Pechuga de Pollo rellena con Espinacas y Feta (Chicken breast stuffed with Spinach and Feta Cheese)

Ingredientes:
Pollo – Pechugas deshuesadas 4
Queso Feta – cuanto basta
Espinacas o acelgas – cocidas, cuando bastan (yo usé espinacas congeladas, 3 cubos)
Sal y Pimienta

Servir.

The true is that I love chicken in all kind of preparations, grilled, stuffed, baked, in salads, etc ... therefore I always keep the freezer with a good amount of chicken stocks. This time I decided to experiment making stuffed chicken breasts cooked in boiling water, not baked or pan fried, and I found it a very healthy dish but still so delicious.

Here is this exquisite recipe.

Serves 2-3
Ingredients:
Chicken - boneless breasts 4
Feta Cheese – the necessary
Spinach or chard - cooked, the necessary (I used frozen spinach, 3 blocks)
Salt and Pepper

Directions:

On a surface put the chicken breasts (one at a time) between butter paper (baking paper) and very gently with a meat bat or with a rolling pin, work the meat trying to extend it a little more.
Season the chicken breasts and fill it with feta cheese and spinach. Wrap the ends and put the roll in aluminium foil, roll the paper and seal the ends.
Boil enough water in a pot, put the rolls wrapped in foil and cook for about 10 minutes over low heat.
Remove from heat, remove the paper and cut the roll into slices.
Serve.
Buon Appetito! and have a nice weekend!

Buon Appetito!

Whole Kitchen in its Sweet Proposal for the month of June invite us to prepare a classic French pastry, the Saint Honore Cake.
The proposal was a challenge for me, since I never ventured to prepare this recipe. I prepared the cake to celebrate the birthday of a friend of the family. I can say that everyone enjoyed the cake and there were no leftovers!
Here is the recipe.

Ingredients:
Pastry Paste - a confection

Choux pastry
Ingredients:
Milk – 500 ml
Sugar – 10g
Salt – 5g
Butter – 250g
Flour – 250g
Eggs - 10

Glaze

Eggs - 1 yolk
Milk – 1tbsp
Salt – a pinch

Directions:
Mix milk, butter, salt and sugar in a saucepan over low heat. Bring to boil, remove the pan. Sift in the flour and beat with a wooden spoon until smooth and lump free.
Place the saucepan over medium heat and stir 1 minute to dry the dough. Place in a bowl. Add the eggs one at a time, beating with wooden spoon.

After adding the eggs, the dough should be firm, shiny and with an elastic consistency. Now ready for use. If you are not going to use right away, brush with a little beaten egg.

Crème Patisserie
Ingredients:
Milk - 500 ml
Flour - 50g
Sugar - 150g
Eggs - 6 egg yolks
Vanilla - 1 stick

Directions:
Bring 400 ml of milk to a boil in a saucepan with the vanilla stick. Remove from heat and leave to infuse for about 15 minutes.
In a bowl whisk the egg yolks with sugar, add the sifted flour and the reserved milk (100 ml).
Remove the vanilla stick and add the milk into the pan slowly and continuously mixing the egg mixture. Bring the mixture to a boil and cook over low heat for a few minutes until the mixture has a dense appearance. Remove from heat and allow to cool.

Chantilly Cream
Ingredients:
Fresh cream - 250 ml
Powdered sugar - 50 g
Vanilla essence - 1 tsp

Directions:
Whip the cream, add powdered sugar and vanilla essence.

Caramel
Ingredients:
Water - 50ml
Sugar - 200 g

Directions:
In a saucepan, put water and sugar and bring to simmer, stirring occasionally cleaning the inside the edges of the pan with a brush dipped in cold water. When temperature reaches 160 º C, reduce heat and cook until you get a light amber caramel.

Directions for preparing the Cake

Extend the pastry on floured surface and form a circle of 22 cm of diameter and 2 mm thick. Unroll the pastry it on a baking tray moistened with cold water. Punctured base in about ten places with a fork and refrigerate for 20 minutes. Preheat oven to 200 º C.

Now we take our choux paste and introduced just under two thirds of the dough into a pastry bag with a plain nozzle approximately 1 cm and begin to put our dough over the pastry paste making a circle and leaving 1 cm from the edge as a margin.

With a pastry brush, thoroughly brush the edges of dough with the egg mixture, milk and salt.

Take it to the oven and cook for 35 minutes. Once cooked leave to cool on a rack.

For the profiterole, place the rest of the choux paste in a pastry bag with a plain nozzle about 5 mm and formed about 17 profiterole of 2 cm of diameter and dispose on a baking tray lay with baking paper or a silicone sheet.

Brush with glaze, pressed top with the back of a fork and bake for 20 minutes. Take them out and let cool on a rack. When they are cool we make a small hole in the base of each profiterole.
Now proceed to caramelize each profiterole, for this, coat the top of the profiterole with the caramel and allow to cool.

Once the caramel on the profiterole is completely cool, with a pastry bag fill each profiterole with the chantilly cream and the crème patisserie. Once filled, cover the base of each profiterole with caramel and place it over the edge of the crown of choux paste.

Cover the bottom of the cake with a layer of both creams, forming alternating strips.

Place the cake in the refrigerator for 1 hour before serving.
Buon Appetito!

Servir tibio.
Buon Appetito!!

The crumble was a real discovery ... those little crumbs over fruit or any other ingredient we have chosen, it’s like nothing else matters while you are enjoying it.
I had some peaches and strawberries in the refrigerator that were near to the end of their lives, so I decided to convert those poor little fruits into a real dish ... result: official taster +mother and father in-law did not say a word while eating! The crumble was delicious, peach and strawberry mixture is great so yummy, so I recommend 100%!

Here I go with the recipe. With this recipe I want to participate to the contest of Panna Cioccolato e Fantasia of Francesca.

Ingredients:
Peaches - 5 small, diced
Strawberry - 200 g, diced
Sugar - 20 g

For the crumble:
Flour - 150gr
Butter - 75 g cold diced
Cinnamon powder - 1 tsp
Sugar - 75 g

Directions:
Turn oven to 180 ° C. Here we need to make a decision: whether to choose preparing the crumble in individual ramekins or in a large pie dish. Put the fruit into the dish that you have chosen, add on the 20g of sugar and stir to mix well. Reserve.
Prepare the crumble. In a bowl put the flour, cinnamon and butter. With your fingers start to mix everything until it takes the form of crumbs. Add sugar and mix. Put crumbs over the fruit and take it to the oven for half an hour (if you use individual ramekins, the oven time will be about 15 minutes or less) or until we see that is cooked and the surface is golden.
Serve warm.
Buon Appetito!
