El Casatiello es una torta salada típica de la tradición Napolitana que se prepara especialmente en Pascua.
Aquí en Italia a diferencia de Chile, dan como feriado el lunes después de Pascua (en Chile dan feriado el Viernes Santo) y muchas personas aprovechan para realizar un picn nic o un paseo al aire libre, el Casatiello es casi un infaltable en estos paseos!
En casa lo hemos disfutado como antipasto, y queda una delicia!
Aquí les dejo la receta.
Ingredientes:
Harina – 1 kg
Levadura fresca – 15 gr
Agua tibia – 500 ml
Manteca – 125 gr derretida (la receta original utiliza 250 gr de manteca no derretida, yo la derretí en modo que diera más fácilmente y con menos cantidad la suavidad a la masa)
Sal a gusto
Pimienta gusto
Queso – 300 gr yo usé queso scamorza pero pueden utilizar el que prefierancomo Gouda, Emmental, etc
Chorizo – 250 gr la receta original utiliza un salame de Napolis pero yo preferí darle un toque personal y el chorizo quedó perfecto!
Salame y/o Jamón prosciutto o Serrano – 150 gr o cuanto quieran
Huevos – 4 -5 frescos
Preparación:
Disolver la levadura en el agua tibia y dejar reposar por almenos 10 minutos. Poner la harina a fuente y en el hueco ponemos la levadura con el agua (podemos hacer todo con el gancho de amasar de nuestra máquina). Agregar la manteca derretida (cuidado que no esté hirviendo) sal, pimienta, y amasar todo. Yo puse todo en la máquina por unos 7 minutos hasta que la masa absorve todo.
Dejar la masa reposar por una media hora cubierta con un paño de cocina hasta que habrá doblado su volumen.
Extender la masa en forma rectangular con un grosor de 1 cm. Dejando un poco de masa a parte para poder hacer las tiritas para los huevos.
Disponer el jamón, el salame, el queso y el chorizo sobre la superficie hasta cubrirla bastante (no exageren con la cantidad) dejando los bordes libres. Pincelar los bordes con un poco de agua y enrollar la masa por el largo como un brazo gitano.
Poner la masa en un molde aceitado a forma de bizcocho savarín (de queque) e unir las puntas. Colocar sobre la superficie los huevos enteros (crudos y frescos) y colocar sobre éstos las tiritas de masa a forma de cruz. Cubrir la masa con un paño de cocina y dejar reposar por 2 horas.
Llevar el casatiello al horno precalentado a 160°C por 1 hora e 10 minutos.
Dejar enfríar y servir.

Casatiello is a salty cake typical of the Neapolitan tradition that is prepared especially for Easter.
Here in Italy in contrast to Chile, the Monday after Easter is given as a holiday (in Chile is given as a holiday the Good Friday) and many people take the occasion to make a picnic or to go outdoors, and the Casatiello is almost inevitable in these rides ! At home we have eat it as antipasto, and is a delicious!
Here is the recipe.
Ingredients:
Flour - 1 kg
Fresh yeast - 15 g
Warm water - 500 ml
Pure Lard- melted 125 g (original recipe uses 250 grams of lard not melted, I melted in a way that would more easily and with less soft to the mass)
Salt to taste
Pepper taste
Cheese - I used 300 g scamorza cheese but it’s obviously your choice, Emmental, Gouda, all would be OK
Chorizo - 250 g - original recipe uses a salami from Naples but I preferred to give a personal touch and the sausage was perfect!
Salami or prosciutto or Serrano ham - 150 g, or whatever you want
Eggs - Fresh 4 -5
Directions:
Dissolve yeast in warm water and let stand for at least 10 minutes. Put the flour on a surface making a well in the centre and pour the yeast with the water (we can do everything with the dough hook of your machine). Add melted lard (be careful not boiling) salt, pepper, and knead it. I put everything in the machine for about 7 minutes until the dough absorbs everything.
Let the dough rest for half an hour covered with a clean tea towel until it will double in size.
Roll out the dough into a rectangular shape with a thickness of 1 cm. Leaving aside some dough to make strips for eggs.
Arrange the ham, salami, cheese and sausage on the surface to cover enough (do not overdo it with the amount) leaving the edges free. Brush the edges with a little water and roll the dough from the length.
Put the dough in a greased ring cake pan and join the ends.
Placed on the surface the whole eggs (raw and fresh) and place over eggs the strips of dough crosswise.
Cover the dough with a tea towel and let stand for 2 hours.
Put Casatiello in a preheated oven at 160 ° C for 1 hour and 10 minutes.
Cool and serve.
