Galletas de Jengibre para alimentar el alma!


En estos dias frenéticos natalicios no hay nada mejor que tomarse una pausa para disfrutar de nuestro entorno. Me encanta este periodo, pero al mismo tiempo me pone un poco triste, esa “saudade” que me llena cada vez que en este tipo de fechas me recuerda lo lejos que me encuentro de mi tierra, de mis raíces, mis costumbres, mi gente, mi familia, mis amigos y mis recuerdos. No me arrepiento absolutamente de mis decisiones ni de mi vida aquí, por el contrario no podria imaginar mi vida distintamente a lo que hoy he construido junto a mi marido, hemos tenido la suerte de crearnos una vida con logros y satisfacciones personales y profesionales y sé que aún me queda por recorrer, pero indistintamente es normal sentir la falta de los míos, y sé que mi marido lo nota y no lo puedo evitar...no puedo evitar de pensar a mi amada y única abuela (única porque de verdad es única en su especie, a sus ochenta y tantos años aùn manda como un comandante de alto rango, como todas las abuelas chilenas creo) que cada año como el grinch detesta la navidad porque la emociona en un cierto sentido y a ella no le gusta mostrarse emotiva...cómo prepara cada año el delicioso pavo para la noche de navidad y mi madre que prepara una mesa especial, llena de detalles, mi papá, mis hermanos, mis sobrinos, en fin todos aquellos que dan un sentido a la navidad. Este año serà distinta la navidad, mi suegro como saben ya no está ni su hermoso pesebre que cada año preparaba con tanto amor y dedicación, pero sé que en un cierto modo nos acompañará donde quiera que esté, será una navidad distinta pero concientes de que hemos atravesado un año de dolor pero que igualmente la vida nos regala siempre la felicidad, como es el caso de nuestra esperada Sofia que dentro de un par de meses llegará a nuestras vidas! Por ello a veces es bueno detenerse en estos frenéticos dias, preparar un buen té y pensar...pensar a nuestros seres queridos que ya no están o se encuentran lejos, agradecer todo aquello que la vida nos dona cada dia y disfrutar, disfrutar al máximo cada momento y experiencia junto a los nuestros.
Aquí les traigo una riquísima receta para las galletas de jengibre que abundan en esta época y nos hacen recordar tantas cosas especiales de estas fechas. Espero que la disfruten.

Ingredientes:
Mantequilla – 150 gr
Azúcar – 125 gr
Harina – 360 gr
Melaza – 113 gr
Bicarbonato – 1 cucharadita
Jengibre molido – 2 cucharaditas
Canela molida – 1 cucharadita

Preparación:
Calentar el horno a 180°C. Mientras tanto en una olla derretir la mantequilla con el azúcar y la melaza. A parte en un bowl cernimos la harina con el bicarbonato, el jengibre y la canela, agregar la mantequilla derretida con el azúcar y la melaza y mezclar. Amasar por pocos segundos hasta que la mezcla se junte (no debe quedar muy húmeda). Aplastar la masa en forma redonda con un grosor de 2 cms, cubrir con papel transparente y refrigerar por 30 minutos. Después sacar del refrigerador y en una superficie enharinada extender la masa con un grosor de unos 5 mm. Cortar las formas de las galletas y distribuir en una bandeja de horno con papel mantequilla. Hornear por unos 10 minutos hasta que los bordes estén dorados, sacar del horno y dejar reposar hasta que se enfríen.

Pandoro – Ya se siente la Navidad!


Mi primer Pandoro! El Pandoro es un dulce típico de la tradición navideña Italiana, como el Panettone, la diferencia con éste es que el Pandoro es muy simple, no lleva fruta seca ni nada por el estilo, pero aún así es un dulce delicioso, muy blando e ideal para disfrutar en estas fiestas. Atención! No aptos para impacientes, de hecho tuve que esperar casi 10 horas para que fermentara!!! Pero al final la espera valió la pena. Ya estoy con el espíritu navideño a 1000, escuchando villancicos y ya ayer armamos nuestro árbol navideño, hoy por suerte trabajo desde casa asi que tendré un poco más de tiempo para definir el menú de navidad, mientras tanto disfruto este delicioso Pandoro.
La receta es de las famosas hermanas Simili, muy conocidas aquí en Italia. Espero que lo disfruten tanto como yo!

Levadura
Ingredientes:
Levadura fresca – 15 gr
Agua tibia – 60 gr
Harina de fuerza – 50 gr
Azúcar – 1 cucharada
Huevos – 1 yema

Preparación:
Fundir la levadura en el agua tibia, agregar el azúcar, la yema y la harina y batir hasta que resulte bien mezclado y liso. Cubri y dejar efrmentar hasta que dobre el volumen por 1 hora.


Primera Masa
Ingredientes:
Harina de fuerza – 200 gr
Levadura fresca – 3 gr
Azúcar – 25 gr
Mantequilla – 30 gr a temperatura ambiente
Agua – 2 cucharadas
Huevos - 1

Preparación:
Mezclar los 3 gr de levdura con las 2 cucharadas de agua. Agregarlo a la levadura preparada anteriormente y continuamos agregando el azúcar, la harina y el huevo, mezclar bien y luego agregar la mantequilla, mezclar hasta que quede homogéneo. Cubrir y dejar fermentar hasta que doble el volumen, por unos 45 minutos en un lugar tibio.

Segunda Masa
Ingredientes:
Harina de Fuerza – 200 gr
Azúcar – 100 gr
Huevos – 2
Sal – 1 cucharadita
Vainilla – las semillas de un palito

Mantequilla – 140 gr a temperatura ambiente cortada en trocitos

Preparación:
Unir a la primera masa los huevos, el azúcar, la harina, la sal y las semillas de la vainilla. Mezclar hasta que todo quede homogeno (yo usé el gancho para amasar por unos 5 minutos). Aplastar la masa y doblarla, luego la ponemos en un bowl engrasado con mantequilla, cubrir y dejar fermentar por 1 hora y 30 minutos hasta que doble el volumen.
Pasada la hora y media, ponemos el bowl con la masa en el refrigerados por unos 40 minutos.
Finalmente la sacamos del refrigerador y con un uslero la tiramos con forma cuadrada. Poner en el centro de la masa la mantequilla y cerrar las esquinas llevándolas al centro, aplanar con el uslero a forma rectangular y doblar en 3. Cubrir y dejar reposar en el refrigerador por 20 minutos. Repetir el mismo procedimiento por 3 veces. Finalmente, pasados los 20 minutos del último reposo, la sacamos del refrigerados y con las manos enmanmtequilladas la rodamos como una bola juntando los bordes. Poner la masa (la parte lista en el fondo y donde quedan las marcas de los bordes hacia arriba) en un molde de Pandoro (para entendernos a forma de estrella, yo usé un molde de 1 litro) bien enmantequillado , cubrir y dejar reposar en un lugar tibio, yo lo dejé en el horno cerrado, y desde este momento no queda nada más que esperar, esperar y esperar...yo esperé casi 10 horas! Como dicen las hermanas Simili, es importante que la masa salga de los bordes del molde.
Cuando ésto suceda, calentamos el horno a 170°C y llevamos nuestro Pandoro por 15 minutos, luego bajar la temperatura a 160°C y continuar a hornear por 10 minutos más, hacer la prueba del palito y sacar. Apenas esté frio desmoldamos y cubrimos con azúcar flor (impalpable).

Torta Cebra


Ayyyy por fin que ha llegado el fin de semana y en verdad es que ya estaba haciendo la cuenta regresiva, estoy casi siempre llena de cosas y ando un poco mal genio! Pero ya me meto en el cocina y logro distraerme...mi bebita se hace sentir cada vez más, patea fuertemente y a veces me toma de improviso que quedo doblada! Por suerte el resultado de la glucosa salió perfecto, y aunque luego de tan dulce examen (de hecho te hacen beber 75 gr de glucosa pura concentrada y te sacan sangre 3 veces) me haya prometido, nada de dulces por al menos un par de semanas, pues al parecer mi cuerpo logra metabolizar el dulce rapidamente porque ya al siguiente dia estaba con ganas de cosas dulces! por lo que con resultados OK puedo aun concederme algunos dulcecillos!

Hoy ya tengo un dulce premio en el horno que se está cocinando pero será para un próximo post, por hoy les dejo esta torta liviana, porque usa el aceite en vez de la mantequilla, y queda con unos colores preciosos, que he prepardo para merienda y el desayuno, encontré varias versiones muy similes asi que es simple encontrarla en la red. Espero que les guste.

Ingredientes:
Harina – 300 gr
Huevos – 4
Aceite – 250 ml
Azúcar – 250 gr
Leche – 250 ml
Polvos de hornear – 1 cucharada
Cacao – 2 cucharadas

Preparación:
Batir los huevos con el azúcar hasta que quede cremoso. Agregar el aceite y la leche y suceviamente la harina cernida con los polovos de hornear.
Dividir la mezcla en dos partes iguales y a una le agregamos el cacao y mezclamos bien.
Aceitar un molde de torta de unos 22 cm y con un cucharón alternamos las mezclas, comenzando con la mezcla clara y luego con la de cacao, y asi sucesivamente hasta terminar.
Llevar al horno precalentado a 180°C por unos 35 – 40 minutos.

Feliz Cumple a Mi!! Torta de Amapolas y Limón Happy Birthday to me! Lemon and Poppy seeds Cake


Indiscutiblemente el tiempo pasa y aunque si quisiéramos pararlo algunas veces los cumples llegan y con ellos los años..de todas maneras es siempre una excusa para celebrar y comer cosas ricas, por lo que son bienvenidos, aunque a veces los años empiezan a pesar, pero bueno como decia sabiamente Babbo “tienes que dar la vida a los años y no los años a la vida” . Les traigo esta deliciosa torta que preparé en ocasión de mi cumple. No alcancé a sacar la foto del interno, dado que no quedaron ni las migas.
Aqui dejo la receta! Un besote a todos y que tengan una linda semana!

Para 8-10 personas (para un molde de torta de 20 cms de diàmetro)
Ingredientes:
Para el bizcocho
Mantequilla - 150 gr a temperatura ambiente
Azúcar - 100 gr
Huevos - 3 batidos
Harina - 100 gr
Polvos de hornear - 1 cucharadita
Semillas de Amapolas – 50 gr

Para la baña del bizocho
Azúcar – 100 gr
Agua – 75 ml
Jugo de limón – de 1

Para la Cobertura y Relleno
Queso crema – 250 g
Mantequilla sin sal – 200 g
Azúcar flor (en polvo) – 600 g
Jugo de limón - 1 cucharada

Frambuesas para decorar y semillas de amapolas

Preparación:

Preparar el molde de la torta engrasàndolo con mantequilla y cubriendo levemente con harina los bordes. Con papel de horno (papel mantequilla) cortar un cìrculo del diametro del molde y ponerlo dentro de èste.
En un bowl, con un batidor eléctrico o como prefieran, batir la mantequilla hasta que sea una crema. Agregar el azúcar y batir hasta que la mezcla estè clara y muy cremosa. Agregar de a poco los huevos batidos y batir. Cernir la harina y los polvos de hornear, agregar las semillas de amapolas y mezclar bien.
Poner la mezcla en el molde ya enmantequillado y con el papel mantequilla en el fondo. Llevar al horno por unos 25-30 minutos o hasta que estè cocinada (recuerden de controlar introduciendo el molda dientes en el centro de la torta).
Sacar del horno y dejar reposar por unos 10 minutos. Cuidadosamente desmoldar la torta y transferirla en una rejilla.
Mientras tanto preparar la baña. Calentar el agua con el azúcar y el limón revolviendo hasta que se disuelva todo.
Cortar la torta horizontalmente en tres partes y bañarla con el jarabe de azúcar y el limón. Dejar enfriar.
Preparar el relleno, batiendo la mantequilla con el queso crema y sucesivamente el azúcar flor (en polvo) con el jugo de limón. Cuando la torta esté completamente fria se puede proceder con el relleno y la cobertura.
Finalmente decorar con frambuesas y semillas de amapolas.

For 8-10 people (for a cake pan 20 cm diameter)

Ingredients:

For the cake
Butter - 150 g at room temperature
Sugar - 100 g
Eggs - 3 beaten
Flour - 100 g
Baking powder - 1 tsp
Poppy seeds - 50 g

For the filling and icing
225g cream cheese
200g unsalted butter
600g icing sugar

Lemon Syrup
Sugar – 100 g
Water – 75 ml
Lemon Juice - from 1 lemon

Directions:

Prepare cake pan, line and grease with butter and cover the edges lightly with flour.
In a bowl, with electric mixer, beat the butter until it is creamy. Add sugar and beat until mixture is clear and very smooth. Add a bit of beaten eggs and beat. Sift flour and baking powder, add the poppy seeds and mix well.
Put the mixture into the buttered cake pan and the parchment paper in the background. Bake for 25-30 minutes or until cooked (remember entering the mold control teeth in the center of the cake).
Remove from oven and let stand for 10 minutes. Carefully unmold the cake and transfer it into a grid.
Meanwhile prepare the syrup. Heat water with sugar and lemon, stirring to dissolve it, bring to the boil.
Slice cake horizontally into three parts and brush the cake with the syrup. Allow to cool.
Prepare the filling by beating the butter with cream cheese and powdered sugar with the lemon juice.
Once cake is completely cool you can proceed with the filling and icing.
Finally garnish with raspberries and poppy seeds.

Fudge de Chocolate Blanco y con mi blog como nuevo! - White Chocolate Fudge



Pues si han leído bien, yo también me enamoré de las hermosas platillas de Blo que con su Capuccino Factory está causando furor, asi como dirían en ese programa de televisión que creo que veía en MTV en el cual modernizaban los automóviles dije: Blo, Enchúlame mi Blog! Bueno en este caso es más apropriado “Embellece mi Blog!!” Ahahahahha, es que ya pronto estaré de cumple blog, asi que decidí dar una cara nueva a mi blog y espero que les guste tanto como a mí :-)
Qué decir, agradezco tanto a Blo por su paciencia, profesionalidad y eficencia, pues que esta chica no para, ya en poquísimos dias tenía ya yo mi plantilla lista, asi que nuevamente Blocita, te agradezco por tu lindo trabajo!! Para los que aún no han visitado el sitio de su Capuccino Factory invito a todos a verlo, no se arrepentirán!
Pues bien, hoy les traigo una deliciosa y golosa receta.
Debo confesar que estas últimas semanas han sido tan ajetreadas que para consolarme me he refugiado en el chocolate…sí, lo admito, soy culpable...pero es que no existe aroma, gusto y textura que me dé la tranquilidad del chocolate...sé que hay muchos que ni siquiera comen el chocolate por intolerancia, por gusto, etc, muchas veces pido a la naturaleza de ser una de ellas, pero nada...mis ojos siempre caen ante un pequeño bombón y al final pierdo siempre.

Hace tiempo que quería preparar un fudge pero nunca me había aventurado y aprovechando el concurso de Carrot Cake, me animé a preparalos.
A continuación les dejo una pequeña reseña de los orígenes del fudge, cortesía de Wikipedia.
El dulce de azúcar (fudge) fue inventado en los Estados Unidos. El origen exacto no está claro, pero existe una receta de Emelyn B. Hartridge, de Vassar College, que data de 1886. Se cree que el primer dulce de azúcar fue el resultado de un lote de caramelo arruinado hecho el 14 de febrero de 1886, y de ahí el nombre que se le ha dado a este dulce en Estados Unidos (en inglés al dulce de azúcar se le llama fudge, palabra que significa « arruinar »).
Les dejo esta golosa receta de R. Allen y con ella contribuyo al maravilloso concurso organizado por Carrot Cake “United Sweet of America”.

Ingredientes:
Leche condesada – 1 tarro
Mantequilla – 100 gr
Azúcar – 400 gr
Chocolate blanco – 75 gr
Aceite vegetal

Preparación:
Poner en una olla a fuego medio, la leche condesada, la mantequilla y el azúcar. Revolver hasta que empece a hervir, continuando a revolver y luego dejamos a fuego suave por unos 15 minutos sin dejar de revolver. Si tienen un termómetro de azúcar, en el momento en que marque 113°C se saca la olla del fuego.
Retirar la olla del fuego y colóquela en un bowl con agua fría (el agua debe cubrir unos pocos centímetros por los lados de la olla). Revolver la mezcla durante 10 minutos hasta que se enfríe.
Vertir la mitad de la mezcla en un molde cuandrado de 18 a 20 cm. Agregar el chocolate blanco y después agregar el resto de la mezcla. Dejar enfríar a temperatura ambiente y luego llevar al refrigerador y dejar durante la noche.
A la mañana siguiente cortar el fudge en pequeños cuadrados y servir.

Today I bring you a delicious recipe for the sweet tooth kind.

I must confess that during the past few weeks I have been so busy that I have taken craving for comfort in chocolate ... yes, I admit it, I am guilty ... it’s just that there is no aroma, taste and texture that gives me peace of as chocolate does ... I know there are so many out there who do not even eat chocolate for intolerance, taste choice, etc. Many times I asked the nature to be one of them, but nothing ... my eyes always fall to a small chocolate and as usual I just need to render myself.

I have wanted to prepare a fudge like forever but I had never ventured and since I found the contest of the Carrot Cake Blog, I decided to prepare them.
First, I would like to leave a little review of the origins of fudge, courtesy of Wikipedia.
Fudge was invented in the United States. The exact origin is unclear, but there is a recipe by Emelyn B. Hartridge, of Vassar College, which dates from 1886. It is believed that the first fudge was the result of a lot of candy messed up on 14 February 1886, hence the name that has be given to this candy in the United States.

Here I leave this amazing recipe from one of my books of R. Allen and I contribute to the wonderful contest organized by Carrot Cake "Sweet of America United".

Ingredients:
Condensed milk - 1 jar
Butter - 100 g
Sugar - 400 g
White Chocolate - 75 g chopped
Vegetable oil

Directions:
Place in a saucepan over medium heat the condensed milk, butter and sugar. Stir and bring to the boil, continue stirring and then reduce heat to low and simmer for 15 minutes, stirring constantly.
Remove the pan from the heat and place it in a bowl of cold water (water comes a few centimetres up the sides of the pan). Stir the mixture for 10 minutes until it cools down.
Pour the half the mixture into a 18-20 cm square tin. Add the white chocolate and then add pour over the rest of the mixture. Allow to cool at room temperature and then place it in the refrigerator overnight.
The next morning cut the fudge into little squares and serve.

Torta de Almendra a la Naranja – Almond Orange Cake


En estos días de lluvia, que mejor que disfrutar de una torta al calor de un té. Encontré esta receta entre las miles de la gran Martha, buscaba una receta sin mantequilla ni leche, dado que mi suegro debe mantener una dieta baja de productos lácticos, asi que voilá esta receta era justo lo que buscaba.
Estos días han sido verdaderamente cansadores, asi que una tortita para subir el ánimo es justo lo que se necesita.
Aquí les dejo esta rica y suave receta con la cual contribuyo al recetario de Cinzia “Gli Agrumi” y al Cook Book Challenge semana # 2 “Citrus”.

Ingredientes:
Naranjas – 6 medianas tipo Navel
Harina – 125 gr
Almendras molidas – 170 gr
Polvos de hornear – 1 ½ cucharadita
Sal – una pizca
Huevos – 6
Azúcar – 225 gr

Preparación:
Poner las naranjas enteras sin pelar en una olla profunda y cubrir con agua. Dejar hervir y cocinar por 2 horas. Colar y dejar enfríar.
Cortar las naranjas por la mitad y sacar cualquier semilla que pueda tener. Poner las naranjas en una procesadora de alimentos y procesar hasta que quede puré. Reservar.
En un bowl mezclar las almendras molidas con la harina, los polvos de hornear y la sal. A parte batir los huevos con el azúcar. Agregar el puré de naranja y la mezcla de harina. Mezclar bien.
Vertir la mezcla en un molde de 22 cms de diámetro previamente enmantequillado y enharinado.
Llevar a horno precalentado a 180ºC por 1 hora hasta que la torta resulte dorada.
Dejar enfriar y servir.

During these rainy days there’s nothing better to warm us up than enjoying a cake with a hot tea.
I found this recipe among the thousands of the great Martha. I was looking for a recipe without butter or milk, as my father-in-law should maintain a diet low in dairy products, so voila this recipe was just what I looking for.
These days have been really tiring, so a cake for cheer us up is just what we needed.
Here is this rich, soft recipe with which I contribute to Cinzia’s contest "Gli Agrumi" and the Cook Book Challenge Week # 2 "Citrus".

Ingredients:
Oranges - Navel 6 medium
Flour - 125 gm
Ground almonds - 170 gm
Baking powder - 1 ½ teaspoon
Salt - a pinch
Eggs - 6
Sugar - 225 gm

Directions:

Place whole unpeeled oranges in a deep pot and cover with water. Boil and cook for 2 hours. Strain and let cool.
Cut oranges in half and remove any seeds they may have. Place oranges in a food processor and process until pureed. Set aside.
In a bowl mix the ground almonds with the flour, baking powder and salt. Separately beat eggs with sugar. Add in the orange puree and flour mixture. Mix well.
Pour the mixture into a greased and floured 22 cm diameter pan.
Place in preheated oven at 180 º C for 1 hour until the cake is golden.
Let it cool and serve.

Galletitas de Lima - Lime Meltaways


Finalmente ha llegado el fin de semana! Esta semana ha sido bastante agitada, ya sabeís por via de suegro...lamentablemente hoy nos han confirmado la presencia de un tumor, en el esófago...ahora esperamos resultados de la biopsia para ver como combatir esta situación con el mejor de los resultados.
No les niego que ha sido difícil tratar de dar tranquilidad a mi marido, pero bueno aquí estamos todavía y enfrentaremos este periodo todos juntos. Les agradezco a todos por vuestras lindas palabras de conforto y apoyo, de verdad son muy apreciadas, de corazón se los agradezo!
Mañana tengo intenciones de ir a visitar a mi suegro en el hospital, y para levantarle un poco el ánimo tengo pensado de llevarle unas galletitas de lima, aprovechando che Cinzia ha lanzado su primer concurso de cítricos.
La receta que les traigo es de la fantástica Martha Stewart, son unas deliciosas galletas “Lime meltaway”, son maravillosas, lo recomiendo, basta solo una taza de té y ya tienen una fantástica merienda. Con esta receta doy mi aporte al concurso de Cinzia “Gli Agrumi”.

Ingredientes:
Mantequilla – 170 gr a temperatura ambiente
Azúcar en polvo (flor) – 45 gr + 80 gr
Lima (limón de pica) – ralladura de 2 limas y 1 cucharada de jugo
Vainilla – 1 cucharada de extracto
Harina – 280 gr
Maizena – 2 cucharadas
Sal – una pizca

Preparación:
En un bowl batir la mantequilla con 45 gr de azúcar en polvo hasta que se vuelva pálida y espumosa. Agregar la ralladura, el jugo y el extracto de vainilla. Mezclar.
Separadamente mezclamos la harina con la maizena y la sal. Luego agregamos a la mezcla de mantequilla y mezclamos.
Dividir la masa en dos. En papel de horno envolvemos una mitad de la masa formando un rollo de unos 3 cms de diámetro. Y hacemos lo mismo con el resto de la masa. Llevamos nuestros rollos al refrigerador por al menos 1 hora (yo lo puse en el congelador por 30 minutos) para que tome consistencia. Cuando la masa esté fria y dura, la cortamos con un cuchillo en redondelas de medio centímetro.
Distribuir las galletitas en una bandeja de horno cubierta con papel, dejando espacio entre ellas. Llevar al horno precalentado a 180°C y hornear por 12 minutos.
Dejar enfríar por 8 minutos y mientras están aún calentitas las ponemos en una bolsa con el resto del azúcar en polvo. Agitamos (con cuidado) para esparcir el azúcar y listo!

The recipe that I ‘m posting today is from the great Martha Stewart, these are delicious cookies "Lime meltaway" are wonderful, I recommend it, you will only need a cup of tea and you are set!. With this recipe I give my contribution to Cinzia’s contest "Gli Agrumi".

Ingredients:
Butter - 170 g at room temperature
Powdered sugar - 45 g + 80 g
Lime - 2 lime zest and 1 tablespoon of juice
Vanilla - 1 teaspoon of extract
Flour - 280 g
Cornstarch - 2 tablespoons
Salt - a pinch

Directions:
In a bowl beat butter with 45 grams of powdered sugar until pale and fluffy. Add the zest, juice and vanilla extract. Mix.
Separately mix the flour with cornstarch and salt. Then add to the butter mixture and mix.
Divide dough in half. Wrap in parchment paper one half of dough into a roll about 3 cm of diameter. Do the same with the remaining dough. Place the rolls in the refrigerator for at least 1 hour (I put them in the freezer for 30 minutes) so they get consistent. When the dough is cold and firm, with a knife cut it in round of half cm.
Distribute the cookies on a baking tray covered with parchment paper, leaving space between them. Bake in preheated oven at 180 ° C and for 12 minutes.
Let cool for 8 minutes and while still warm put them in a bag with the remaining powdered sugar. Shake (gently) to cover the cookies with the sugar and voila!

Torta Mocaccino – Mokaccino Cake


Ésta es una especie de cheesecake, que he visto en una transmisión inglesa de R. Allen. Apenas la vi, la quise probar. El resultado fue genial, una torta muy suave que mezcla el chocolate con el café, una combinación de éxito asegurado!
La verdad es que para mí la cheesecake debe ser con el verdadero queso crema por lo que no arriesgo a llamarla una cheesecake, pero la consistencia es parecida, y lo más importante es que es DELICIOSA!
Aquí les dejo la receta.

Ingredientes:

Para la base
Galletas digestive – 375 gr
Mantequilla – 75 gr derretida
Crema – 2 cucharadas

Chocolate amargo – 100 gr
Queso Mascarpone – 500 gr
Azúcar – 125 gr
Huevos – 3
Café – 125 ml

Preparación:
Comenzar con la base. Moler las galletas y agregar la mantequilla derretida con la crema. Disponer la mezcla en un molde de torta de unos 24 cms de diámetro. Refrigerar por al menos 10 minutos.

Derretir el chocolate a baño maría. Mientras tanto mezclar el mascarpone con el azúcar. Batir con un tenedor los huevos a parte y agregarlos de a poco al mascarpone, mezclar.
Cuando el chocolate esté derretido, agregar el café y mezclar. Agregar la mezcla de chocolate y café al mascarpone y mezclar bien-
Poner la mezcla en el molde de torta sobre la base de galletas.
Llevar al horno precalentado a 170ºC por unos 50 minutos.
Dejar enfríar y decorar con cacao.

This is a kind of cheesecake that I watched in an English programme of R. Allen. As soon as I saw it I wanted to try it. The result was great, a very soft cake mixing chocolate with coffee, a combination that guarantee the success!
The truth is that for me the cheesecake should be with real cream cheese so I wouldn’t venture to call it a cheesecake, but consistency is similar, and most importantly is that it's DELICIOUS!
Here is the recipe.

Ingredients:
For the base
Digestive biscuits - 375 g
Butter - melted 75 g
Cream - 2 tbsp

For the topping
Dark chocolate - 100 g
Mascarpone cheese - 500 g
Sugar - 125 g
Eggs - 3
Coffee - 125 ml

Directions:

Start with the base. Process cookies until fine and add melted butter and the cream. Place the biscuits in a spring form about 24 cm in diameter. Refrigerate for at least 10 minutes.

Melt chocolate in double boiler over simmering water. Meanwhile mix the mascarpone cheese with the sugar. Beat eggs with a fork and pour them into mascarpone mixture, incorporate well.
When the chocolate is melted, add the coffee and mix. Add chocolate mixture and coffee to the mascarpone and mix well
Pour batter into the spring form.
Bake in preheated oven at 170 ° C for about 50 minutes.
Allow to cool and dust some cocoa.

Torta de Duraznos - Peach Cake


Ésta es una de esas recetas que te sorprenden con el resultado. Honestamente cuando la estaba preprando no tenia grandes expectativas sobre el resultado, pero cuando finalmente la probé, me enamoré...una torta deliciosa, suave, dulce y los duraznos formaban una especie de crema.
La recomiendo 100%!
Aquí les dejo la receta, vamos que la semana ya casi termina!

Ingredientes:
Harina – 375 gr
Huevos – 6 (3 enteros + 3 yemas)
Mantequilla – 250 gr
Azúcar – 250 gr
Leche – 1 ½ cucharadita
Extracto de Vainilla – 1 cucharadita
Limón – Ralladura de 1

Duraznos – Yo usé 4
Fécula de Papa – 1 cucharada
Azúcar – 65 gr
Limón – Jugo de 1

Preparación:
Batir la mantequilla con el azúcar por al menos 3 minutos. A parte mezclar los huevos con las yemas, la vainilla, la ralladura de limón y la leche. Agregar esta mezcla a la mantequilla y batir.
Con una espátula agregar la harina cernida.

Preparar los duraznos. Pelarlos y sacar el cuesco. Cortarlos en rodajas y poner en un bowl. Agregar el jugo de limón con la fécula de patata y el azúcar. Mezclar.

Enmantequillar un molde de torta y espolverar un poco de azúcar en el fondo. Distribuir los duraznos en el fondo y sobre éstos versamos la mezcla de la torta.
Llevar a horno precalentado a 180ºC por 35 minutos.

This is one of those recipes that surprise you with its results. Honestly when I was preparing it I didn’t have any great expectation of the outcome, but when I finally tasted it, I fell in love ... a delicious cake, soft, sweet and peaches were kind of creamy.
I recommend it 100%!
Here is the recipe. Fortunately the week is almost over!

Ingredients:

Flour - 375 g
Eggs - 6 (3 whole eggs + 3 egg yolks)
Butter - 250 g
Sugar - 250 g
Milk - 1 ½ teaspoon
Vanilla extract - 1 tsp
Lemon - Zest of 1

Peaches - I used 4
Potato starch - 1 tablespoon
Sugar - 65 g
Lemon - juice of 1

Directions:
Beat butter and sugar for at least 3 minutes. Mix apart the eggs, the yolks, vanilla, lemon zest and milk. Add this mixture to the butter and mix.
With a spatula add the flour.

Prepare peaches. Peel and remove the pit. Cut into slices and put them in a bowl. Add the lemon juice, potato starch and sugar. Mix.

Butter a cake pan and sprinkle a little sugar. Distribute the peaches on the bottom of the pan and then pour the cake mixture.
Place the cake in a preheated oven at 180 º C for 35 minutes.

Brigadeiro


Me ha siempre gustado el Brasil...su gente, sus paisajes, su comida, sus playas, su música y la alegría a flor de piel de su pueblo. He siempre tenido un gran respeto y afecto por esta tierra, sintiéndola casi como si fuera parte mía. Nosé si pasa solo a mi, pero es como si sintiera de tener una segunda patria...Adoro mi país y también Italia, pero Brasil me ha siempre cautivado...He visitado varias veces este hermoso país, del cual conservo sólo hermosos recuerdos y siento una “saudade” que me hace querer volver a la primera oportunidad.
Los caminos de la vida me han llevado a construir una larga y linda amistad en ese país, una de esas amistades que duran y sobreviven a pesar del tiempo, la distancia y la falta...Conocí a mi magnifica amiga brasileña hace ya 12 años, a lo largo de los cuales hemos testimoniado y seguido la vida del otra, diplomas, universidad, trabajos, matrimonios y recientemente me ha hecho tia.
Mi querida amiga hace un tiempo me mandó esta deliciosa receta de estos dulces típicos que se preparar especialmente para las fiestas y celebraciones, sobre todo para los más pequeños. Es muy fácil y rápida de preparar y el resultado es fantástico.
Aquí les dejo esta receta llena de nostalgia por esta tierra.

Ingredientes:
Leche condesada – 1 lata
Margarina o Mantequilla sin sal – 2 cucharadas
Cacao en polvo – 4 cucharadas
Chocolate granulado para decorar


Preparación:
En una olla ponemos a fundir la leche condesada, con la margarina o mantequilla y el cacao.
Cocinar a fuego medio y mezclar con una cuchara de palo. Cocinar hasta que la mezcle se empice a desprender de la olla. Cuando veamos que pasandola cuchara de palo en el fondo de la olla, la mezcla de separa.
Dejar enfríar. Untarse las manos con mantequilla y hacer las bolitas cubriéndolas con el chocolate.
Dejar reposar un poco en el refrigerador, en modo que tomen consistencia.

Ingredients:
Condensed milk - 1 can
Unsalted margarine or butter - 2 tablespoons
Cocoa powder - 4 tbsp
Granulated chocolate to decorate

Directions:

Cook over medium heat and stir with a wooden spoon. Cook until the mixture starts to detach from the pot. When we see that passing our wooden spoon at the bottom of the pot, the mixture separates, then it’s ready.

Galletas crujientes de Chocolate (Crunchy chocolate biscuits)


Aprovechando estos dias lluviosos desde esta parte del mundo, buscaba una excusa para encender el horno y comenzar a disfrutar las horas de té durante las tardes lluviosas con un delicioso dulce.
Esta vez, decidí de probar esta receta, la cual encontré en el sitio tastefood.
La consistencia de las galletas es deliciosa, muy chocolatosa e ideal para acompañar una taza de leche o de té. Y genial para comenzar esta semana.

Aprovecho de ponerme al día con el Cookbook challenge e includo estas galletas como receta de la semana 43.

Aquí les dejo la receta.


Ingredientes:

Chocolate amargo – 400 gr + 200 gr en trozos para decorar
Azúcar – 340 gr
Mantequilla – 55 gr
Harina – 60 gr
Huevos – 4
Polvos de hornear – 1 tsp
Extracto de vainilla – 2 tsp
Sal – ½ tsp

Preparación:
Derretir a baño maría 400 gr de chocolate con la mantequilla. Retirar del fuego. Batir el azúcar con los huevos hasta obtener una mezcla cremosa. Agregar el chocolate derretido con la mantequilla. Mezclar. Agregar el extracto de vainilla. Mezclar bien.
Cernir en un bowl la harina, con la sal y los polvos de hornear. Agregarla a la mezcla de chocolate,mantequilla, azúcar y huevos. Mezclar delicadamente y agregar los trozos de chocolate. Poner en el refrigerador por al menos 30 minutos. Mientras tanto encender el horno a 180ºC.
Cubrir una bandeja con papel mantequilla. Distrubuir la masa sobre la bandeja con una cuchara.
Llevar al horno por unos 20 minutos.

Line a baking tray with parchment paper. Drop the batter on the tray with a spoon.
Bake for about 20 minutes.

Pie de Manzanas (Apple Pie)


Desde hace tiempo que tenía ganas de preparar una tarta de manzanas, sólo que con tantas recetas por probar no había encontrado la ocasión, hasta que me inscribí en el CookBook challenge, un contest que encontré gracias a otra foodblogger, Sally in the Galley.
Es bastante entretenido, cada semana hay un tema, y queda a tu creatividad preparar algo con el ingrediente o con el tema propuesto. El tema para esta semana son las manzanas, por lo que decidí que era el momento de aventurarme en la tarta de manzanas.
Aproveché que estábamos invitados a un rico asado a casa de unos amigos, por lo que llevé como postre esta torta.
Quedé bastante satisfecha con el resultado, la masa es bastante buena y livianita. Y las manzanas, quedan deliciosas! En fin, lo recomiendo 100%. Espero que les guste.

Aquí les dejo la receta de este Apple Pie de Leila Lindholm.

Ingredientes:
Para la masa:
Mantequilla – 150 g (fría y cortada en cubitos)
Harina – 240 g
Azúcar en polvo – 30 g
Huevos – 1
Agua fría – ½ cucharada

Para el relleno:
Manzanas – 8 grandes (verdes)
Limón – 1 (el jugo)
Mantequilla – 50 g
Azúcar – 4 cucharadas
Canela – 2 cucharaditas (molida)
Jengibre – 1 cucharadita (molido)

Para pincelar:
Huevos – 1
Leche – 1 cucharada
Azúcar de caña

Preparación:
Para la masa, ponemos en un bowl la mantequilla, con la harina y el azúcar. Mezclar con la punta de los dedos hasta obtener migas. Agregar el huevo y el agua y trabajar la masa para mezclar bien los ingredientes, sin amasar.
Poner la masa en papel transparente de cocina y llevar al refrigerador por al menos 30 minutos.

Prepara el relleno. Pelar y sacar el cuesco a las manzanas, luego las cortamos en rebanadas. Las ponemos en un bowl y le agregamos el jugo de limón.
En un sartén ponemos a derretir la mantequilla, agregamos el azúcar, la canela y el jengibre, finalmente agregamos las manzanas y las cocinamos. Deben quedar blanditas y doradas. Apenas estén listas, las ponemos en un plato para que se enfríen.

Sacar la masa del refrigerador, la ponemos en una superficie enharinada (sin exagerar con la harina) y con un uslero la estiramos. Sacamos la masa para la base de una tortiera de 22 cms de diámetro y otra más pequeña que nos servirá para cubrir la tarta. Ponemos la masa en la tortiera dejando que cuelguen los bordes. Agregamos las manzanas y ponemos la masa más pequeña sobre éstas.
Pincelar los bordes y pegarlos a la masa de la superficie.
Con un tenedor realizamos perforaciones sobre la masa y finalmente pincelamos la superficie con la mezcla de huevo y leche y agregamos el azúcar de caña.
Llevar al horno (en la parte más baja) a 180ºC por unos 40 minutos, hasta que la superficie resulte dorada.
Servir frío. Se puede decorar también con un poco de azúcar en polvo.

For a long time I’ve been craving for an apple pie, but with so many recipes to try, I never found the right moment, until I joined The Cookbook Challenge, I read about it from another food blogger, Sally in the Galley.
It's pretty fun, there is a challenge every week with a theme (a broad one), and it’s up to your own creativity to make something with the ingredient or the theme proposed.
The theme for this week are the apples, so I decided it was time to experience the apple pie.
Since we were invited to our friend’s house for a barbecue, I decided to bring the pie as dessert.
I was quite satisfied with the result, the pastry is quite good and very soft.
And the apples were delicious! I highly recommend it. I Hope you like it.

Here 's the recipe for this Apple Pie of Leila Lindholm.

Ingredients:

For the shortcrust pastry:
Butter - 150 g (cold and diced)
Flour - 240 g
Powdered sugar - 30 g
Eggs - 1
Cold water - ½ tbsp

For the filling:
Apples - 8 large (golden)
Lemon - 1 (the juice)
Butter - 50 g
Sugar - 4 tbsp
Cinnamon - 2 tsp (ground)
Ginger - 1 tsp (ground)

To brush:
Eggs - 1
Milk - 1 tbsp
Brown sugar

Directions:
Start preparing the pastry. Put the butter into a bowl with the flour and sugar. Mix with your fingertips until you get the crumbs. Add the egg and water and mix the ingredients without kneading (always with your fingertips).
Roll the dough in a cling film and place it in the refrigerator for at least 30 minutes.

Prepare the filling. Peel and remove the core from the apples, then cut into slices. Put the apples into a bowl and add the lemon juice.
In a frying pan melt the butter, add sugar, cinnamon and ginger, finally add the apples and cook. Apples should be soft and golden. When ready, put them on a plate to cool.

Remove the pastry from the refrigerator, put it on a slightly floured surface and roll it with a roll pin.
From the pastry get the base for a cake pan of 22 cm in diameter and a smaller one to cover the cake. Place the pastry in the cake pan letting the edge hang. Add the apples and cover them with the smaller pastry piece.
Brush the edge with the egg and the milk and stick the edge to the pastry on the surface.
With a fork make holes on the pastry and brush the surface with the egg mixture.
Finally add some brown sugar on the surface.
Place the pie in the lowest part of the oven at 180 º C for 40 minutes, until golden.
Serve cold. You can decorate it with a little powdered sugar.

Brownies


Ayyy es que soy una chocolatera!! No puedo resistir a los dulces o postres con el afrodisiaco chocolate...me repito siempre que me lo merito y que es un modo de premiarme, la mayoria de la veces logro convencerme para gustarme un buen brownie lleno de chocolate sin cargos de conciencia.
Preparé esta receta para celebrar el día del santo de mi maridito, es ideal si le agregan un bolita de helado!
Aquí les dejo la receta.

Para 10 -12 trozos
Ingredientes:
Harina – 120 gr
Chocolate amargo – 180 gr
Mantequilla – 180 gr
Huevos – 3
Azúcar – 250 gr

Preparación:
Derretir el chocolate con la mantequilla a baño maria, revolviendo constantemente.
Mientras tanto, batir los huevos con el azúcar, y sucesivamente agregamos el chocolate con la mantequilla derretida, mezclar bien, en modo que se una uniformemente, y finalmente agregamos la harina, continuamos a batir hasta que esté bien mezclada.
Enmantequillar un molde cuadrado o circular, yo usé un molde para torta de 22 cms de diámetro. Poner la mezcla en el molde y llevar al horno precalentado a 170ºC por 45 minutos.

Dejar enfríar y cortar en trocitos. Servir con azúcar flor (azúcar en polvo).

I know, I’m a chocaholic… I just can not resist any sweet or dessert with the aphrodisiac chocolate... I always repeat to myself that I merit it and that is a way to award myself, most of the time I handle to convince myself to eat a delicious chocolate without any remorse...
I prepared this recipe to celebrate the name day of my hubby. This is a great dessert if you add a ball of ice cream!
Here is the recipe.

For 10 -12 pieces
Ingredients:
Flour - 120 g
Dark Chocolate - 180 g
Butter - 180 g
Eggs - 3
Sugar - 250 g

Directions:
Melt chocolate with butter in double boiler over simmering water, stirring constantly.
Meanwhile, beat eggs with sugar, then add the melted chocolate with the butter, mix well and finally add the flour, continue to beat until well blended.
Butter a square or cake tin, I used a cake tin of 22 cm of diameter. Pour batter into the tin and place it in the oven preheated at 170 º C for 45 minutes.

Let it cool and cut into squares. Dust some powdered sugar over the brownies.

Torta de Chocolate y Crema de Vainilla (Chocolate and Vanilla cream Cake)


El chocolate forma parte esencial de mi vida...cuando estoy contenta o triste, con frio o calor, siempre hay un pedacito esperándome. Creo que sea uno de los modos en que me regaloneo...lo encuentro muy confortante y no pierdo oportunidad para preparar algún dulce o postre con este magnífico ingrediente.
Ésta es una torta de aquellas que te alegran el dia aún si lo has pasado fatal, ideal para este época mientras tantos se gozan las vacaciones y a otros nos queda de disfrutar en casa. Encontré esta receta en mi libro de chocolate, y me puse enseguida manos a la obra.
Aquí les dejo esta golosa receta!

Ingredientes:
Para la base:
Chocolate Amargo – 50 gr
Mantequilla – 70 gr a temperatura ambiente
Huevos – 2
Azúcar – 60 gr
Harina – 40 gr

Para la Crema:
Leche – 125 gr
Vainilla – 1 palito
Crema Líquida – 125 gr
Huevos – 3 yemas
Azúcar – 40 gr

Para el Mousse:
Chocolate leche – 200 gr
Huevos -3 yemas
Azúcar – 40 gr
Gelatina en hojas – 4 gr
Crema líquida – 150 gr

Preparación:

Derretir el chocolate a baño maría con la mantequilla. A parte mezclamos los huevos con el azúcar y la harina tamizada. Agregamos el chocolate derretido y mezclamos. Poner la mezcla en un molde de torta de unos 20 cms de diámetro, previamente enmantequillado y cubierto con papel de horno.
Llevar al horno a unos 180ºC por unos 10 minutos.

Para la crema, en una olla hervir la leche con el palito de vainilla. Luego lo sacamos y agregamos la crema líquida. Cocer a fuego lento y retirar. Mezclar las yemas (sin batir) con el azúcar y agregar la mezcla de leche y crema. Filtar todo con un colador y versar la mezcla en un molde de unos 18 cms de diámetro, cubierto con papel de horno. Llevar al horno por 1 hora y 20 minutos a unos 90ºC. Cuando esté lista llevarla al refrigerador por unas 4 horas.

Para el mousse, derretir a baño maría el chocolate y dejar entibiar. Mezclar las yemas con el azúcar y agregar el chocolate, llevar de nuevo a baño maría y cocer por unos 4 minutos. Agregar la gelatina previamente ablandada en un poco de agua fria.
Batir la crema y agregar la mezcla de chocolate con cuidado.

Componer la torta. Mantener la base en el molde de torta, agregar la crema de vainilla y finalmente el mousse. Refrigerar por al menos 3 horas.
Decorar con pedacitos de chocolate y servir.

The chocolate is an essential part of my life ... whenever I'm happy or sad, with cold or hot, there is always a piece waiting for me. I think that is one of the ways in which I reward myself ... I find it very comforting and I don’t loose a chance to prepare a sweet or a dessert with this wonderful ingredient.
This is a kind of cake that will brighten up your day even if it have been fatal, ideal for this period while so many people are enjoying the holidays and others, like me, have to enjoy at home.
Here is the recipe!

Ingredients:
For the base of the cake:
Dark Chocolate - 50g
Butter - 70 g at room temperature
Eggs - 2
Sugar - 60g
Flour - 40g

For the Cream:
Milk - 125g
Vanilla - 1 stick
Liquid Cream - 125g
Eggs - 3 egg yolks
Sugar - 40g

For the Mousse:
Milk Chocolate - 200g
Eggs -3 Egg yolks
Sugar - 40g
Gelatine leaves - 4g
Liquid Cream - 150g

Directions:
Melt the chocolate and butter in a saucepan placed over simmering water. Meanwhile beat the eggs with sugar and sifted flour. Add melted chocolate and mix. Pour batter into cake pan of 20 cm of diameter, buttered and laid with baking paper.
Place in the oven at 180 º C for 10 minutes.

For the cream, put in a pot the milk with the vanilla stick and bring to boil. Remove the stick and add the liquid cream. Bring to simmer and remove from heat. Mix the yolks (unbeaten) with sugar and add milk mixture and cream. Filter through a colander and pour the mixture into a mould of 18 cm in diameter, previously laid with baking paper. Bake for 1 hour and 20 minutes at 90 ° C. When ready take it to the refrigerator for about 4 hours.

For the mousse, melt the chocolate in a saucepan placed over simmering water. Beat the egg yolks with sugar and add the chocolate, put it back over the simmering water and cook for about 4 minutes. Add the gelatine (previously softened in cold water).
Whip cream and add the chocolate mixture gently.

Compose the cake. Keep the base in the cake pan, add the vanilla cream gently and then the mousse. Refrigerate for at least 3 hours.
Decorate with chocolate swirls and serve.

Mini Focaccia con Tomatitos Cherry y Albahaca (Mini Focaccia with cherry tomatoes and basil)


Una de las cosas de las cuales me enamoré a mi llegada en Italia fue la variedad de panes, tortas saladas, pizzas, focaccias y rústicos. Antes de venir en Italia no era una fanática del pan, hasta que descubrí las variedad inmensa que ofrece este país, inagotable...y cuando se pasa delante de un “Forno” (una panadería) no se puede resistir.
La focaccia es una de mis preparaciones preferidas, y lo mejor es que deja a tu creatividad su variedad! En esta ocasión las quise preparar en versión pequeñas, ideales para aperitivos y fiestas. Encontré esta receta en uno de mis libros de cocina Pan, dulces y Galletas.

Con esta receta participo al HEMC#46 “Delicias para fiestas”.

Para 10 Focaccias pequeñas

Ingredientes:

Harina tipo 0 – 500 gr
Levadura fresca – 25 gr
Agua tibia – 300 ml
Aceite de oliva – 50 ml + para aceitar la bandeja y rociar la masa
Miel – 2 cucharadas
Sal gruesa – 1 cucharada + para espolverear la bandeja y la masa

Preparación:

En un bowl desmenuzamos la levadura, agregamos el agua, el aceite, la miel y la sal. Mezclamos hasta que la levadura se haya disuelto. Agregamos de a poco la harina y mezclamos bien con las manos.
En una superficie enharida continuamos a trabajar la masa por unos 8 minutos. La ponemos en un bowl y la tapamos con un paño de cocina limpia y dejamos reposar unos 45 minutos hasta que haya doblado su volumen. Mientras tanto aceitamos una bandeja y ponemos un poco de sal gruesa.

Vaciamos la masa en una superficie enharinada y la trabajamos por unos minutos. Dividimos la masa en 10 partes, formamos de las bolitas y las aplastamos con la palma de la mano. Las ponemos en la bandeja previamente aceitada y con la punta de los dedos realizamos de los huecos sobre la masa. Cubrimos con un paño de cocina y dejamos reposar unos 30 minutos. Encender el horno a 220ºC.
Agregamos los tomatitos en los huecos de la masa y la albahaca. Rociamos con aceite las focaccia y llevamos al horno por unos 10 minutos. Servir tibia o fria.

One of the things that I fell in love with upon my arrival in Italy was of the variety of breads, salty cakes, pizzas, focaccia and rustics. Before arriving in Italy I was not a fan of bread, until I discovered the immense variety that this country offers, endless ... and when I pass in front of a "Forno" (a bakery) I just can’t resist to that smell…
The focaccia is one of my favorite preparations, and the best thing is that up your creativity the preparation! For this occasion, I wanted to prepare a small version of focaccia, ideal for snacks and parties. I found this recipe in one of my cookbooks, “bread, sweets and biscuits”.

With this recipe I give my contribution to HEMC # 46 "Delights for parties."

For 10 small Focaccia

Ingredients:

Flour type 0-500g
Fresh yeast - 25g
Warm water - 300 ml
Olive oil - 50 ml + to oil the pan and sprinkle the dough
Honey - 2 tablespoons
Sea salt - 1 tablespoon + to sprinkle the tray and the dough

Directions:
In a bowl, crumble the yeast, add water, oil, honey and salt. Mix until yeast is dissolved. Add slowly the flour and mix well with hands.
In a floured surface continue to knead the dough for about 8 minutes. Put it in a bowl and cover with a clean kitchen towel and let rest about 45 minutes until doubled in size. Meanwhile, oil a tray and add a little salt.

Put the dough on a floured surface and work for a few minutes. Divide dough into 10 parts, shape little balls and crushed them with the palm of the hand. Place them in the tray and with the tips of the fingers make a few holes on the dough. Cover with a dish towel and let rest about 30 minutes. Turn the oven to 220 º C.
Add the tomatoes in the hollows of the dough and basil. Spray with oil and bake the focaccia for about 10 minutes. Serve warm or cold.

Pastel Saint Honoré



Whole kitchen en su Propuesta Dulce para el mes de junio nos invita a preparar todo un clásico de la repostería francesa, el Pastel Saint Honoré.
La propuesta fue todo un desafío para mí, dado que nunca me había aventurado a preparar esta receta. Aproveché de preparla para celebrar el cumpleaños de un amigo de la familia. Debo decir que la torta les gustó a todos y que no quedaron ni las migas.

Aquí les dejo esta golosa receta.

Ingredientes:
Pasta Hojaldre – 1 confección

Pasta Choux
Ingredientes:
Leche – 500ml
Azúcar – 10 gr
Sal – 5 gr
Mantequilla – 250 gr
Harina – 250 gr
Huevos - 10

Glaseado
Huevo – 1 yema
Leche – 1 cucharada
Sal – una pizca

Preparación:
Mezclar la leche, la mantequilla, la sal y el azúcar en una cacerola a fuego lento. Llevar a ebullición y retirar la cacerola. Espolvorear la harina y batir con una cuchara de madera hasta que quede homogénea y sin grumos.
Poner la cacerola a fuego medio y mezclar 1 minuto para secar la masa. Colocarla en un cuenco. Añadir los huevos uno a uno, batiendo con la cuchara de madera.

Una vez añadidos los huevos, la masa deberá estar firme, brillante y con una consistencia elástica. Ya está lista para usar. Si no lo vamos a usar de inmediato, pincelarla con un poco de huevo batido, para que no forme costra.

Crema Pastelera
Ingredientes:
Leche – 500 ml
Harina – 50 gr
Azúcar – 150 gr
Huevos – 6 yemas
Vainilla – 1 palito

Preparación:
Llevar 400 ml de leche a ebullición en una cacerola con el palito de vainilla. Sacar del fuego y dejarla en infusión por unos 15 minutos.
En un cuenco a parte, con una batidora, trabajar las yemas de huevo con el azúcar, añadir la harina cernida y la leche reservada (los 100 ml).
Sacar el palito de vainilla de la leche y añadimos dentro de la cacerola lentamente y mezclando continuamente, la mezcla de huevos. Llevar la mezcla a ebullición y cocer a fuego suave algunos minutos hasta que la mezcla tenga un aspecto denso. Retirar del fuego y dejar enfriar.

Crema Chantilly
Ingredientes:
Crema fresca para batir – 250 ml
Azúcar flor (impalpable) – 50 gr
Esencia de Vainilla – 1 cucharadita

Preparación:
Batir la crema, agregar el azúcar en polvo y la esencia de vainilla.


Caramelo

Ingredientes:
Agua – 50ml
Azúcar – 200 gr

Preparación:
En una olla pequeña de fondo grueso, ponemos el agua y el azúcar y llevamos a ebullición a fuego lento, espumando y limpiando de vez en cuando el borde interior de la olla con un pincel sumergido en agua fría. Cuando la temperatura alcance los 160ºC, baje el fuego y cueza hasta obtener un caramelo de color ámbar claro.

Preparación de la Torta

Extendemos el hojaldre en la superficie de trabajo enharinada y formamos un círculo de 22 cm. de diámetro y 2 mm. de grosor. Enrollarlo en el rodillo sin apretarlo, y desenrollarlo en una bandeja de horno humedecida con agua fría. Pinchamos la base en unos diez lugares con un tenedor y la refrigeramos durante 20 minutos. Precalentamos el horno a 200ºC.

Ahora cogemos nuestra pasta choux e introducimos algo menos de dos tercios de la masa en una manga pastelera con una boquilla lisa de aproximadamente 1 cm y comenzamos a depositar nuestra masa sobre el hojaldre en forma de espiral, desde el centro de la base y trabajando hacia fuera y terminando a 1 cm. del borde de la masa para dejar un margen.

Con un pincel de repostería, doramos los bordes del fondo de la masa con la mezcla de huevo, leche y sal.

Introducimos nuestra preparación en el horno y lo dejamos cocer durante 35 minutos. Una vez cocida la deslizamos sobre una rejilla con la ayuda de una espátula.

Para los buñuelos, introducir el resto de la pasta choux en una manga pastelera con una boquilla lisa de unos 5 mm y formamos unos 17 buñuelos de 2 cm de diámetro encima de una bandeja de horno sobre papel de hornear o una plancha de silicona.

Pincelamos con el glaseado, presionamos la parte de arriba con el dorso de un tenedor y horneamos durante 20 minutos. Pasado el tiempo, los sacamos y los dejamos enfriar sobre una rejilla. Cuando ya estén fríos les hacemos un pequeño agujero en la base de cada buñuelo.
Ahora procederemos a caramelizar cada buñuelo, para ello, pichamos la base del buñuelo con la punta de un cuchillo y bañamos la parte superior con el caramelo, lo sacamos y dejamos reposar en la bandeja.

Una vez que el caramelo se ha enfriado, rellenaremos los buñuelos con la crema pastelera y la crema chantilly a través de una manga pastelera con una boquilla lisade unos 5 mm y lo colocamos alrededor del borde de la corona de pasta choux, fijándolos entre sí con un poco de caramelo caliente.
Cubrimos el fondo de la tarta con una capa de ambas cremas, alternándolas formando tiras.

Reservar la torta en el refrigerador durante 1 hora antes de servir.

Whole Kitchen in its Sweet Proposal for the month of June invite us to prepare a classic French pastry, the Saint Honore Cake.
The proposal was a challenge for me, since I never ventured to prepare this recipe. I prepared the cake to celebrate the birthday of a friend of the family. I can say that everyone enjoyed the cake and there were no leftovers!
Here is the recipe.

Ingredients:
Pastry Paste - a confection

Choux pastry
Ingredients:
Milk – 500 ml
Sugar – 10g
Salt – 5g
Butter – 250g
Flour – 250g
Eggs - 10

Glaze

Eggs - 1 yolk
Milk – 1tbsp
Salt – a pinch

Directions:
Mix milk, butter, salt and sugar in a saucepan over low heat. Bring to boil, remove the pan. Sift in the flour and beat with a wooden spoon until smooth and lump free.
Place the saucepan over medium heat and stir 1 minute to dry the dough. Place in a bowl. Add the eggs one at a time, beating with wooden spoon.

After adding the eggs, the dough should be firm, shiny and with an elastic consistency. Now ready for use. If you are not going to use right away, brush with a little beaten egg.

Crème Patisserie
Ingredients:
Milk - 500 ml
Flour - 50g
Sugar - 150g
Eggs - 6 egg yolks
Vanilla - 1 stick

Directions:
Bring 400 ml of milk to a boil in a saucepan with the vanilla stick. Remove from heat and leave to infuse for about 15 minutes.
In a bowl whisk the egg yolks with sugar, add the sifted flour and the reserved milk (100 ml).
Remove the vanilla stick and add the milk into the pan slowly and continuously mixing the egg mixture. Bring the mixture to a boil and cook over low heat for a few minutes until the mixture has a dense appearance. Remove from heat and allow to cool.

Chantilly Cream
Ingredients:
Fresh cream - 250 ml
Powdered sugar - 50 g
Vanilla essence - 1 tsp

Directions:
Whip the cream, add powdered sugar and vanilla essence.

Caramel
Ingredients:
Water - 50ml
Sugar - 200 g

Directions:
In a saucepan, put water and sugar and bring to simmer, stirring occasionally cleaning the inside the edges of the pan with a brush dipped in cold water. When temperature reaches 160 º C, reduce heat and cook until you get a light amber caramel.

Directions for preparing the Cake

Extend the pastry on floured surface and form a circle of 22 cm of diameter and 2 mm thick. Unroll the pastry it on a baking tray moistened with cold water. Punctured base in about ten places with a fork and refrigerate for 20 minutes. Preheat oven to 200 º C.

Now we take our choux paste and introduced just under two thirds of the dough into a pastry bag with a plain nozzle approximately 1 cm and begin to put our dough over the pastry paste making a circle and leaving 1 cm from the edge as a margin.

With a pastry brush, thoroughly brush the edges of dough with the egg mixture, milk and salt.

Take it to the oven and cook for 35 minutes. Once cooked leave to cool on a rack.

For the profiterole, place the rest of the choux paste in a pastry bag with a plain nozzle about 5 mm and formed about 17 profiterole of 2 cm of diameter and dispose on a baking tray lay with baking paper or a silicone sheet.

Brush with glaze, pressed top with the back of a fork and bake for 20 minutes. Take them out and let cool on a rack. When they are cool we make a small hole in the base of each profiterole.
Now proceed to caramelize each profiterole, for this, coat the top of the profiterole with the caramel and allow to cool.

Once the caramel on the profiterole is completely cool, with a pastry bag fill each profiterole with the chantilly cream and the crème patisserie. Once filled, cover the base of each profiterole with caramel and place it over the edge of the crown of choux paste.

Cover the bottom of the cake with a layer of both creams, forming alternating strips.

Place the cake in the refrigerator for 1 hour before serving.

Crumble de duraznos y frutillas (Peach & Strawberry Crumble)


El Crumble ha sido una verdadero descubrimiento…esas pequeñas miguitas sobre la fruta o el ingrediente que hemos escogido, calentito mmm de verdad es como si nada importara mientras se disfruta.
Tenía unos duraznos y unas frutillas (fresas) en el refrigerador que se estaban echando a perder, por lo que decidí convertir esas pobres frutas en algo invitante...resultado: catador oficial + suegros no decían una palabra mientras lo comían! El crumble resultó delicioso, la mezcla entre duraznos y frutillas es genial, por lo que lo recomiendo 100%!

Aquí les dejo la receta y espero que se animen a prepararla. Con esta receta quiero participar al contest del blog Panna Cioccolato e Fantasia di Francesca.

Ingredientes:
Duraznos – 5 pequeños, cortados en trozos, sin el cuesco!
Frutillas – 200 gr, trozadas
Azúcar – 20 gr

Para el crumble:
Harina – 150gr
Mantequilla – 75 gr fría, cortada en cubos
Canela en polvo – 1 cucharadita
Azúcar – 75 gr

Preparación:
Encender el horno a 180°C. Aquí podemos escoger si preparamos el crumble en moldes individuales o bien en un pyrex grande. Disponemos la fruta ya cortada en el molde que hemos escogido, agregamos sobre la fruta los 20gr de azúcar y la revolvemos para mezclarla bien. Reservar.
Preparamos el crumble. En un bowl ponemos la harina, la canela y la mantequilla. Con los dedos comenzamos a mezclar todo hasta que tome la forma de migas. Agregamos el azúcar y mezclamos. Ponemos las migas sobre la fruta y lo llevamos al horno por una media hora (si utilizamos los moldes individuales el tiempo en horno será de unos 15 minutos más o menos) o hasta que veamos que se ha cocinado y que la superficie se ve dorada.
Servir tibio.

The crumble was delicious, peach and strawberry mixture is great so yummy, so I recommend 100%!

Here I go with the recipe. With this recipe I want to participate to the contest of Panna Cioccolato e Fantasia of Francesca.

Ingredients:
Peaches - 5 small, diced
Strawberry - 200 g, diced
Sugar - 20 g

For the crumble:
Flour - 150gr
Butter - 75 g cold diced
Cinnamon powder - 1 tsp
Sugar - 75 g

Directions:
Turn oven to 180 ° C. Here we need to make a decision: whether to choose preparing the crumble in individual ramekins or in a large pie dish. Put the fruit into the dish that you have chosen, add on the 20g of sugar and stir to mix well. Reserve.
Prepare the crumble. In a bowl put the flour, cinnamon and butter. With your fingers start to mix everything until it takes the form of crumbs. Add sugar and mix. Alfajores de Maizena y Manjar o dulce de leche (Sweet biscuits with Caramel spread/ milk jam)


Los alfajores de maizena son dulces muy famosos en todo el sudamérica. Aunque si existen diversos tipos de alfajores, con la baña de chocolate, relleno con mermelada, etc, creo que ésta es una de las recetas que prefiero y que me hace recordar mi infancia, cuando mi papito después del trabajo nos traía a casa una bolsita de galletitas y alfajores de un conocido negocio del centro de la ciudad que hasta hoy existe (las galletitas Tip-Top).
Cuando terminé de preparar los alfajores y los dispuse todos en una bandejita, no pude evitar de pensar a mi infancia, cuando veía llegar por las noches a mi papi (las veces que aún me encontraba despierta), dándome cuenta ahora de cómo tiene que haber sido difícil para él pasar todo el dia trabajando sin ver a sus pequeños, quizás ahora gozan de tiempos mejores, pero me doy cuenta que cuando uno es niño pareciera que todo es perfecto y que no existen problemas, y que el dia se hace un Super dia solamente gustando algo delicioso, como un alfajor con manjar.
Mi hermano hace unos meses me preguntó si tenía esta receta, asi que me puse manos a la obra para probar y buscar la mejor receta que encontrara. Tuve la dificultad de encontrar el manjar o dulce de leche en los supermercados. Pero aún así no nos dimos por vencidos y partimos con mi marido al centro de la ciudad a un negocio enorme que trae solo productos importados que se llama Castroni, y finalmente encontré el dulce de leche. Sé que el manjar se puede preparar también con la leche condensada, pero hoy casi todos venden la leche en tubo de plástico y no en tarro (esto porque como probablemente ya saben, se debe hervir el tarro).
Hasta ahora esta receta la atesoro, que es la circula como la original del envase maizena, pero he visto la misma con algunas modificas personales, de hecho yo también aporto las mias.
A mi degustador oficial (que es mi marido) le encantaron y también llevé algunos alfajores al trabajo para compartir con mis colegas y para que apreciaran algo típico sudamericano, quedaron encantados, sobre todo porque la masa resultó muy delicada y blanda, y que decir del dulce de leche o manjar, no sabían de la existencia!.

Aquí dejo la receta (así mi hermano se la pueda preparar!!).

Para 20 Alfajores
Ingredientes:
Huevos – 3 Yemas
Harina – 200 gr
Maizena – 300 gr
Levadura en polvo – 2 cucharaditas
Bicarbonato – ½ cucharadita
Mantequilla – 200 gr a temperatura ambiente
Azúcar – 150 gr
Esencia de Vainilla – 1 cucharadita
Coñac – 1 cucharadita (yo la sustituí con aroma de ron)
Limón – ralladura de 1
Manjar o dulce de leche – el necesario
Coco rallado – el necesario

Preparación:
Batir la mantequilla a temperatura ambiente con el azúcar hasta formar una crema.
Agregamos las yemas una a una y mezclamos. Añadir la esencia de vainilla, el coñac y la ralladura. Mezclar.
Cernimos (tamizar) a parte en un bowl la harina, la maizena, los polvos de hornear y el bicarbonato.
Agregamos la mezcla de la harina poco a poco a la crema de mantequilla, sin amasar, pero logrando que se incorporen bien. A este punto podemos envolver la masa en papel de cocina transparente y llevamos al refrigerador por unos 20 minutos.
Mientras tanto forramos una bandeja de horno con papel mantequilla y encendemos el horno a unso 170 – 180º C.
Enharinamos una superficie y extendemos la masa de un grosor de 0,5 cms más o menos.
Cortamos con un molde redondo de galletas de 6 cms de diámetro y disponemos en la bandeja. Llevar al horno por unos 12 minutos, controlando que no se doren mucho. Sacar del horno y poner las galletitas a enfriar en una rejilla. Cuando serán completamente frías comenzamos a preparar los alfajores. Ponemos manjar o dulce de leche sobre la base de una galletita y la tapamos con otra. Pasar los bordes sobre el coco y listo! Qué disfruten!

These sweet biscuits (alfajores) are very famous all over the South America. Even if is possible to find several variations such as with chocolate bath, filled with jam, etc, I think this is one of the recipes that I prefer because makes me remember my childhood when my daddy after work used to bring at home a bag of biscuits and alfajores from a well-known shop in the centre of the city which actually still exists (the cookies Tip-Top).
After I finished preparing the alfajores and once I disposed them all on a tray, I could not help thinking of my childhood, when my dad was coming back home in the evening after a long day at work (the times I was still awake), realizing now how it must have been difficult for him to spend all day working without seeing their children, they may now be enjoying better times, but I realize that when you're a child it seems that everything is perfect and there are no problems, and that a normal day becomes a Super day only because you had something delicious to eat, like a one of these sweet cookies with caramel spread.
A few months ago my brother asked me if I had this recipe, so I started looking all over for the best recipe ever. The main problem in the beginning was finding the caramel spread in supermarkets. But yet we didn’t give up and me and my hubby went to a huge shop in the centre of the city called Castroni, this shop is fabulous imports so many things from all over the globe, and I finally got the chance to find the caramel spread. I know that the caramel spread or milk jam can be prepared also with condensed milk, but today almost all condensed milk is sold in plastic tube instead of cans (this because as you probably know, for getting the caramel spread we must boil the can).
So far I find this recipe fabulous, which is the original from the package, but I've seen it around with some personal modifications, which I’ve made also myself.
My official taster (which is my husband) loved these sweet biscuits and I also brought some alfajores at work to share with my colleagues so they could appreciate something typically South American. They were delighted, the dough was very delicate and soft, and they didn’t know about the existence of the caramel spread!

Here I post the recipe (so my brother can make it!).

For 20 Alfajores
Ingredients:
Eggs - 3 yolks
Flour - 200g
Corn flour - 300g
Baking powder - 2 tsp
Baking soda - ½ tsp
Butter - 200g at room temperature
Sugar - 150g
Vanilla essence - 1 tsp
Brandy - 1 tsp (I replaced it with rum flavouring)
Lemon - zest of 1
Caramel spread - the necessary
Grated coconut - the necessary

Preparation:
Beat softened butter with sugar until creamy.
Add the yolks one by one and mix. Add the vanilla essence, brandy and zest. Mix.
Sieve apart in a bowl the flour, corn flour, baking powder and baking soda.
Add the flour mixture gradually to butter mixture, without kneading, but blending ingredients. At this point we can wrap the dough in cling film and take it to the refrigerator for about 20 minutes.
Meanwhile line a baking tray and turn on the oven to 170-180 º C.
In a floured surface, roll the dough to a thickness of 0.5 cm or so.
Cut with a round cookie cutter of 6 cm diameter and dispose cookies in the tray. Bake for about 12 minutes, taking care that the surface won’t get too brown. Remove from oven and cool to the cookies on a grid.
When completely cool we will begin to prepare alfajores. Spread the milk jam or caramel spread on the base of one cookie and cover with another. Add the coconut on the edges.
