<br />
Queso Feta – 350 gr, cortado en cuadraditos<br />
Huevos – 3, batidos<br />
Espinacas – 1 Kg<br />
Agua – 3 vasos<br />
Cebollas – 3, picadas finamente<br />
Aceite<br />
Sal<br />
Pimienta<br />
<br />
<b>Preparación:</b><br />
En un sartén, calentar el aciete y agregar la cebolla, cocinarla hasta que esté dorada. Mientras tanto en una olla suficientemente grande ponemos las espinacas con el agua, tapamos y dejamos cocinar a fuego bajo, hasta que se ablanden.<br />
En un bowl mezclamos las espinacas (previamente coladas, sin restos de agua) con la feta, la cebolla, los huevos batidos y salpimentar. <br />
En un molde para torta (circular o cuadrado) extender una masa hojaldre y agregar el relleno de espinacas. Cubrir con la otra masa hojaldre y cerrar bien los bordes.<br />
Llevar al horno precalentado a 180ºC por unos 40 minutos.<br />
Cortar a cuadraditos y servir.<br />

<i>Babbo</i> is now at the hospital, during the last 5 days, his liver stopped producing proteins which has caused an unbearable pain and extreme swelling of the body which is preventing him from walking or moving. What can I say, seeing him in suffering, an as a result of the morphine he was hardly able to speak, with that look that was only transmitting pain and asking for help, seeing my Babbo tired and almost unrecognizable, broke my heart ... the decisions of nature are painful as someone wisely told me, and at this point, scientifically aware that the prognosis is not encouraging, I give my hope to God and ask him that His will be done. <br />
I would do anything to enjoy again a Sunday lunch with him, how we have done in the last four years, to listen his point of view, because he always had something to say, no matter the subject ... to see him again building his beautiful and unique Christmas crib with the vitality and his child’s look that has always characterized himself, to listen him tirelessly insisting that I try and eat what he told me, to see him while nobody was watching cutting a second piece of cake or sweet, to see him how he tried to speak Spanish, following a book that he had bought especially to communicate with my family .... <i>Babbo, “Ti voglio bene”</i> (I love you) were my words before starting radiation treatment, I pounced on him trying to stop time feeling the fear of what might come and he hugged me tightly saying he knew it... <br />

Bueno en este caso es más apropriado “Embellece mi Blog!!” Ahahahahha, es que ya pronto estaré de cumple blog, asi que decidí dar una cara nueva a mi blog y espero que les guste tanto como a mí :-)<br />

Pues bien, hoy les traigo una deliciosa y golosa receta.<br />
Debo confesar que estas últimas semanas han sido tan ajetreadas que para consolarme me he refugiado en el chocolate…sí, lo admito, soy culpable...pero es que no existe aroma, gusto y textura que me dé la tranquilidad del chocolate...sé que hay muchos que ni siquiera comen el chocolate por intolerancia, por gusto, etc, muchas veces pido a la naturaleza de ser una de ellas, pero nada...mis ojos siempre caen ante un pequeño bombón y al final pierdo siempre.<br />

Hace tiempo que quería preparar un fudge pero nunca me había aventurado y aprovechando el concurso de <a href="http://mysweetcarrotcake.blogspot.com/">Carrot Cake</a>, me animé a preparalos.<br />
A continuación les dejo una pequeña reseña de los orígenes del fudge, cortesía de Wikipedia.<br />
El dulce de azúcar (fudge) fue inventado en los Estados Unidos. El origen exacto no está claro, pero existe una receta de Emelyn B. Hartridge, de Vassar College, que data de 1886. Se cree que el primer dulce de azúcar fue el resultado de un lote de caramelo arruinado hecho el 14 de febrero de 1886, y de ahí el nombre que se le ha dado a este dulce en Estados Unidos (en inglés al dulce de azúcar se le llama fudge, palabra que significa « arruinar »).<br />
Les dejo esta golosa receta de R. Allen y con ella contribuyo al maravilloso concurso organizado por <a href="http://mysweetcarrotcake.blogspot.com/">Carrot Cake “United Sweet of America”.</a><br />
<br />
<b>Ingredientes:</b><br />
Leche condesada – 1 tarro<br />
Mantequilla – 100 gr<br />
Azúcar – 400 gr<br />
Chocolate blanco – 75 gr<br />
Aceite vegetal<br />
<br />
<b>Preparación:</b><br />
Poner en una olla a fuego medio, la leche condesada, la mantequilla y el azúcar. Revolver hasta que empece a hervir, continuando a revolver y luego dejamos a fuego suave por unos 15 minutos sin dejar de revolver. Si tienen un termómetro de azúcar, en el momento en que marque 113°C se saca la olla del fuego.<br />
Retirar la olla del fuego y colóquela en un bowl con agua fría (el agua debe cubrir unos pocos centímetros por los lados de la olla). Revolver la mezcla durante 10 minutos hasta que se enfríe.<br />
Vertir la mitad de la mezcla en un molde cuandrado de 18 a 20 cm. Agregar el chocolate blanco y después agregar el resto de la mezcla. Dejar enfríar a temperatura ambiente y luego llevar al refrigerador y dejar durante la noche.<br />
A la mañana siguiente cortar el fudge en pequeños cuadrados y servir.<br />

I must confess that during the past few weeks I have been so busy that I have taken craving for comfort in chocolate ... yes, I admit it, I am guilty ... it’s just that there is no aroma, taste and texture that gives me peace of as chocolate does ... I know there are so many out there who do not even eat chocolate for intolerance, taste choice, etc. Many times I asked the nature to be one of them, but nothing ... my eyes always fall to a small chocolate and as usual I just need to render myself. <br />

I have wanted to prepare a fudge like forever but I had never ventured and since I found the contest of the <a href="http://mysweetcarrotcake.blogspot.com/">Carrot Cake Blog</a>, I decided to prepare them. <br />
First, I would like to leave a little review of the origins of fudge, courtesy of Wikipedia. <br />
Fudge was invented in the United States. The exact origin is unclear, but there is a recipe by Emelyn B. Hartridge, of Vassar College, which dates from 1886. It is believed that the first fudge was the result of a lot of candy messed up on 14 February 1886, hence the name that has be given to this candy in the United States.<br />

<b>Ingredients: </b><br />
Condensed milk - 1 jar <br />
Butter - 100 g<br />
Sugar - 400 g <br />
White Chocolate - 75 g chopped<br />
Vegetable oil <br />
<br />
<b>Directions: </b><br />
Place in a saucepan over medium heat the condensed milk, butter and sugar. Stir and bring to the boil, continue stirring and then reduce heat to low and simmer for 15 minutes, stirring constantly. <br />
Remove the pan from the heat and place it in a bowl of cold water (water comes a few centimetres up the sides of the pan). Stir the mixture for 10 minutes until it cools down.<br />
Pour the half the mixture into a 18-20 cm square tin. Add the white chocolate and then add pour over the rest of the mixture. Allow to cool at room temperature and then place it in the refrigerator overnight. <br />
The next morning cut the fudge into little squares and serve.<br />

Whole Kitchen en su propuesta dulce para el mes de Febrero nos invita a preparar un clásico de la gastronomía francese, los crêpes.<br />
<br />
Comienza una nueva semana y qué mejor que iniciarla dulcemente! Debo decir que los crêpes son uno de mis preferidos por su versatilidad, se pueden preparar platos fantásticos con ingredientes tan simples. Para esta ocasión decidí preparar un crêpe suzette, un típico postre francese que destaca por su salsa y sabor cítrico.<br />
Espero que lo disfruten.<br />
<b><br />
Ingredientes:</b><br />
Huevos – 2<br />
Harina – 125 gr<br />
Leche – 250 ml<br />
Azúcar – 30 gr<br />
Licor – 1 cucharadita de licor de naranja u otro<br />
Sal – una pizca<br />
<br />
<i>Para la salsa:</i><br />
Azúcar – 8 cubos de azúcar<br />
Mantequilla – 70 gr<br />
Naranjas – 2<br />
Limón – 1<br />
Grand Marnier o licor de naranja – 1 vaso<br />
<br />
<b>Preparación:</b><br />
Batir los huevos con el azúcar y la sal. Agregar la harina, la leche y mezclar. Agregar 20 gr de mantequilla derretida y agregar el licor. Dejar reposar por 2 horas en el refrigerador.<br />
Engrasar un sartén con la mantequilla y agregar un cucharón de la mezcla, moviendo el sartén circularmente para que quede parejo. Cuando la mezcla comenzará a secarse, levantar los bordes con una espátula y girar el crêpe. Cocinar por otro minuto hasta que esté dorada. Repetir el procedimiento con el resto de la mezcla. Reservar.<br />
Preparar la salsa, pasar los cubos de azúcar sobre la piel de la naranja y del limón.Mientras tanto, poner la mantequilla en el sartén a fuego bajo y agregar los cubos de azúcar, dejar que la mantequilla se derrita. Exprimir las naranjas y el limón, pasando el jugo por un colador y agregarlo a la mantequilla. Agregar el licor. Sucesivamente se procede a bañar los crepes, mejor si se hace uno a uno, poniéndolo abierto y luego doblándolo en el sartén, dejando que se impregne de la salsa. Continuar con el resto de los crêpes. <br />
Se puede también flambear los crêpes. <br />
Servir. En este caso los acompañé con un poco de helado.<br />

I must say crêpes are one of my favourites for its versatility, you can prepare fantastic dishes just using simple ingredients. For this occasion I decided to prepare a crêpe suzette, a typical French dessert known for its salsa and that citrus flavour. <br />

<b>Ingredients: </b><br />
Eggs - 2 <br />
Flour - 125 g<br />
Milk - 250 ml <br />
Sugar - 30 g<br />
Liqueur - 1 teaspoon orange liqueur or other <br />
Salt - a pinch <br />

<i>For the sauce: </i><br />
Sugar - sugar 8 cubes <br />
Butter - 70 g<br />
Oranges - 2 <br />
Lemon - 1 <br />
Grand Marnier or orange liqueur - 1 cup <br />

<b>Directions: </b><br />
Beat eggs with sugar and salt. Add flour, milk and mix. Add 20 grams of melted butter and add the liqueur. Let stand for 2 hours in the refrigerator. <br />
Grease a skillet with butter and add a ladle of the mixture, shaking the skillet so the mixture comes uniform. Once the mixture begins to dry, lift the edges with a spatula and turn the crêpe. Cook for another minute until golden. Repeat with the remaining mixture. Reserve.<br />
Prepare the sauce, pass the sugar cubes over the skin of the orange and lemon. In the meantime, place butter in skillet over low heat and add the sugar cubes, until butter is melted. Squeeze the oranges and lemon, passing the juice through a sieve and add it to the butter. Add liquor. <br />
Then, proceed dipping the crêpes in the sauce, it would be better if is done one by one, so place the crêpe in the pan and then fold it in half and half again. Continue with the remaining crêpes. <br />
You can also flambé crêpes. <br />
Serve. In this case, I chose to accompanied with some ice cream. <br />

A fines del año pasado tuve que viajar a Varsovia por trabajo. Tuve la suerte de poder viajar con mi maridito así además de trabajar tuvimos la oportunidad para recortar un poco de tiempo para conocer esta hermosa ciudad.<br />
Varsovia es una ciudad hermosa, que mantiene su historia con la modernidad, es un país con una cicatriz de dolor aún abierta después de la guerra –al menos fue mi humilde percepción-, pero que destaca por sus colores y la voluntad de su pueblo de seguir adelante. Se destaca su cocina sencilla pero deliciosa, creando con pocos ingredientes platos nutritivos y maravillosos, característica admirable de aquellos países que han pasado por periodos horribles de poco abastecimiento y durante los cuales las dueñas de casa lograban crear y llevar a la mesa platos que destacaban por la simplicidad de los ingredientes pero que al mismo tiempo lograban dar la nutrición necesaria a la familia.<br />
Durante nuestro estadía en Varsovia, tuvimos la oportunidad de probar un delicioso plato llamado “Pierogi” que consiste en ravioles rellenos. La masa es muy simple y el relleno varía, los encontré rellenos de setas, ricotta, chucrut, papas, cebollas, etc.<br />
A mi marido le encantaron, asi que desde que volvimos, me hacía entender “indirectamente” cuánto le gustaría comer nuevamente los famosos Pierogi de Varsovia, asi que así, esta humilde cocinera y esposa, decidió ponerse manos a la obra y cumplir el antojo de su marido.<br />
<br />
Aquí les dejo la receta (esperando que el pueblo polaco no se ofenda por haber intentado reproducir esta riquísima receta) y espero que la disfruten tanto como nosotros.<br />
<b><br />
Ingredientes:</b><br />
<i>Para la masa</i><br />
Harina – 2 ½ tazas<br />
Huevos – 1<br />
Agua – Tibia, de ½ a ¾ de taza<br />
Sal – una pizca<br />
<br />
<i>Para el relleno</i><br />
Papas – 5 grandes<br />
Cebollas – 2 medianas cortadas en trocitos<br />
Queso – Gouda, o el que prefieran rallado<br />
Sal<br />
Pimienta<br />
Mantequilla/aceite – 3 cucharadas<br />
<br />
Mantequilla, Aceite, salsas, de vuestra preferencia<br />
<br />
<b>Preparación:</b><br />
Lavar y pelar las papas, cocerlas y hacerlas puré. Mientras tanto caramelizamos la cebolla en la mantequilla o el aceite hasta que esté dorada. Mezclar la cebolla con el puré y el queso y salpimentar.<br />
<br />
Mezclar todos los ingredientes de la masa hasta que se uniforme. No amasar tanto, ni agregar tanta agua, hay que agregar sólo la agua suficiente para que se junten todos los ingredientes.<br />
Poner a reposar la masa tapada con una paño de cocina por no más de 30 minutos.<br />
Extender la masa en una superficie enharinada, no debe resultar muy gruesa, si no más bién lo suficientemente fina permitiendo que no se rompa la masa. <br />
Cortar la masa en círculos (se puede hacer con un vaso de vino) y agregar el relleno. Sellar bien los ravioles (yo lo hice pincelando un poco de agua en los bordes) en modo de evitar que se abran durante la cocción. <br />
Hervir suficiente agua en una olla con un poco de sal. Cuando hierva poner los Pierogi, los cuales irán al fondo de la olla para luego subir a la superficie, cuando los Pierogi suban a la superficie continuar la cocción por otros 4 minutos. Transferir en un plato y agregar un poco de aceite de oliva, o bien mantequilla derretida con setas, cebolla, o lo que quieran, yo agregué salsa de tartufo y quedó delicioso.<br />

Pierogi (Typical Polish Ravioli)</b><br />

By the end of last year I had to travel for work to Warsaw. I was lucky enough because I had the chance to travel with my hubby so while I was working we had the opportunity to cut a little time to explore this beautiful city.<br />
Warsaw is a beautiful city that keeps its history mixed with modernity, is a country with an open scar of pain since the war, (at least it was my humble perception) but noted for its colours and the will of his people to move forward. Stands out by its simple but delicious cuisine, which creates with a few ingredients nutritive and wonderful meals, admirable characteristic of those countries that have gone through terrible periods of food shortage and during which housewives were able to create and bring to the table dishes that stood out for the simplicity of the ingredients but at the same time managed to give the necessary nutrition for the family. <br />
During our stay in Warsaw, I had the opportunity to taste a delicious dish called "Pierogi" a kind of ravioli dish. The dough is very simple and filling varies, I found them stuffed with mushrooms, ricotta cheese, sauerkraut, potatoes, onions, etc.<br />
My husband loved it, so since we got back, he was constantly dropping the hint about how much he would like to eat again the famous Pierogi from Warsaw, so well, this humble cook and wife, decided to put her hands on work and to fulfill the craving of her husband. <br />
<br />
Here is the recipe (hoping not to offend Poland for my attempting to replicate this delicious recipe) and I hope you enjoy it as much as we did.<br />
<br />
<b>Ingredients: </b><br />
<i>For the dough</i><br />
Flour - 2 ½ cups <br />
Eggs - 1 <br />
Water - Lukewarm, ½ to ¾ cup <br />
Salt - a pinch <br />
<i><br />
For the filling </i><br />
Potatoes - 5 large<br />
Onions - 2 medium diced <br />
Cheese - Gouda, or whatever you prefer, shredded <br />
Salt <br />
Pepper <br />
Butter / oil - 3 tablespoons <br />
<br />
Butter, oil, sauces, your choice <br />
<br />
<b>Directions: </b><br />
Wash and peel potatoes, boil and mash them. Meanwhile caramelize onions in butter or oil until golden. Mix the onions, potatoes puree with cheese and season. <br />
<br />
Mix all ingredients for the dough until everything comes together . Don’t over and do not add too much water, add just enough water to get together all ingredients. <br />
Put the dough covered with a tea towel and let rest for no more than 30 minutes. <br />
Roll out the dough on a floured surface, should not be too thick, but rather allowing fine enough so it doesn’t break.<br />
Cut dough into circles (you can do with a glass of wine) and add the filling. Seal the ravioli (I did brush a little water on the edges) in a way to avoid a mess and they open during cooking. <br />
Boil enough water in a pot with a little salt. When it boils add the Pierogi, which will go to the bottom of the pot and then will go back to the surface; when the Pierogi rise to the surface continue cooking for another 4 minutes. Transfer to a plate and add some olive oil or melted butter with mushrooms, onions, or whatever you want, I added truffle sauce and it was delicious. <br />

Uno de mis restaurantes preferidos en mi ciudad natal, Santiago, se llama “La Cocina de Javier” donde hemos pasado memorables momentos con mi familia, graduaciones, aniversarios, cumpleaños, y tantas innumerables situaciones por el sólo hecho de estar juntos y celebrar. Javier Pascual, para quienes no lo saben es un conocido Chef Vasco en Santiago, recuerdo que participaba hasta en programas televisivos con mucho éxito. Una cosa que me gustaba tanto de ir a su restaurant es que en un momento de la cena, el mismo Javier dejaba todo en cocina e iba a saludar a todos y cada uno de sus comensales, preocupándose por cada uno y asegurándose que todo estuviese bien, haciéndonos sentir como si estuviéramos en nuestra propia casa. Era grandioso sentir ese acento, y ver a este señor de unos 70 años con su boina negra y su traje de chef, es un grande autor en cocina y fue gracias a él que me enamoré de la cocina española.<br />
Cada vez que vuelvo a Chile, mi papá, sabiendo que la Cocina de Javier es mi preferida, reserva una o dos veces una cena ahí, y en la espera de volver a degustar esos magníficos platos, me consuelo con esta delicia de Crema Catalana y aprovechando que mi maridito me regaló el soplete de cocina, no me aguanté para estrenarlo.<br />
Espero que la disfruten tanto como yo. Aquí les dejo la receta.<br />
<br />
Para 2 – 3 personas (dependiendo del tipo de molde que usen)<br />
Ingredientes:<br />
Leche – 500 ml<br />
Huevos – 4 yemas<br />
Azúcar – 8 cucharadas<br />
Canela - 1 palito<br />
Limón - ralladura de 1/2<br />
Naranja - ralladura de 1/2<br />
Vainilla - 1 cucharadita de extracto<br />
Maizena – 1 cucharada<br />
Azúcar de caña – cuanto quieran, yo usé unas 4 cucharadas<br />
<br />
<b>Preparación:</b><br />
En una olla ponemos a calentar la leche (de los 500 ml reservamos a parte un poco de leche para mezclarla con la maizena, basta 1/3 de vaso de vino) con la canela, la vainilla, la cáscara de limón y de naranja. Hervir y dejar infusionar por unos 5 minutos. Mientras tanto batir las yemas con el azúcar hasta que resulte espumoso. Agregamos la leche caliente, colándola a la mezcla de yemas y agregamos también la maizena mezclada con la leche. Mezclamos bien y ponemos todo nuevamente en la olla a fuego bajo. Cocinar revolviendo continuamente hasta que habrá adquirido consistencia. <br />
Poner la crema en los pocillos, dejar a enfriar a temperatura ambiente antes de llevar al refrigerador.<br />
Refrigerar. Yo la dejé toda la noche. Luego antes de servir ponemos el azúcar de caña en la superficie y con el soplete la caramelizan. Servir.<br />

One of my favorite restaurants in my hometown, Santiago, is called "La Cocina de Javier" where we spent great times with my family, graduations, anniversaries, birthdays, and many countless situations for just being together and celebrate. Javier Pascual, for those who do not know is a popular Basque Chef in Chile, I remember that he used to make several appearances in TV shows with great success. One thing I liked so much about going to his restaurant is that in a certain time of dinner, the same Javier was stopping everything in the kitchen in order to greet each of his guests, taking care of everyone and making sure everything was OK , making us feel like we were in our own home. It was great to feel that accent, and see this gentleman in his 70 years with his black beret and his chef outfit, he is a great author in the kitchen and it was through him that I fell in love with Spanish cuisine. <br />
Each time I return to Chile, my dad, knowing that Javier's Kitchen is my favorite, reserves a table there, and waiting to return to enjoy those great dishes, I console myself with this delicious Crema Catalana taking the occasion that my hubby just bought for me a kitchen torch.<br />
I hope you enjoy it as much as I did. Here is the recipe. <br />

For 2 to 3 people (depending on the type of mold used) <br />
Ingredients: <br />
Milk - 500 ml <br />
Eggs - 4 egg yolks <br />
Sugar - 8 tablespoons <br />
Cinnamon - 1 stick<br />
Lemon - zest of 1/2 lemon<br />
Orange - zest of 1/2 orange<br />
Vanilla - 1 tsp of vanilla extract<br />
Cornstarch - 1 tablespoon <br />
Sugar cane - all you want, I used about 4 tablespoons <br />

Directions: </b><br />
In a pot, heat the milk (reserve aside a little milk to mix with cornstarch, just like 1/8 cup) with cinnamon, vanilla, lemon zest and orange juice. Boil and leave to infuse for 5 minutes. Meanwhile beat the egg yolks with sugar until it becomes frothy. Add hot milk (strain it first) to the eggs mixture and also add the cornstarch mixed with milk. Mix well and put everything back into the saucepan over low heat. Cook stirring constantly until consistency will be acquired. <br />
Pour the cream into the moulds, let cool at room temperature before taking into the refrigerator. <br />
Refrigerate. I left it overnight. Then before serving put the sugar cane on the surface and caramelize with the torch. Serve. <br />

Desde que conocí a mi marido, digamos que esta fecha ha comenzado a tomar sentido en mi vida, tal vez porque antes cada vez que llegaba San Valentín esta fecha coincidía con mi época de soltería...pero bueno todo depende también del tipo de compañía, y es que junto a mi maridito cualquier fecha es una excusa para celebrar con romanticismo.<br />

Leche – 600 ml tibia<br />
Huevos – 6 yemas<br />
Harina – 20 gr<br />
Azúcar – 200 gr<br />
Crema fresca para batir – 300 ml<br />

Chocolate amargo – 100 gr y otro poco para decorar<br />
Gelatina en hojas – 20 gr<br />

<b>Preparación: </b><br />
Poner la gelatina a remojar en un pocillo con agua fría. Mientras tanto batir las yemas con el azúcar y la harina hasta que quede una mezcla espumosa. Unir poco a poco la leche, mezclar bien y poner todo en una olla a fuego bajo hasta que empiece a espesarse. Agregar la gelatina bien estrujada y mezclar bien hasta que se disuelva en la mezcla. Dividir la mezcla en dos bowls y en una agregar la ralladura de naranja y en la otra el chocolate amargo cortado en trocitos. Mezclar bien. Dejar enfriar. Mientras tanto batir la crema hasta que haya doblado su volumen dividirla e incorporarla en igual cantidad a la mezcla de naranja y a la de chocolate. Poner las dos mezclas en un molde y llevar al refrigerador por al menos 8 horas.<br />
Decorar con chocolate y servir.<br />

To celebrate Valentine's Day I decided to prepare a dessert that wasn’t too sickly sweet but at the same time tasty. Searching and searching I found this recipe which in an Italian magazine, a Bavarian cream of chocolate and orange, the only thing I changed was not marbling it. <br />
Since I met my husband, Valentine’s Day makes finally sense in my life, maybe because before meeting my husband every Valentine’s coincided with a time of my life of being single ... but everything depends on the quality of the company, and the thing is that with my hubby any time is an excuse to celebrate romance. <br />

<b>Ingredients: </b><br />
Milk - 600 ml warm <br />
Eggs - 6 egg yolks <br />
Flour - 20 g<br />
Sugar - 200 g<br />
Fresh whipping cream - 300 ml <br />

Dark chocolate - 100 g and some for garnish <br />

Put the gelatine to soak in a bowl with cold water. Meanwhile beat the egg yolks with sugar and flour until creamy. Add the milk gradually, mix well and put everything in a saucepan over low heat until it begins to thicken. Add gelatin and mix thoroughly wrung until dissolved in the mixture. Divide into two bowls the mixture and add the zest of the oranges to one bowl and to the other one add the dark chocolate cut into small pieces. Mix well. Allow to cool. Meanwhile whip the cream until it has doubled in size and divide it equally into the mixture of orange and into the mix of chocolate. Put the two mixtures into a mold and refrigerate for at least 8 hours. <br />
Garnish with chocolate and serve. <br />

El risotto es uno de mis platos favoritos, porque simplemente cumple con 4 requisitos fundamentales a) es rápido de preparar, b) es ideal para cuando hay invitados porque sacia bastante c) es económico (claro siempre que no usemos ingredientes que cuesten tanto) y d) es muy versátil, basta un poco de imaginación y podemos crear un risotto con lo que encontremos en casa (siempre con justo juicio!!).<br />
Aprovechando que es periodo de radicchio, decidí preparar un risotto al radicchio. Sinceramente, antes de venir en Italia desconocía su existencia, y muchas veces el radicchio tipo de Chioggia (achicoria roja) lo confundía con el repollo morado (algo que echo tanto de menos y que aún me es difícil de encontrar).<br />
Con esta receta doy mi aporte al Cook Book Challenge semana #3 “Rice/Noodles”.<br />
Aquí les dejo esta receta.<br />
<br />
Para 2 personas<br />
<b>Ingredientes:</b><br />
Arroz – 180 gr Tipo Carnaroli<br />
Radicchio – la variedad que deseen, de Chioggia, Treviso, etc. y la cantidad depende del gusto. Yo usé unas 8 hojas del radicchio, cortadas en trocitos.<br />
Vino blanco – ½ vasito<br />
Sal<br />
Pimienta<br />
Queso Gorgonzola – a placer. Yo usé unas 4 cucharadas. Es opcional.<br />
Queso Parmesano – 2 cuchardas<br />
Caldo vegetal – 1 litro (mantener caliente)<br />
Cebolla – 1 pequeña cortada en trocitos<br />
Aceite de Oliva – 2 cucharadas<br />
Mantequilla – 20 gr<br />
<br />
<b>Preparación:</b><br />
En una olla calentamos el aceite de oliva y agregamos la cebolla. Cocinar hasta que esté dorada. Agregar el radicchio y cocinar hasta que se ablande. Agregar el arroz y saltear. Luego versamos el vino y dejamos que se esfume. Sucesivamente agregamos uno o dos cucharones de caldo y comenzamos a cocinar el arroz por el periodo de cocción indicado (unos 15-18 minutos). No hay que dejar que el arroz se seque, asi que hay que mantenerlo siempre bañado con el caldo. Pocos minutos antes que termine la cocción sal pimentamos y agregamos la mantequilla, el queso gorgonzola y el parmesano. Dejamos reposar 2 minutos antes de servir.<br />

In these cold days, the body claims comfort and we need to give it comfort meals. Risotto is one of my favourites because meets 4 fundamental requirements a) is quick to prepare, b) is great for when you have guests because it feeds a crowd c) is inexpensive (of course if we do not use pricy ingredients) d ) is very versatile, just a little imagination and we can create a risotto with whatever we find at home (with fair judgement!). <br />
Since is the season for radicchio, I decided to prepare a risotto with radicchio. Honestly, before I came in Italy I wasn’t even aware of its existence, and I was often confusing the type of Chioggia radicchio with the red cabbage (something I miss so much since still it's hard to find for me here). <br />
With this recipe I give my contribution to the Cook Book Challenge week # 3 “Rice/Noodles”.<br />
Here is the recipe. <br />

Serves 2 <br />
<b>Ingredients: </b><br />
Rice - 180 gr Carnaroli type<br />
Radicchio - the variety you prefer, could be Chioggia, Treviso, etc. and the amount it’s up to you. I used about 8 leaves of radicchio, cut into small pieces. <br />
White wine - ½ cup <br />
Salt<br />
Pepper <br />
Gorgonzola cheese - I used about 4 tablespoons. Optional. <br />
Parmesan cheese - 2 Tablespoons <br />
Vegetable broth - 1 litre (kept warm) <br />
Onion - 1 small onion finely sliced <br />
Olive oil - 2 tablespoons <br />
Butter - 20 g<br />

<b>Directions: </b><br />
In a saucepan heat the olive oil and add the onion. Cook in low heat until golden. Add the radicchio and cook until soft. Add rice and cook for a minute then pour in the wine and allow to evaporate. Then add one or two ladles of broth and cook the rice for the cooking the period indicated (about 15-18 minutes). We must not let the rice to dry, so we must always keep it wet with the broth. A few minutes before the rice is ready, season with salt and pepper, then add the butter, gorgonzola and parmesan cheese. Let stand for 2 minutes before serving. <br />

Finalmente es Viernes!!! Yuppie comienza el fin de semana. Los Viernes son mis preferidos, por algunas razones, la primera es que trabajo hasta las 2pm por lo que me queda finalmente la tarde libre para pasearme entre vuestros blogs y dedicarme a la cocina. Segundo porque, dejando claro que adoro mi trabajo en este sentido tengo mucha suerte, de todas maneras saben uno tiene esa sensación que al dia siguiente no hay que levantarse temprano, al menos sólo para hacer cosas que conciernen la casa, compras, etc, y tercero porque es una excusa para celebrar :- ).<br />
La verdad queridos bloggers, me siento muy agradecida por todas vuestras palabras de apoyo en este periodo difícil para mi familia Italiana...Finalmente mi Babbo comenzará la terapia este Lunes, como les he ya anticipado lamentablemente mi Babbo tiene un tumor muy agresivo al esófago, y todas nuestras esperanzas dependerán de los resultados que obtendremos y sobre cómo responde a las terapias. En este periodo he aprendido que la fe y la esperanza son muy importantes al momento de enfrentar este tipo de situaciones, y en eso estamos, haciendo todo lo posible para estar con Babbo y enfrentar todo aquello que haya que enfrentar. Para los que no lo saben Babbo es mi suegro, y en mis 4 años en Italia ha estado siempre ahí para mí, ha sido un padre para mí y lo adoro. Hasta hoy me emociono recordando el día en que Babbo 4 años atràs, cuando acompañó mi marido junto a mi suegra a buscarme en Chile para luego traerme en Italia (si lo sé parece uno de esos matrimonios combinados pero no lo es! Jajaja es solo que no querian dejar a mi maridito solo en esa aventura) dijo a mis padres en Italiano <i>“Io volevo dirvi che i nostri occhi saranno i vostri in Italia, vedremmo vostra figlia come se fosse nostra” </i>que en español significa <i>“Yo les queria decir que nuestros ojos serán los vuestros en Italia y veremos vuestra hija como si fuera nuestra”</i> y así ha sido hasta hoy.<br />
En fin, hoy les traigo una delicia de receta muy mediterránea que adorarán, estas berenjenas de seguro que gustarán a todos.<br />
Aquí va esta receta.<br />

Para 2 personas<br />
<b>Ingredientes:</b><br />
Berenjenas – 1 grande<br />
Cebolla – ½<br />
Ajo – 2 dientes<br />
Salsa de Tomate – 1 tarro<br />
Queso – a gusto el que prefieran<br />
Queso rallados – cuanto quieran<br />
Aceite <br />
Sal<br />
Pimienta<br />
Picante - Opcional<br />
Piñones – cuanto quieran<br />
Albahaca – yo exagero me encanta!<br />
<br />
<b>Preparación:</b><br />
Cortar las berenjenas pro la mitad y recavar la carne de dentro con una cuchara. Cortar las carne de la berenjena en cuadritos y ponerla en un colador con un poco de sal hasta que empiece a botar un poco de líquido. Mientras tanto poner la berenjena cortada en mitad en una bandeja de horno engrasada y poner un poco de aceite sobre ellas. Llevar a horno precalentado a 180°C por 15 minutos. Mientras tanto preparar el relleno. Poner 2 cucharadas de aceite en una olla con el ajo molido y la cebolla. Cocinar hasta que la cebolla esté dorada. Luego agregamos la carne de la berenjena con la salsa de tomate, el picante (si se usa) y salpimentamos. Cocinar a fuego bajo por 30 minutos. Agregar la albahaca. <br />
Luego ponemos el relleno dentro de las berenjenas agregar el queso (rallado y mozzarella u otro tipo) y llevamos a horno por 30 minutos. Dejar enfríar por algunos minutos antes de servir.<br />

Eggplant - 1 large <br />
Onion - ½ <br />
Garlic - 2 cloves <br />
Tomato sauce - 1 can<br />
Cheese – as much as you want <br />
Grated cheese - as much as you want<br />

Pepper <br />
Chillie - Optional <br />
Pine nuts - s much as you want<br />
Basil - I always exaggerate I love it! <br />

<b>Directions: </b><br />
Cut eggplants in half and scoop the meat out with a spoon. Cut meat into cubes and place it in a colander with a little salt until it begins to throw a little liquid. Meanwhile, put the eggplant cut in half in a greased baking tray and put some oil over. Place in a preheated oven at 180 ° C for 15 minutes. Meanwhile prepare the filling. En estos días de lluvia, que mejor que disfrutar de una torta al calor de un té. Encontré esta receta entre las miles de la gran Martha, buscaba una receta sin mantequilla ni leche, dado que mi suegro debe mantener una dieta baja de productos lácticos, asi que voilá esta receta era justo lo que buscaba.<br />
Estos días han sido verdaderamente cansadores, asi que una tortita para subir el ánimo es justo lo que se necesita.<br />

<b>Ingredientes:</b><br />
Naranjas – 6 medianas tipo Navel<br />
Harina – 125 gr<br />
Almendras molidas – 170 gr<br />
Polvos de hornear – 1 ½ cucharadita <br />
Sal – una pizca<br />
Huevos – 6 <br />
Azúcar – 225 gr<br />
<br />
<b>Preparación:</b><br />
Poner las naranjas enteras sin pelar en una olla profunda y cubrir con agua. Dejar hervir y cocinar por 2 horas. Colar y dejar enfríar.<br />
Cortar las naranjas por la mitad y sacar cualquier semilla que pueda tener. Poner las naranjas en una procesadora de alimentos y procesar hasta que quede puré. Reservar.<br />
En un bowl mezclar las almendras molidas con la harina, los polvos de hornear y la sal. A parte batir los huevos con el azúcar. Agregar el puré de naranja y la mezcla de harina. Mezclar bien.<br />
Vertir la mezcla en un molde de 22 cms de diámetro previamente enmantequillado y enharinado.<br />
Llevar a horno precalentado a 180ºC por 1 hora hasta que la torta resulte dorada.<br />
Dejar enfriar y servir.<br />

I found this recipe among the thousands of the great Martha. I was looking for a recipe without butter or milk, as my father-in-law should maintain a diet low in dairy products, so voila this recipe was just what I looking for. <br />
These days have been really tiring, so a cake for cheer us up is just what we needed. <br />

<b>Ingredients: </b><br />
Oranges - Navel 6 medium <br />
Flour - 125 gm <br />
Ground almonds - 170 gm<br />
Baking powder - 1 ½ teaspoon <br />
Salt - a pinch <br />
Eggs - 6 <br />
Sugar - 225 gm<br />

Directions: </b><br />
Place whole unpeeled oranges in a deep pot and cover with water. Boil and cook for 2 hours. Strain and let cool. <br />
Cut oranges in half and remove any seeds they may have. Place oranges in a food processor and process until pureed. Set aside.<br />
In a bowl mix the ground almonds with the flour, baking powder and salt. Separately beat eggs with sugar. Add in the orange puree and flour mixture. Mix well. <br />
Pour the mixture into a greased and floured 22 cm diameter pan. <br />
Place in preheated oven at 180 º C for 1 hour until the cake is golden. <br />
Let it cool and serve. <br />

<a href="http://circulo-wholekitchen.blogspot.com/">Whole kitchen</a> en su Propuesta Salada para el mes de Enero nos invita a preparar todo un clásico de la gastronomía francesa, un Soufflé.<br />
El Soufflé es ideal para una entrada o un acompañamiento. Personalmente lo prefiero como entrada, porque su textura suave nos prepara para los platos a seguir. Y como siempre, basta un poco de imaginación para crear con una receta básica de Soufflé distintos tipos de éste.<br />
La receta me gustó mucho, la unica cosa es que aumenté un poco el tiempo de cocción.<br />
Asi que aquí vamos con el resultado, pero antes quiero agradecerles tanto a todos ustedes por vuestras lindas palabres durante este periodo...vuestras palabras han sido de gran conforto. Mil Gracias!!<br />
Ahora si, aquí vamos con la receta a la cual agregué solamente el pesto.<br />
<br />
<b>Ingredientes:</b><br />
por Michel Roux<br />
Mantequilla ablandada – 50 gr<br />
Queso Gruyere rallado – 50 gr<br />
Mantequilla – 20 gr<br />
Harina – 20 gr<br />
Leche – 250 ml<br />
Sal y pimienta recién molida<br />
Una pizca de pimienta de cayena<br />
Yemas de huevo - 6<br />
Claras de huevo - 10<br />
Queso Gruyere finamente rallado – 240 gr<br />
Pesto – 4 cucharadas<br />
<br />
<b>Preparación:</b><br />
Precaliente el horno a 200ºC. Bata las claras con una pizca de sal hasta que esté a punto de nieve.<br />
Engrase el interior de 8 recipientes de 8 cm de diámetro (o 4 recipientes para suflé de 10 cm de diámetro) con la mantequilla.<br />
Ponga 50 g de gruyere rallado en uno de los recipientes, gírelo para cubrir el interior y luego vierta el gruyere sobrante en otro de los recipientes. Repita la operación pra recubrirlos todos.<br />
Para hacer la bechamel, funda los 20 g de mantequilla en una cacerola. Añada la harina y cocínela durante 2 minutos. Sin dejar de remover, añada la leche fría y deje que hierva a fuego medio durante uno o dos minutos.<br />
Vierta la bechamel en un cuenco. Sazónela ligeramente con sal, pimienta y cayena e incorpore las yemas con las varillas. Cubra el cuenco con film transparente y deje que se enfríe un poco. Agregar el pesto y mezclar.<br />
Incopore enseguida, con unas varillas, una tercera parte de las claras con una mezcla templada para el soufflé y luego con una cuchara larga, vaya introduciendo el resto con una mano mientras espolvorea el gruyere con la otra. Deténgase cuando la mezcla esté amalgamada.<br />
Introduzca esta mezcla en los recipientes de modo que quede 5 mm por encima del borde. Allane la superficie con una espátula y use la punta de un cuchillo para retirar la mezcla de los bordes de cada recipiente y así ayudar a que la mezcla suba.<br />
Coloque los recipientes en una bandeja profunda resistente al calor, recubierta con una capa de papel encerado, y vierta dentro agua hirviendo para cubrir la mitad de la altura de los recipientes. Hornee los soufflé 8 minutos, dependiendo de la medida del molde.<br />

The Soufflé is ideal as starter or side dish. Personally I prefer it as a starter, because its soft texture prepares us for the dishes to follow. And as always, just with a little imagination we can create from the basic recipe of the Soufflé different types of it. <br />
I really liked this recipe, the only thing is that I increased a little the cooking time. <br />
So here we go with the result, but first I want to thank you all so much for your kind words during this time ... your words have been of great comfort. Thanks a lot! <br />
Now, here I go with the recipe to which the only variation I made was adding the pesto. <br />
<br />
<b>Ingredients: </b><br />

Softened butter - 50 g <br />
Gruyere cheese, grated - 50 g<br />
Butter - 20 g<br />
Flour - 20 g<br />
Milk - 250 ml cold<br />
Salt and freshly ground pepper <br />
Pinch of cayenne pepper <br />
Egg yolks - 6 <br />
Egg whites - 10 <br />
Finely grated Gruyere cheese - 240 g<br />
Pesto - 4 tablespoons <br />

<b>Directions: </b><br />
Preheat oven to 200ºC. Beat the egg whites with a pinch of salt until stiff peaks form. <br />
Grease the inside of 8 containers or ramekins of 8 cm in diameter (or 4 soufflé containers 10 cm in diameter) with butter. <br />
Put 50 g of grated cheese in one of the ramekins, turn to coat the inside and then pour the remaining cheese in the rest of the ramekins. <br />
To make the bechamel, melt the 20 g of butter in a saucepan. Add flour and cook for 2 minutes. Stirring, add the cold milk and bring to a boil over medium heat for a minute or two. <br />
Pour the bechamel in a bowl. Sprinkle lightly with salt, pepper and cayenne and stir in the egg yolks. Cover the bowl with plastic wrap and let cool slightly. Add the pesto and mix. <br />
Then add a third of the whites with to the soufflé mixture, then with a long spoon, you introduce the rest with one hand and sprinkle the gruyere with the other. Stop when the mixture is amalgamated. <br />
Pour this mixture in into the ramekins. Flatten the surface with a spatula and use the tip of a knife to remove the mixture from the edges.<br />
Place the ramekins in a deep pan heat resistant, coated with a layer of wax paper and pour in boiling water to cover half the height of the containers. Bake the soufflé 8 minutes, depending on the measure of the mold. <br />
<br />
Serve.<br />

Finalmente ha llegado el fin de semana! Esta semana ha sido bastante agitada, ya sabeís por via de suegro...lamentablemente hoy nos han confirmado la presencia de un tumor, en el esófago...ahora esperamos resultados de la biopsia para ver como combatir esta situación con el mejor de los resultados.<br />
No les niego que ha sido difícil tratar de dar tranquilidad a mi marido, pero bueno aquí estamos todavía y enfrentaremos este periodo todos juntos. Les agradezco a todos por vuestras lindas palabras de conforto y apoyo, de verdad son muy apreciadas, de corazón se los agradezo!<br />
Mañana tengo intenciones de ir a visitar a mi suegro en el hospital, y para levantarle un poco el ánimo tengo pensado de llevarle unas galletitas de lima, aprovechando che Cinzia ha lanzado su primer concurso de cítricos.<br />
La receta que les traigo es de la fantástica Martha Stewart, son unas deliciosas galletas “Lime meltaway”, son maravillosas, lo recomiendo, basta solo una taza de té y ya tienen una fantástica merienda. Con esta receta doy mi aporte al concurso de <a href="http://ilricettariodicinzia.blogspot.com/2011/01/il-mio-primo-contest-gli-agrumi.html">Cinzia “Gli Agrumi”</a>.<br />

<span style="font-weight:bold;">Ingredientes:</span><br />
Mantequilla – 170 gr a temperatura ambiente<br />
Azúcar en polvo (flor) – 45 gr + 80 gr<br />
Lima (limón de pica) – ralladura de 2 limas y 1 cucharada de jugo<br />
Vainilla – 1 cucharada de extracto<br />
Harina – 280 gr<br />
Maizena – 2 cucharadas<br />
Sal – una pizca<br />

<span style="font-weight:bold;">Preparación:</span><br />
En un bowl batir la mantequilla con 45 gr de azúcar en polvo hasta que se vuelva pálida y espumosa. Agregar la ralladura, el jugo y el extracto de vainilla. Mezclar.<br />
Separadamente mezclamos la harina con la maizena y la sal. Luego agregamos a la mezcla de mantequilla y mezclamos.<br />
Dividir la masa en dos. En papel de horno envolvemos una mitad de la masa formando un rollo de unos 3 cms de diámetro. Y hacemos lo mismo con el resto de la masa. Llevamos nuestros rollos al refrigerador por al menos 1 hora (yo lo puse en el congelador por 30 minutos) para que tome consistencia. Cuando la masa esté fria y dura, la cortamos con un cuchillo en redondelas de medio centímetro. <br />
Distribuir las galletitas en una bandeja de horno cubierta con papel, dejando espacio entre ellas. Llevar al horno precalentado a 180°C y hornear por 12 minutos.<br />
Dejar enfríar por 8 minutos y mientras están aún calentitas las ponemos en una bolsa con el resto del azúcar en polvo. Agitamos (con cuidado) para esparcir el azúcar y listo! <br />

I can’t deny that it has been difficult trying to reassure my husband, however, we are holding together and we will face this period all together. I thank you all for your kind words of comfort and support are highly appreciated! <br />
Tomorrow I have plans of going to visit my father-in-law in the hospital, and to lift his mood a little I have thought of bringing some lime cookies, having as an excuse that Cinzia launched its first contest of citrus recipes. <br />
The recipe that I ‘m posting today is from the great Martha Stewart, these are delicious cookies "Lime meltaway" are wonderful, I recommend it, you will only need a cup of tea and you are set!. Divide dough in half. Wrap in parchment paper one half of dough into a roll about 3 cm of diameter. Do the same with the remaining dough. Place the rolls in the refrigerator for at least 1 hour (I put them in the freezer for 30 minutes) so they get consistent. When the dough is cold and firm, with a knife cut it in round of half cm. <br />
Distribute the cookies on a baking tray covered with parchment paper, leaving space between them. Bake in preheated oven at 180 ° C and for 12 minutes. <br />
Let cool for 8 minutes and while still warm put them in a bag with the remaining powdered sugar. Shake (gently) to cover the cookies with the sugar and voila!<br />

Este año digamos que no lo hemos empezado muy bien…trataría de evitar las cosas tristes y los momentos difíciles pero he encontrado en ustedes amistades y apertura. Estos días han sido un poco difíciles para mi marido y su familia, la cual es ahora mi familia...mi suegro está en el hospital hace ya unos días, su situación digamos no es de la mejores, le han encontrado aparentemente un tipo de tumor en una vértebra de la columna...los médicos están haciendo análisis para ver bien de qué se trata...ver mi marido, mi suegra y mi cuñada en esta situación del “no saber” me tiene en ansia y con bajo de ánimo...el sólo pensar que pudiese pasar algo a mi suegro nos angustia...hace ya dos años mi suegro se sometió a una operación porque le habían encontrado nódulos malignos en la tiroide con metástasis, cosa que luego de dos terapias radioactivas pareciera estar bajo control, y ahora este año empezamos con esta noticia...en fin, espero sólo que la vida nos dé la fuerza a nosotros y a mi suegro, al cual cariñosamente llamo siempre “Babbo” (“Papá” en Italiano), de enfrentar esta situación y que salga todo bien. <br />

En fin chicos, quería compartirlo con ustedes para recordales que la vida nos pone siempre en estas situaciones para darnos cuenta de las cosas que son verdaderamente importante en la vida, y cómo cada día es un milagro. Y que las cosas simples y que damos por hecho son vitales, como la salud, el estar juntos y el poder cada día despertar junto a los que queremos.<br />
Sólo un pensamiento y una situación que quería compartir con ustedes.<br />
Pero bueno, estoy segura que todo saldrá bien, asi que al mal tiempo buena cara como dicen.<br />
Aquí les traigo una receta, una de aquellas que representan la semplicidad de la vida pero que nos dan calor y alimento! Es una fantástica sopa de cebolla, típica de la cocina francesa, aquí va la receta y con esta receta doy mi aporte al <a href="http://hechoencocina.blogspot.com/2010/12/hemc-50-sopas.html">HEMC#50 “Sopas”</a>.<br />
<br />
Para 3 personas<br />
<span style="font-weight:bold;">Ingredientes:</span><br />
Mantequilla – 30 gr<br />
Cebollas – 700 gr cortadas en rodajas finas<br />
Vino blanco – 50 ml<br />
Caldo vegetal – 800 ml<br />
Sal y pimienta<br />

<span style="font-weight:bold;">Preparación:</span><br />
En una olla suficientemente profunda derretir la mantequilla y agregar la cebolla cortada en rodajas. Salpimentar y cocinar a fuego bajo por 1 hora, hasta que la cebolla esté bien dorada. Hay que revolverla constantemente, para evitar que la cebolla se queme. Pasada la hora y cuando la cebolla esté bien dorada agregamos el vino y dejamos evaporar. Luego aumentamos la llama del fuego de la cocina y agregamos el caldo. Dejar hervir y cocinar por unos 15 minutos. Condimentar y servir. Pueden servirla con pan dorado al ajo, queda una maravilla!<br />

This year hasn’t started very well ... I would like to avoid sad and difficult stories but I found in all of you friendly community. These days have been tough for my husband and his family, which is now my family ... my father in law has been in the hospital for few days now, his situation is not the best, the doctors apparently found a type of tumour in a vertebra of the spine ... they are still running tests to see clearly what it is ... watching my husband, my mother in law and my sister in law going through this situation of "not knowing" has me on anxiety and in a low mood … the thought that something could happen to my father in law is distressing. Two years ago my father in law underwent an operation because doctors found malignant nodules in the thyroid with metastases, which after two radioactive therapies seems to be under control, and now this year we started with this awful new ... I really hope that life gives us the strength to us and my father in law, I often call him "Babbo" (which means “Dad” in Italian), to go through this situation. <br />

Anyway guys, I wanted to share this just to remind you that life always put us in these situations to realize things that are truly important, and how each day is a miracle. Simple things that we take for granted are vital, such as health, being together and to be able to wake up every day next to those we care. <br />
Just a thought and a situation I wanted to share with you. <br />
But I'm sure everything will be okay, everything has to be Ok! That will be my spirit! <br />
Here I bring you a recipe, one of those representing the simplicity of life, but that give us warmth and comfort! It's a fantastic onion soup, here's the recipe and with this recipe I give my contribution to <a href="http://hechoencocina.blogspot.com/2010/12/hemc-50-sopas.html">HEMC#50 "Soups"</a>. <br />

For 3 people <br />
<span style="font-weight:bold;">Ingredients:</span> <br />
Butter - 30 g<br />
Onions - 700 grams thinly sliced <br />
White wine - 50 ml <br />
Vegetable stock - 800 ml <br />
Salt and pepper <br />

<span style="font-weight:bold;">Directions: </span><br />
In a pot deep enough melt the butter and add the sliced onions. Season and simmer for 1 hour, until the onion is golden brown. You have to stir constantly to avoid burning the onions. After the hour and when the onion is well browned add the wine and let evaporate. Then increase the flame of the hob and add the broth. Boil and cook for about 15 minutes. Season and serve. Serve with garlic bread, it’s fantastic! Enjoy!<br />

Lo sé, ha pasado poco más de un mes desde mi última entrada en el blog, ha sido un largo exilio, sobre todo porque extrañaba esta hermosa comunidad de food bloggers!<br />
El mes pasado fue un mes “Full”, entre viajes por trabajo, el trabajo mismo, las fiestas de fin de año, las compras navideñas y para más remate, durante el mes de diciembre, se nos inundó casa 3 veces, si! No una, sino 3 veces!!!!! <br />
La primera vez, gracias a la misericordia de Dios pero lamentablemente para mi maridito, yo no me encontraba en casa, dado que me encontraba en viaje, no les explico qué cosa se encontró mi marido en casa, salió todo por el baño, dado que nos encontramos en el primer piso de un departamento, el nuestro fue el más dañado... ( a todo esto para el futuro nunca màs un primer piso!) la empresa que se ocupa de limpiar las cañerias tuvo que venir 3 veces hasta que finalmente (al menos hasta ahora va todo tranquilo) pudieran encontrar y resolver el problema. Uno de nuestros vecinos, haciendo trabajos de remodelación en su baño terminó botando restos de yeso y piedras en los tubos de descarga, ehh si! Yo pedía su ejecuciòn!! No les explico la desesperación cuando el agua no para de salir y no sabes qué hacer...mi pobre maridito las tres veces, tuvo que ir a tocar las puertas de los vecinos para pedirles de no descargar en baño, y lamentablemente durante horarios poco apropriados...En fin, la Odisea ha terminado por el momento y espero que para siempre. El resultado? Muebles dañados por el agua, desinfección profunda de la casa y logramos conocer todos los vecinos...<br />
Y ahora... Nuevo Año y nuevas recetas no??? Lista y dispuesta para continuar esta linda aventura junto a ustedes!<br />
Aquí les traigo esta deliciosa receta, un pan casi integral porque utiliza los dos tipos de harina, pero delicioso, crujiente en sus bordes y delicado en su miga. Con un poco de mermelada o solamente mantequilla quedará delicioso para el desayuno o la merienda.<br />

Agua – 225 ml tibia<br />
Miel – 1 ½ cucharada<br />
Levadura fresca – 20gr<br />
Harina de fuerza blanca – 300 gr<br />
Harina integral – 150 gr<br />
Mantequilla – 50 gr fría y cortada en cubos<br />
Sal – 1 cucharadita<br />

Preparación:</span><br />
En un bowl pequeño mezclar el agua con la miel y la levadura. Dejar reposar por unos 5 minutos.<br />
En un suficientemente grande mezclar las harinas con la mantequilla y la sal. Agregar le mezcla de levadura. No debe quedar ni seca ni muy mojado.<br />
Amasar la mezcla en una superficie enharinada por lo menos por 10 minutos o lo pueden hacer también con el gancho para amasar.<br />
Poner la masa en un bowl aceitado y cubrir con papel transparente de cocina (o una bolsa plástica) por 3 horas. Cuando habrá duplicado su volumen, hundir la masa con el puño de la mano y amasar en una superficie enharinada por 1 minuto. Darle forma ovalada a la masa y aplastar con la mano. <br />
Transferir la masa a una bandeja un poco enharinada y con un cuchillo afilado realizar 4 cortes sobre la superficie. Salpicar un poco de harina sobre la masa y cubrirla con un paño. Dejar reposar por unos 45 minutos en un lugar cálido.<br />
Mientras tanto precalentar el horno a 200ºC. Hornear el pan por 30 minutos.<br />

I know, it’s been over a month since my last blog entry…it’s been a long exile, especially since I missed this beautiful community of food bloggers!<br />
Last month was a month "Full", with trips for work, the work itself, the holidays, holiday shopping and last but worst, during the month of December, our house flooded three times, yes! Not once but 3 times !!!!! One of our neighbors, doing remodeling work in his bathroom finished throwing stones and remains of gypsum in the discharge tubes, uhh yeah! I asked his death! It was a complete desperation…the water was coming out and out and we weren’t able to stop it ... my poor hubby three times, had to go and knock on doors of neighbors to ask them not to use the toilets, and unfortunately during odd hours ... Anyway, the Odyssey is over for now and hopefully forever. The result? Furniture damaged, deep disinfection of the house and we got to meet all the neighbors ...<br />

I'm bringing this delicious recipe, a wholemeal bread because that uses two types of flour, but delicious, crispy on the edges and delicate in the inside. With a bit of jam or butter it will make a great snack or breakfast.<br />

<span style="font-weight:bold;">Ingredients:</span><br />
Water - 225 ml warm<br />
Honey - 1 ½ tablespoon<br />
Fresh yeast - 20g<br />
Strong White bread flour - 300 g<br />
Wholemeal flour - 150 g<br />
Butter - 50 g cold diced<br />
Salt - 1 teaspoon<br />

Directions:</span><br />
In a small bowl mix the water with honey and yeast. Let stand for 5 minutes.<br />
In a large bowl mix the flour with butter and salt. Pour the yeast mixture. It should not come too wet or too dry.<br />
Knead the mixture on a floured surface for at least 10 minutes or you can also make the dough with the mixer.<br />
Place dough in oiled bowl and cover with cling film (or plastic bag) for 3 hours. When will double in size, knock it back by punching it down with your fist and then knead it on a floured surface for 1 minute. Give it and oval shape and flatten the dough by hand.<br />
Transfer the dough to a floured tray and with a sharp knife make 4 cuts on the surface. Sprinkle a little flour on dough and cover with a tea towel. Let stand for about 45 minutes in a warm place.<br />
Meanwhile preheat the oven to 200 º C. Bake the bread for 30 minutes.<br />

Esta receta estaba entre mis pendientes, con tantas cosas por hacer, finalmente me decidí a prepararla, es bastante simple de preparar y el resultado es óptimo.<br />
El Quiche Lorraine es una receta típica francesa, pero vamos que este rico plato se disfruta en todas partes.<br />
Aquí les dejo esta deliciosa receta.<br />

<span style="font-weight:bold;">Ingredientes:</span><br />
Para la masa:<br />
Harina – 200 gr cernida<br />
Mantequilla – 100 gr fría en cubos<br />
Huevos – 1 batido<br />
Sal<br />
<br />
Aceite de Oliva – 1 cucharada<br />
Tocino – 175 gr<br />
Cebolla – 100 gr<br />
Huevos – 4 (2 enteros y 2 yemas)<br />
Crema – 200 ml<br />
Perejil – 1 cucharada<br />
Queso rallado – 100 gr (cheddar, gruyere o parmesano)<br />
Sal y Pimienta<br />

<span style="font-weight:bold;">Preparación:</span><br />
Para la masa el modo más rápido es poner harina, mantequilla y sal en un procesador de comida y mezclar hasta obtener migas. Agregar de a poco el huevo batido hasta que la masa se una. Envolverla en papel transparente y llevar al refrigerador por al menos 30 minutos.<br />
Luego la ponemos en un molde de torta o de kuchen, cubrir con papel de horno y poner porotos secos (judias secas) para que la masa no se levante. Llevar al horno precalentado a 180ºC por unos 15 minutos, luego retiramos el papel con los porotos y continuamos la cocción por unos dos minutos. Dejar enfriar.<br />
<br />
En un sartén calentar el aceite y cocinar el tocino. Remover y secar el exceso de aceite. En el mismo sartén agregar la cebolla y cocinar por unos 10 minutos. Dejar enfriar.<br />
Batir los huevos, con la crema, perejil, queso y agregar el tocino y la cebolla. Mezclar bien y salpimentar a gusto.<br />
Poner la mezcla sobre la masa y llevar a horno precalentado por 180ºC por unos 40 minutos hasta que el centro esté firme.<br />
Servir.<br />

Beat the eggs, cream, parsley, cheese and add the bacon and onion. Mix well and season to taste.<br />
Pour the mixture over the dough and place in the oven preheated to 180 º C for 40 minutes until center is firm.<br />

Ésta es una especie de cheesecake, que he visto en una transmisión inglesa de R. Allen. Apenas la vi, la quise probar. El resultado fue genial, una torta muy suave que mezcla el chocolate con el café, una combinación de éxito asegurado!<br />
La verdad es que para mí la cheesecake debe ser con el verdadero queso crema por lo que no arriesgo a llamarla una cheesecake, pero la consistencia es parecida, y lo más importante es que es DELICIOSA!<br />
Aquí les dejo la receta.<br />

Ingredientes:</span><br />
Para la base<br />
Galletas digestive – 375 gr<br />
Mantequilla – 75 gr derretida<br />
Crema – 2 cucharadas<br />

Chocolate amargo – 100 gr<br />
Queso Mascarpone – 500 gr<br />
Azúcar – 125 gr<br />
Huevos – 3<br />
Café – 125 ml<br />

<span style="font-weight:bold;">Preparación:</span><br />
Comenzar con la base. Moler las galletas y agregar la mantequilla derretida con la crema. Disponer la mezcla en un molde de torta de unos 24 cms de diámetro. Refrigerar por al menos 10 minutos.<br />

Derretir el chocolate a baño maría. Mientras tanto mezclar el mascarpone con el azúcar. Batir con un tenedor los huevos a parte y agregarlos de a poco al mascarpone, mezclar.<br />
Cuando el chocolate esté derretido, agregar el café y mezclar. Agregar la mezcla de chocolate y café al mascarpone y mezclar bien-<br />
Poner la mezcla en el molde de torta sobre la base de galletas.<br />
Llevar al horno precalentado a 170ºC por unos 50 minutos.<br />
Dejar enfríar y decorar con cacao.<br />

The truth is that for me the cheesecake should be with real cream cheese so I wouldn’t venture to call it a cheesecake, but consistency is similar, and most importantly is that it's DELICIOUS!<br />
Here is the recipe.<br />

For the base<br />
Digestive biscuits - 375 g<br />
Butter - melted 75 g<br />
Cream - 2 tbsp<br />

For the topping<br />
Dark chocolate - 100 g<br />
Mascarpone cheese - 500 g<br />
Sugar - 125 g<br />
Eggs - 3<br />
Coffee - 125 ml<br />

Directions:</span><br />
Start with the base. Process cookies until fine and add melted butter and the cream. Place the biscuits in a spring form about 24 cm in diameter. Refrigerate for at least 10 minutes.<br />

Ajo – 2 dientes de ajo<br />
Colitas de Camarones – 200 gr<br />
Queso crema – 2 cucharadas<br />
Limón – ½ cucharada<br />
Albahaca – 1 cucharada<br />
Sal<br />
Pimienta<br />

Derretir en un sartén la mantequilla y agregar la cebolla picada finamente y el diente de ajo. Cocinar algunos segundos y agregar un poco de sal.<br />
Apenas la cebolla y el ajo estén casi listos agregar los camarones. Revolver por un par de minutos.<br />
Cuando los camarones estén listos, ponerlos en un procesador de comida o molerlos, en modo de hacer un paté. Transferir a un bowl y dejar enfriar. <br />
Agregar la albahaca picada, el queso crema, el jugo de limón y salpimentar.<br />
Servir.<br />
