Whole kitchen en su Propuesta Salada para el mes de Enero nos invita a preparar todo un clásico de la gastronomía francesa, un Soufflé.
El Soufflé es ideal para una entrada o un acompañamiento. Personalmente lo prefiero como entrada, porque su textura suave nos prepara para los platos a seguir. Y como siempre, basta un poco de imaginación para crear con una receta básica de Soufflé distintos tipos de éste.
La receta me gustó mucho, la unica cosa es que aumenté un poco el tiempo de cocción.
Asi que aquí vamos con el resultado, pero antes quiero agradecerles tanto a todos ustedes por vuestras lindas palabres durante este periodo...vuestras palabras han sido de gran conforto. Mil Gracias!!
Ahora si, aquí vamos con la receta a la cual agregué solamente el pesto.
Ingredientes:

Mantequilla ablandada – 50 gr
Queso Gruyere rallado – 50 gr
Mantequilla – 20 gr
Harina – 20 gr
Leche – 250 ml
Sal y pimienta recién molida
Una pizca de pimienta de cayena
Yemas de huevo - 6
Claras de huevo - 10
Queso Gruyere finamente rallado – 240 gr
Pesto – 4 cucharadas
Preparación:
Precaliente el horno a 200ºC. Bata las claras con una pizca de sal hasta que esté a punto de nieve.
Engrase el interior de 8 recipientes de 8 cm de diámetro (o 4 recipientes para suflé de 10 cm de diámetro) con la mantequilla.
Ponga 50 g de gruyere rallado en uno de los recipientes, gírelo para cubrir el interior y luego vierta el gruyere sobrante en otro de los recipientes. Repita la operación pra recubrirlos todos.
Para hacer la bechamel, funda los 20 g de mantequilla en una cacerola. Añada la harina y cocínela durante 2 minutos. Sin dejar de remover, añada la leche fría y deje que hierva a fuego medio durante uno o dos minutos.
Vierta la bechamel en un cuenco. Sazónela ligeramente con sal, pimienta y cayena e incorpore las yemas con las varillas. Cubra el cuenco con film transparente y deje que se enfríe un poco. Agregar el pesto y mezclar.
Incopore enseguida, con unas varillas, una tercera parte de las claras con una mezcla templada para el soufflé y luego con una cuchara larga, vaya introduciendo el resto con una mano mientras espolvorea el gruyere con la otra. Deténgase cuando la mezcla esté amalgamada.
Introduzca esta mezcla en los recipientes de modo que quede 5 mm por encima del borde. Allane la superficie con una espátula y use la punta de un cuchillo para retirar la mezcla de los bordes de cada recipiente y así ayudar a que la mezcla suba.
Coloque los recipientes en una bandeja profunda resistente al calor, recubierta con una capa de papel encerado, y vierta dentro agua hirviendo para cubrir la mitad de la altura de los recipientes. Hornee los soufflé 8 minutos, dependiendo de la medida del molde.
Servir.

Whole kitchen in its salty proposal for the month of January invites to prepare a classic from the French cuisine, a soufflé.
The Soufflé is ideal as starter or side dish. Personally I prefer it as a starter, because its soft texture prepares us for the dishes to follow. And as always, just with a little imagination we can create from the basic recipe of the Soufflé different types of it.
I really liked this recipe, the only thing is that I increased a little the cooking time.

Now, here I go with the recipe to which the only variation I made was adding the pesto.
Ingredients:

Softened butter - 50 g
Gruyere cheese, grated - 50 g
Butter - 20 g
Flour - 20 g
Milk - 250 ml cold
Salt and freshly ground pepper
Pinch of cayenne pepper
Egg yolks - 6
Egg whites - 10
Finely grated Gruyere cheese - 240 g
Pesto - 4 tablespoons
Directions:
Preheat oven to 200ºC. Beat the egg whites with a pinch of salt until stiff peaks form.
Grease the inside of 8 containers or ramekins of 8 cm in diameter (or 4 soufflé containers 10 cm in diameter) with butter.
Put 50 g of grated cheese in one of the ramekins, turn to coat the inside and then pour the remaining cheese in the rest of the ramekins.
To make the bechamel, melt the 20 g of butter in a saucepan. Add flour and cook for 2 minutes. Stirring, add the cold milk and bring to a boil over medium heat for a minute or two.
Pour the bechamel in a bowl. Sprinkle lightly with salt, pepper and cayenne and stir in the egg yolks. Cover the bowl with plastic wrap and let cool slightly. Add the pesto and mix.
Then add a third of the whites with to the soufflé mixture, then with a long spoon, you introduce the rest with one hand and sprinkle the gruyere with the other. Stop when the mixture is amalgamated.
Pour this mixture in into the ramekins. Flatten the surface with a spatula and use the tip of a knife to remove the mixture from the edges.
Place the ramekins in a deep pan heat resistant, coated with a layer of wax paper and pour in boiling water to cover half the height of the containers. Bake the soufflé 8 minutes, depending on the measure of the mold.
Serve.
