Panzanella con Pan Casero (Panzanella with Homemade Bread)


La Panzanella es un plato de origen Toscano que consiste en una ensalda con tres ingredientes principales: Tomate, cebolla y pan.
Esta receta la probé por primera vez en la fiesta de cumple de una queridísima persona hace unas dos semanas atràs, y dado que me pareció muy original decidí de probarla yo misma. Esta ensalada puede servir a su vez como un plato único. Yo hice mis variaciones, agregàndole tantos altros ingredientes. Aquí les dejo la receta.

Para el Pan “Casero”
Ingredientes:
Harina de fuerza – 500 gr
Aceite de Oliva – 3 cucharadas
Levadura fresca – ½ cubo
Azúcar – 1 cucharadita
Agua – 200 ml
Sal

Preparación:
Desmenuzar el cubo de levadura en un bowl, agregar el azúcar y 50 ml de agua. Dejar reposar por unos 15 minutos.
Poner la harina en una superficie, hacer el hueco en el centro y ponemos una cucharadita de sal y la levadura diluída. Comenzamos a amasar poco a poco agregando 150 ml de agua. Trabajar la masa por unos 10 -15 minutos a mano, formar una bola y la ponemos en un bowl aceitado. Agregamos también aceite a la masa. Tapamos con un paño de cocina y dejamos reposar por 1 hora.
Pasada la hora, retomamos la masa y la trabajamos para darle la forma deseada. Cubrimos nuevamente y dejamos reposar 1 hora.
Pincelar la masa con el aceite y llevar al horno ya encendido a 200°C por 10 minutos, luego bajamos la temperatura a 180°C y continuamos a hornear por unos 30 minutos.

Para la Panzanella
Ingredientes:
Tomates – 3 medianos
Cebolla roja – 1 pequena
Choclo – a gusto
Huevos duros – 3
Pepino – 1
Lechuga – a gusto
Albahaca
Pan – 4 rebanadas

Preparación:
Para el pan, lo disponemos en una bandeja y bañamos con un poco de agua y vinagre. Dejamos reposar por unos 5 minutos, luego lo desmenuzamos y ponemos en un bowl. Agregar todos los otros ingredientes cortados en trocitos y/o rodajas. Condimentar y agregar aceite y vinagre. Dejar reposar por unas 2 horas. Servir.

Panzanella is a Tuscan home dish which consist of 3 main ingredients:: tomato, onion and bread.
I tried this recipe for the first time in the birthday party of a friend, about two weeks ago, and since I found it very original I decided to try it myself. This salad can be served as a main dish. I made some changes, adding more ingredients.
Here is the recipe.

For the Homemade Bread
Ingredients:
Strong flour - 500 g
Olive Oil - 3 tbsp
Fresh yeast - ½ cube
Sugar - 1 tsp
Water - 200 ml
Salt

Directions:
Crumble the yeast cube in a bowl, add the sugar and 50 ml of water. Let stand for 15 minutes.
Put flour on a surface, making a well in the center and add a teaspoon of salt and diluted yeast. We started slowly kneading the dough adding 150 ml of water. Knead the dough for about 10 -15 minutes by hand , form a ball and place it in an oiled bowl. Add also oil to the dough. Cover with a dish towel and let it rest for 1 hour.
After 1 hour, work again the dough and give it the desired shape. Cover and let it stand 1 hour.
Brush the dough with oil and place in oven preheated at 200 ° C for 10 minutes, then lowered the temperature to 180°C and continue baking for about 30 minutes.

For the Panzanella
Ingredients:
Tomatoes - 3 medium
Red onion - 1 small
Corn
Boiled eggs - 3
Cucumber - 1
Lettuce
Basil
Bread - 4 slices

Directions:
For the bread, place it on a tray and pour over a little water and vinegar. Let stand for 5 minutes, then make some crumbles and place it in a bowl. Add all other ingredients chopped and / or slices. Season and add oil and vinegar. Let stand for about 2 hours. Serve.

Burritos de pollo y Margarita (Chicken Burrito and Margarita)


Me encanta la comida mexicana, sus ingredientes, la mezcla de éstos que conjugan intensos sabores que resultan una delicia para el paladar. Me encanta preparar burritos y guacamole cuando estamos en compañía dado que siempre tienen una excelente aceptación entre los comensales.
El fin de semana invitamos a nuestros vecinos, una pareja jóven como nosotros, muy agradable y simpática a cenar con nosotros, dado que nunca habían probado la comida mexicana, decidí preparales un clásico burrito de pollo acompañado con un delicioso margarita.

Aquí les dejo la receta.

Para 4 Tortillas
Ingredientes:
Tortillas – 4
Pollo – 130 gr trutos
Pimentones – 130 gr
Tomate – 130 gr
Cebolla – 1 pequeña
Ajo – 1 diente
Aceite – 2 cucharadas
Sal y Pimienta – a gusto

Para el guacamole:
Tomate – 1
Palta (Avocado) – 1
Sal
Pimienta
Picante
Ajo (yo uso en polvo un poquito)

Para el Margarita:
Tequila – 1 medida
Jugo de Limón – 1 medida
Triple sec – ½ medida
Sal
Hielo

Preparación:
En una olla calentamos el aceite y salteamos la cebolla y el ajo. Agregamos los trutos de pollo y doramos por unos minutos. Agregar los tomates y los pimentones. Salpimentar y tapar la olla. Dejar cocer a fuego dulce por unos 45 minutos. Controlando que no se queme el pollo.
Una vez que el pollo esté cocido, con dos tenedores, lo desmenuzamos. Reservar.
Preparar el guacamole. Cortar en trocitos el tomate. Moler la palta y mezclar con el tomate y condimentar.
Calentar las tortillas y agregamos el relleno de pollo y de guacamole. Envolver la Tortilla y servir.
Para el margarita, preparamos las copas decorando con sal el borde. Mezclar todos los ingredientes y servir.

I love Mexican food, its ingredients, the mixing which gives intense flavours that are a delight to the palate. I love to cook burritos and guacamole mostly because they always have a great acceptance among the guests.
A few days ago, we invited our neighbours, a young and adorable couple for dinner and I decided to cook for them a Mexican dish since it’s easy, delicious and it was a whole new experience for them! I chose to cook chicken burrito served with a delicious Margarita and we all passed a very pleasant evening with a Mexican style.

Here is the recipe.

Serves 4
Ingredients:
Tortillas - 4
Chicken tights - 130g
Bell peppers - 130g
Tomato - 130g
Onion - 1 small
Garlic - 1 clove
Oil - 2 tbsp
Salt and pepper - to taste

For the guacamole:
Tomato - 1
Avocado - 1
Salt
Pepper
Spices, chilli
Garlic (I use a little powder)

For Margarita:
Tequila - 1 measure
Lemon juice - 1 measure
Triple sec - ½ measure
Salt
Ice

Directions:
In a saucepan heat the oil and fry the onion and garlic. Add the chicken tights and cook for a few minutes. Add the tomatoes and bell peppers. Season and cover the pot. Cook over gentle heat for about 45 minutes. Controlling it will not burn the chicken.
Once the chicken is cooked with two forks, shred the chicken. Set aside.
Prepare the guacamole. Chop tomatoes. Grind the avocado and mix with the tomato and seasoning.
Heat the tortillas and add the chicken filling and guacamole. Wrap the tortilla and serve.
For the Margarita, prepare the glasses decorating the rim with salt. Mix all ingredients and serve.

Mini Focaccia con Tomatitos Cherry y Albahaca (Mini Focaccia with cherry tomatoes and basil)


Una de las cosas de las cuales me enamoré a mi llegada en Italia fue la variedad de panes, tortas saladas, pizzas, focaccias y rústicos. Antes de venir en Italia no era una fanática del pan, hasta que descubrí las variedad inmensa que ofrece este país, inagotable...y cuando se pasa delante de un “Forno” (una panadería) no se puede resistir.
La focaccia es una de mis preparaciones preferidas, y lo mejor es que deja a tu creatividad su variedad! En esta ocasión las quise preparar en versión pequeñas, ideales para aperitivos y fiestas. Encontré esta receta en uno de mis libros de cocina Pan, dulces y Galletas.

Con esta receta participo al HEMC#46 “Delicias para fiestas”.

Para 10 Focaccias pequeñas

Ingredientes:

Harina tipo 0 – 500 gr
Levadura fresca – 25 gr
Agua tibia – 300 ml
Aceite de oliva – 50 ml + para aceitar la bandeja y rociar la masa
Miel – 2 cucharadas
Sal gruesa – 1 cucharada + para espolverear la bandeja y la masa

Preparación:

En un bowl desmenuzamos la levadura, agregamos el agua, el aceite, la miel y la sal. Mezclamos hasta que la levadura se haya disuelto. Agregamos de a poco la harina y mezclamos bien con las manos.
En una superficie enharida continuamos a trabajar la masa por unos 8 minutos. La ponemos en un bowl y la tapamos con un paño de cocina limpia y dejamos reposar unos 45 minutos hasta que haya doblado su volumen. Mientras tanto aceitamos una bandeja y ponemos un poco de sal gruesa.

Vaciamos la masa en una superficie enharinada y la trabajamos por unos minutos. Dividimos la masa en 10 partes, formamos de las bolitas y las aplastamos con la palma de la mano. Las ponemos en la bandeja previamente aceitada y con la punta de los dedos realizamos de los huecos sobre la masa. Cubrimos con un paño de cocina y dejamos reposar unos 30 minutos. Encender el horno a 220ºC.
Agregamos los tomatitos en los huecos de la masa y la albahaca. Rociamos con aceite las focaccia y llevamos al horno por unos 10 minutos. Servir tibia o fria.

One of the things that I fell in love with upon my arrival in Italy was of the variety of breads, salty cakes, pizzas, focaccia and rustics. Before arriving in Italy I was not a fan of bread, until I discovered the immense variety that this country offers, endless ... and when I pass in front of a "Forno" (a bakery) I just can’t resist to that smell…
The focaccia is one of my favorite preparations, and the best thing is that up your creativity the preparation! For this occasion, I wanted to prepare a small version of focaccia, ideal for snacks and parties. I found this recipe in one of my cookbooks, “bread, sweets and biscuits”.

With this recipe I give my contribution to HEMC # 46 "Delights for parties."

For 10 small Focaccia

Ingredients:

Flour type 0-500g
Fresh yeast - 25g
Warm water - 300 ml
Olive oil - 50 ml + to oil the pan and sprinkle the dough
Honey - 2 tablespoons
Sea salt - 1 tablespoon + to sprinkle the tray and the dough

Directions:
In a bowl, crumble the yeast, add water, oil, honey and salt. Mix until yeast is dissolved. Add slowly the flour and mix well with hands.
In a floured surface continue to knead the dough for about 8 minutes. Put it in a bowl and cover with a clean kitchen towel and let rest about 45 minutes until doubled in size. Meanwhile, oil a tray and add a little salt.

Put the dough on a floured surface and work for a few minutes. Divide dough into 10 parts, shape little balls and crushed them with the palm of the hand. Place them in the tray and with the tips of the fingers make a few holes on the dough. Cover with a dish towel and let rest about 30 minutes. Turn the oven to 220 º C.
Add the tomatoes in the hollows of the dough and basil. Spray with oil and bake the focaccia for about 10 minutes. Serve warm or cold.
