Empanadas Chilenas (Chilean Empanadas/Meat pie)


Finalmente estoy de vuelta! Luego de casi un mes entre vacaciones, trabajo, visitas, etc volví para ponerme al día en la cocina y con todos los blog... El verano ya está terminando y desde la otra parte del mundo está apenas comenzando la primavera, lo que me hace recordar una de las celebraciones más esperadas de mi gente, el 18 de septiembre! Para celebrarlo y recordarlo decidí este año de preparar unas ricas empanadas, plato típico e infaltable en la mesa de los chilenos, que consiste en una masa rellena con carne, cebolla, huevos, aceitunas (todo junto llamado pino) y que los chilenos gustan como plato de entrada en la espera que el asado este pronto.
Aquí les dejo la receta para continuar con las celebraciones. Esta receta la saqué tal cual del sitio Recetas Gratis.

Para 10-12 Empanadas
Ingredientes:
Masa:
1 Kilo de Harina.
2 Cucharadas rasas de polvos para hornear.
200 Gramos manteca de cerdo.
1 Cucharadita rasa de sal.
1 Huevo.
1/2 Litro de Leche.

Pino:
1/2 Kilo de carne de res molida.
1 kilo de Cebollas.
1 vaso vino blanco.
5 Cucharadas de aceite
4 Huevos cocidos (duros), trozaditos.
Aceitunas (olivas).
Pasas (uvas secas dulces) (optativo).
Ají color (paprika).
Sal.
Aliño completo.
Obs. sobre "aliño completo"; Esto es una mezcla de muchos condimentos en polvo, se distinguen el orégano, aji color y comino. Se puede reemplazar por similares y a gusto, o no está nada mal agregar un par de tabletas de concentrado de carne.

Preparación:

Masa:
Poner la harina mezclada con la sal y con el polvo de hornear en una superficie para amasar. Hacer un círculo con la harina y poner en el centro la manteca tibia y previamente derretida en sartén, agregar un huevo y la leche paulatinamente para comenzar a mezclar suavemente con las manos hasta lograr una masa más homogénea, asi dejar reposar unos minutos para luego comenzar a amasar. Si la consistencia es demasiado seca se continúa suavizando con leche, y si le hemos puesto demasiada leche podemos poner más harina.
Luego de amasar sacamos trozos de masa y hacemos esferas para volver a amasar y hacer discos de masa (hasta 25 cms. de diámetro).
Pino:
Picar la cebolla medianamente fina y freirla a fuego medio durante 20 minutos revolviendo e incorporando el vino,(Obs:para hacer la cebolla más digestiva aconsejo antes de cocinar lavarla y escurrirla bien, luego agregar una cucharadita de azucar y en cualquier receta cocinarla siempre antes por si sola no menos de 15 minutos), luego salpimentar a gusto y agregar los condimentos y la carne para dejar en cocción a fuego medio hasta que la carne esté apenas cocida (5 a 7 minutos aprox.).
Luego en cada disco de masa poner un poco de pino escurrido (sacar un poco el líquido), una aceituna, un trozo de huevo y dos pasas. Al cerrar el disco aconsejo pasar una pincelada de Agua en la juntura, asi evitamos se abra. Luego de cerrar la empanada en la forma que se desee le damos una pincelada encima con un poco de huevo batido crudo que preparamos exclusivamente para eso. Además le damos un par de pinchazos para que luego no acumule aire al hornear.
Poner a hornear a fuego medio unos minutos hasta que las veamos doraditas, (20 a 30 minutos con el horno previamente calentado).

Finally I’m back! After almost a month between vacations, work, visits, etc. I’m back to catch up in the kitchen and all the blog ... Summer is ending and from the other side of the world is just beginning the spring, which makes me remember one of the most beautiful celebrations of my people, the national day, 18 of September! To celebrate it I decided this year to prepare empanadas, and typical Chilean dish consisting of a kind of a pie filled with meat, onions, eggs and olives, that you can’t miss during this celebrations, mostly we eat it as an appetizer while we wait for the barbecue to be ready.
Here is the recipe to continue the celebrations. I got this recipe from the website Recetas Gratis.

Empanadas 10-12
Ingredients:
Dough Pie:
Flour – 1 Kg
Baking powder - 2 tbsp
Lard – 200 gr
Salt – 1 tsp
Eggs - 1
Milk – 500 ml

Pino (the filling):

Ground beef – 500 gr
Onions – 1 kg
White wine – 1 cup
Oil- 5 tbsp
Eggs – 4 hard boiled
Olives
Raisins (optional).
Chili color (paprika).
Salt

Directions:
Dough:
Put the flour mixed with salt and baking powder on a surface for kneading. Make a well in the centre and add warm the warm lard previously melted in a pan, add egg and milk gradually to begin mixing gently with hands until you get a homogeneous dough, so let stand a few minutes and then start to knead. If consistency is too dry add more milk to soften, and if we put too much milk you can put more flour. Knead for at least 20 minutes.
Divide the dough into 10 – 12 pieces and form a ball with each of them. Flatten out each ball and lay it down on the surface, giving to the dough a circle shape (up to 25 cm. of diameter).

Pino - Filling:

Chop onion and fry at medium heat for 20 minutes, stirring and adding the wine, (Note: to make more digestive onion I recommend washing before cooking and drain well, then add a teaspoon of sugar and cooking in any recipe before at least for 15 minutes), then add salt and pepper to taste and add seasonings finally add the meat and cook it over medium heat until meat is just cooked (5-7 minutes).
Then on each circle of dough, put a little drained filling, an olive, a piece of egg and two raisins. When closing the dough brush the edges with water, so avoid open. After closing the empanada, brush it with a beaten egg. Make a few holes with a fork over the surface.
Bake the empanadas for a few minutes over medium heat until browned (20-30 minutes in preheated oven.)

Alfajores de Maizena y Manjar o dulce de leche (Sweet biscuits with Caramel spread/ milk jam)


Los alfajores de maizena son dulces muy famosos en todo el sudamérica. Aunque si existen diversos tipos de alfajores, con la baña de chocolate, relleno con mermelada, etc, creo que ésta es una de las recetas que prefiero y que me hace recordar mi infancia, cuando mi papito después del trabajo nos traía a casa una bolsita de galletitas y alfajores de un conocido negocio del centro de la ciudad que hasta hoy existe (las galletitas Tip-Top).
Cuando terminé de preparar los alfajores y los dispuse todos en una bandejita, no pude evitar de pensar a mi infancia, cuando veía llegar por las noches a mi papi (las veces que aún me encontraba despierta), dándome cuenta ahora de cómo tiene que haber sido difícil para él pasar todo el dia trabajando sin ver a sus pequeños, quizás ahora gozan de tiempos mejores, pero me doy cuenta que cuando uno es niño pareciera que todo es perfecto y que no existen problemas, y que el dia se hace un Super dia solamente gustando algo delicioso, como un alfajor con manjar.
Mi hermano hace unos meses me preguntó si tenía esta receta, asi que me puse manos a la obra para probar y buscar la mejor receta que encontrara. Tuve la dificultad de encontrar el manjar o dulce de leche en los supermercados. Pero aún así no nos dimos por vencidos y partimos con mi marido al centro de la ciudad a un negocio enorme que trae solo productos importados que se llama Castroni, y finalmente encontré el dulce de leche. Sé que el manjar se puede preparar también con la leche condensada, pero hoy casi todos venden la leche en tubo de plástico y no en tarro (esto porque como probablemente ya saben, se debe hervir el tarro).
Hasta ahora esta receta la atesoro, que es la circula como la original del envase maizena, pero he visto la misma con algunas modificas personales, de hecho yo también aporto las mias.
A mi degustador oficial (que es mi marido) le encantaron y también llevé algunos alfajores al trabajo para compartir con mis colegas y para que apreciaran algo típico sudamericano, quedaron encantados, sobre todo porque la masa resultó muy delicada y blanda, y que decir del dulce de leche o manjar, no sabían de la existencia!.

Aquí dejo la receta (así mi hermano se la pueda preparar!!).

Para 20 Alfajores
Ingredientes:
Huevos – 3 Yemas
Harina – 200 gr
Maizena – 300 gr
Levadura en polvo – 2 cucharaditas
Bicarbonato – ½ cucharadita
Mantequilla – 200 gr a temperatura ambiente
Azúcar – 150 gr
Esencia de Vainilla – 1 cucharadita
Coñac – 1 cucharadita (yo la sustituí con aroma de ron)
Limón – ralladura de 1
Manjar o dulce de leche – el necesario
Coco rallado – el necesario

Preparación:
Batir la mantequilla a temperatura ambiente con el azúcar hasta formar una crema.
Agregamos las yemas una a una y mezclamos. Añadir la esencia de vainilla, el coñac y la ralladura. Mezclar.
Cernimos (tamizar) a parte en un bowl la harina, la maizena, los polvos de hornear y el bicarbonato.
Agregamos la mezcla de la harina poco a poco a la crema de mantequilla, sin amasar, pero logrando que se incorporen bien. A este punto podemos envolver la masa en papel de cocina transparente y llevamos al refrigerador por unos 20 minutos.
Mientras tanto forramos una bandeja de horno con papel mantequilla y encendemos el horno a unso 170 – 180º C.
Enharinamos una superficie y extendemos la masa de un grosor de 0,5 cms más o menos.
Cortamos con un molde redondo de galletas de 6 cms de diámetro y disponemos en la bandeja. Llevar al horno por unos 12 minutos, controlando que no se doren mucho. Sacar del horno y poner las galletitas a enfriar en una rejilla. Cuando serán completamente frías comenzamos a preparar los alfajores. Ponemos manjar o dulce de leche sobre la base de una galletita y la tapamos con otra. Pasar los bordes sobre el coco y listo! Qué disfruten!

These sweet biscuits (alfajores) are very famous all over the South America. Even if is possible to find several variations such as with chocolate bath, filled with jam, etc, I think this is one of the recipes that I prefer because makes me remember my childhood when my daddy after work used to bring at home a bag of biscuits and alfajores from a well-known shop in the centre of the city which actually still exists (the cookies Tip-Top).
After I finished preparing the alfajores and once I disposed them all on a tray, I could not help thinking of my childhood, when my dad was coming back home in the evening after a long day at work (the times I was still awake), realizing now how it must have been difficult for him to spend all day working without seeing their children, they may now be enjoying better times, but I realize that when you're a child it seems that everything is perfect and there are no problems, and that a normal day becomes a Super day only because you had something delicious to eat, like a one of these sweet cookies with caramel spread.
A few months ago my brother asked me if I had this recipe, so I started looking all over for the best recipe ever. The main problem in the beginning was finding the caramel spread in supermarkets. But yet we didn’t give up and me and my hubby went to a huge shop in the centre of the city called Castroni, this shop is fabulous imports so many things from all over the globe, and I finally got the chance to find the caramel spread. I know that the caramel spread or milk jam can be prepared also with condensed milk, but today almost all condensed milk is sold in plastic tube instead of cans (this because as you probably know, for getting the caramel spread we must boil the can).
So far I find this recipe fabulous, which is the original from the package, but I've seen it around with some personal modifications, which I’ve made also myself.
My official taster (which is my husband) loved these sweet biscuits and I also brought some alfajores at work to share with my colleagues so they could appreciate something typically South American. They were delighted, the dough was very delicate and soft, and they didn’t know about the existence of the caramel spread!

Here I post the recipe (so my brother can make it!).

For 20 Alfajores
Ingredients:
Eggs - 3 yolks
Flour - 200g
Corn flour - 300g
Baking powder - 2 tsp
Baking soda - ½ tsp
Butter - 200g at room temperature
Sugar - 150g
Vanilla essence - 1 tsp
Brandy - 1 tsp (I replaced it with rum flavouring)
Lemon - zest of 1
Caramel spread - the necessary
Grated coconut - the necessary

Preparation:
Beat softened butter with sugar until creamy.
Add the yolks one by one and mix. Add the vanilla essence, brandy and zest. Mix.
Sieve apart in a bowl the flour, corn flour, baking powder and baking soda.
Add the flour mixture gradually to butter mixture, without kneading, but blending ingredients. At this point we can wrap the dough in cling film and take it to the refrigerator for about 20 minutes.
Meanwhile line a baking tray and turn on the oven to 170-180 º C.
In a floured surface, roll the dough to a thickness of 0.5 cm or so.
Cut with a round cookie cutter of 6 cm diameter and dispose cookies in the tray. Bake for about 12 minutes, taking care that the surface won’t get too brown. Remove from oven and cool to the cookies on a grid.
When completely cool we will begin to prepare alfajores. Spread the milk jam or caramel spread on the base of one cookie and cover with another. Add the coconut on the edges.
