Spanakopita y mi ausencia...


Aquí estoy de vuelta...lamentablemente la situación de mi suegro me ha mantenido lejana de la blogesfera durante estos últimos días.
Babbo en estos momentos se encuentra en el hospital, durante los últimos 5 días, su hígado a dejado de producir proteínas lo que le ha provocado dolores intolerables y una extrema hinchazón en cuerpo impidiéndole de caminar o moverse. Qué decirles, verlo en sufrimiento, que producto de la morfina apenas podía hablar, con esa mirada que sólo transmitía dolor y pedía ayuda, ver a mi Babbo cansado y casi irreconocible, me ha roto el corazón...las decisiones de la naturaleza muchas veces son dolorosas cómo alguien sabiamente me ha dicho, y en este momento, consciente que científicamente el pronóstico no es alentador, entrego mi esperanza a Dios y que se haga su voluntad.
No hay nada que quisiera más que volver a disfrutar de un almuerzo de domingo con él, cómo hemos hecho en estos cuatro años, de escucharlo decir siempre la suya, porque siempre tiene algo que decir, sin importar el tema...de verlo nuevamente armar su hermoso y único pesebre de navidad con esa vitalidad y mirada de niño que lo ha siempre caracterizado, de escucharlo insistir incansablemente en que yo probara y comiera lo que él me decía, de verlo repetirse a escondidas un trocito de torta o del dulce de la ocasión, de verlo cómo trataba y se esforzaba en hablar español, siguiendo un libro que había comprado especialmente para comunicar con mi familia....Babbo, “Ti voglio tanto bene” (te quiero mucho) fueron mis palabras antes de empezar el tratamiento de radioterapia, me abalancé sobre él tratando de parar el tiempo por miedo a lo que podría venir y él me abrazó fuertemente diciéndome que lo sabía...
Uno siempre escucha “disfruta cada momento como si fuera el último” pero estamos siempre muy ocupados con nuestras vidas y creemos que aún la vida nos dará casi eternamente esos momentos y las personas que queremos, hoy sólo pienso que daría cualquier cosa por disfrutar un simple almuerzo con Babbo...y en esta esperanza me quedaré hasta que pueda...
Y bueno queridísmos amig@s, mil disculpas por no poder visitar tan a menudo vuestros hermosos blogs, pero en este momento trato de dar el mayor tiempo a mi Babbo.

Aquí les dejo una simple y deliciosa receta de origen griego que se llama “Spanakopita” y que ví en un programa de TV Italiano, espero que la disfruten.

Ingredientes:
Masa Hojaldre – 2 rollos/láminas
Queso Feta – 350 gr, cortado en cuadraditos
Huevos – 3, batidos
Espinacas – 1 Kg
Agua – 3 vasos
Cebollas – 3, picadas finamente
Aceite
Sal
Pimienta

Preparación:
En un sartén, calentar el aciete y agregar la cebolla, cocinarla hasta que esté dorada. Mientras tanto en una olla suficientemente grande ponemos las espinacas con el agua, tapamos y dejamos cocinar a fuego bajo, hasta que se ablanden.
En un bowl mezclamos las espinacas (previamente coladas, sin restos de agua) con la feta, la cebolla, los huevos batidos y salpimentar.
En un molde para torta (circular o cuadrado) extender una masa hojaldre y agregar el relleno de espinacas. Cubrir con la otra masa hojaldre y cerrar bien los bordes.
Llevar al horno precalentado a 180ºC por unos 40 minutos.
Cortar a cuadraditos y servir.

Finally I am back ... unfortunately the current situation with my father-in-law has kept me far away from the blogsphere lately.
Babbo is now at the hospital, during the last 5 days, his liver stopped producing proteins which has caused an unbearable pain and extreme swelling of the body which is preventing him from walking or moving. What can I say, seeing him in suffering, an as a result of the morphine he was hardly able to speak, with that look that was only transmitting pain and asking for help, seeing my Babbo tired and almost unrecognizable, broke my heart ... the decisions of nature are painful as someone wisely told me, and at this point, scientifically aware that the prognosis is not encouraging, I give my hope to God and ask him that His will be done.
I would do anything to enjoy again a Sunday lunch with him, how we have done in the last four years, to listen his point of view, because he always had something to say, no matter the subject ... to see him again building his beautiful and unique Christmas crib with the vitality and his child’s look that has always characterized himself, to listen him tirelessly insisting that I try and eat what he told me, to see him while nobody was watching cutting a second piece of cake or sweet, to see him how he tried to speak Spanish, following a book that he had bought especially to communicate with my family .... Babbo, “Ti voglio bene” (I love you) were my words before starting radiation treatment, I pounced on him trying to stop time feeling the fear of what might come and he hugged me tightly saying he knew it...
You always hear "enjoy every moment as if it were your last" but we're very busy with our lives and we think that life will give us those moments and people we love forever, now I just think that would give anything to enjoy a simple lunch with Babbo... and in this hope I will stay until I can ...
My dears blogfriends, apologies for not visiting your blogs as often I would like, but right now I want to give more time to my Babbo.
Here is a simple and delicious recipe of Greek origin, called “Spanakopita” that I saw in an Italian TV show, I hope you enjoy it.

Ingredients:
Puff Pastry - 2 sheets
Feta cheese - 350 g, diced
Eggs - 3, beaten
Spinach - 1 kg
Water - 3 cups
Onions - 3, finely chopped
Oil
Sal
Pepper

Directions:
In a skillet, heat the oil and add onion, cook until brown. Meanwhile in a pot large enough put spinach and add the water, cover and let simmer until tender.
In a bowl mix the spinach with feta, onion, beaten eggs and season.
In a cake pan (round or square) extend the puff pastry and add the spinach filling. Cover with another pastry sheet and seal the edges.
Bake in preheated oven at 180 º C for 40 minutes.
Cut into squares and serve.

Crêpes Suzette


Whole Kitchen en su propuesta dulce para el mes de Febrero nos invita a preparar un clásico de la gastronomía francese, los crêpes.

Comienza una nueva semana y qué mejor que iniciarla dulcemente! Debo decir que los crêpes son uno de mis preferidos por su versatilidad, se pueden preparar platos fantásticos con ingredientes tan simples. Para esta ocasión decidí preparar un crêpe suzette, un típico postre francese que destaca por su salsa y sabor cítrico.
Espero que lo disfruten.

Ingredientes:

Huevos – 2
Harina – 125 gr
Leche – 250 ml
Azúcar – 30 gr
Licor – 1 cucharadita de licor de naranja u otro
Sal – una pizca

Para la salsa:
Azúcar – 8 cubos de azúcar
Mantequilla – 70 gr
Naranjas – 2
Limón – 1
Grand Marnier o licor de naranja – 1 vaso

Preparación:
Batir los huevos con el azúcar y la sal. Agregar la harina, la leche y mezclar. Agregar 20 gr de mantequilla derretida y agregar el licor. Dejar reposar por 2 horas en el refrigerador.
Engrasar un sartén con la mantequilla y agregar un cucharón de la mezcla, moviendo el sartén circularmente para que quede parejo. Cuando la mezcla comenzará a secarse, levantar los bordes con una espátula y girar el crêpe. Cocinar por otro minuto hasta que esté dorada. Repetir el procedimiento con el resto de la mezcla. Reservar.
Preparar la salsa, pasar los cubos de azúcar sobre la piel de la naranja y del limón.Mientras tanto, poner la mantequilla en el sartén a fuego bajo y agregar los cubos de azúcar, dejar que la mantequilla se derrita. Exprimir las naranjas y el limón, pasando el jugo por un colador y agregarlo a la mantequilla. Agregar el licor. Sucesivamente se procede a bañar los crepes, mejor si se hace uno a uno, poniéndolo abierto y luego doblándolo en el sartén, dejando que se impregne de la salsa. Continuar con el resto de los crêpes.
Se puede también flambear los crêpes.
Servir. En este caso los acompañé con un poco de helado.

A new week begins and there isn’t a better way to start it than doing it sweetly. I must say crêpes are one of my favourites for its versatility, you can prepare fantastic dishes just using simple ingredients. For this occasion I decided to prepare a crêpe suzette, a typical French dessert known for its salsa and that citrus flavour.
Hope you enjoy it.

Ingredients:
Eggs - 2
Flour - 125 g
Milk - 250 ml
Sugar - 30 g
Liqueur - 1 teaspoon orange liqueur or other
Salt - a pinch

For the sauce:
Sugar - sugar 8 cubes
Butter - 70 g
Oranges - 2
Lemon - 1
Grand Marnier or orange liqueur - 1 cup

Directions:
Beat eggs with sugar and salt. Add flour, milk and mix. Add 20 grams of melted butter and add the liqueur. Let stand for 2 hours in the refrigerator.
Grease a skillet with butter and add a ladle of the mixture, shaking the skillet so the mixture comes uniform. Once the mixture begins to dry, lift the edges with a spatula and turn the crêpe. Cook for another minute until golden. Repeat with the remaining mixture. Reserve.
Prepare the sauce, pass the sugar cubes over the skin of the orange and lemon. In the meantime, place butter in skillet over low heat and add the sugar cubes, until butter is melted. Squeeze the oranges and lemon, passing the juice through a sieve and add it to the butter. Add liquor.
Then, proceed dipping the crêpes in the sauce, it would be better if is done one by one, so place the crêpe in the pan and then fold it in half and half again. Continue with the remaining crêpes.
You can also flambé crêpes.
Serve. In this case, I chose to accompanied with some ice cream.

Pierogi (Ravioles típicos de Polonia) Pierogi (Typical Polish Ravioli)


A fines del año pasado tuve que viajar a Varsovia por trabajo. Tuve la suerte de poder viajar con mi maridito así además de trabajar tuvimos la oportunidad para recortar un poco de tiempo para conocer esta hermosa ciudad.
Varsovia es una ciudad hermosa, que mantiene su historia con la modernidad, es un país con una cicatriz de dolor aún abierta después de la guerra –al menos fue mi humilde percepción-, pero que destaca por sus colores y la voluntad de su pueblo de seguir adelante. Se destaca su cocina sencilla pero deliciosa, creando con pocos ingredientes platos nutritivos y maravillosos, característica admirable de aquellos países que han pasado por periodos horribles de poco abastecimiento y durante los cuales las dueñas de casa lograban crear y llevar a la mesa platos que destacaban por la simplicidad de los ingredientes pero que al mismo tiempo lograban dar la nutrición necesaria a la familia.
Durante nuestro estadía en Varsovia, tuvimos la oportunidad de probar un delicioso plato llamado “Pierogi” que consiste en ravioles rellenos. La masa es muy simple y el relleno varía, los encontré rellenos de setas, ricotta, chucrut, papas, cebollas, etc.
A mi marido le encantaron, asi que desde que volvimos, me hacía entender “indirectamente” cuánto le gustaría comer nuevamente los famosos Pierogi de Varsovia, asi que así, esta humilde cocinera y esposa, decidió ponerse manos a la obra y cumplir el antojo de su marido.

Aquí les dejo la receta (esperando que el pueblo polaco no se ofenda por haber intentado reproducir esta riquísima receta) y espero que la disfruten tanto como nosotros.

Ingredientes:

Para la masa
Harina – 2 ½ tazas
Huevos – 1
Agua – Tibia, de ½ a ¾ de taza
Sal – una pizca

Para el relleno
Papas – 5 grandes
Cebollas – 2 medianas cortadas en trocitos
Queso – Gouda, o el que prefieran rallado
Sal
Pimienta
Mantequilla/aceite – 3 cucharadas

Mantequilla, Aceite, salsas, de vuestra preferencia

Preparación:
Lavar y pelar las papas, cocerlas y hacerlas puré. Mientras tanto caramelizamos la cebolla en la mantequilla o el aceite hasta que esté dorada. Mezclar la cebolla con el puré y el queso y salpimentar.

Mezclar todos los ingredientes de la masa hasta que se uniforme. No amasar tanto, ni agregar tanta agua, hay que agregar sólo la agua suficiente para que se junten todos los ingredientes.
Poner a reposar la masa tapada con una paño de cocina por no más de 30 minutos.
Extender la masa en una superficie enharinada, no debe resultar muy gruesa, si no más bién lo suficientemente fina permitiendo que no se rompa la masa.
Cortar la masa en círculos (se puede hacer con un vaso de vino) y agregar el relleno. Sellar bien los ravioles (yo lo hice pincelando un poco de agua en los bordes) en modo de evitar que se abran durante la cocción.
Hervir suficiente agua en una olla con un poco de sal. Cuando hierva poner los Pierogi, los cuales irán al fondo de la olla para luego subir a la superficie, cuando los Pierogi suban a la superficie continuar la cocción por otros 4 minutos. Transferir en un plato y agregar un poco de aceite de oliva, o bien mantequilla derretida con setas, cebolla, o lo que quieran, yo agregué salsa de tartufo y quedó delicioso.

Pierogi (Typical Polish Ravioli)


By the end of last year I had to travel for work to Warsaw. I was lucky enough because I had the chance to travel with my hubby so while I was working we had the opportunity to cut a little time to explore this beautiful city.
Warsaw is a beautiful city that keeps its history mixed with modernity, is a country with an open scar of pain since the war, (at least it was my humble perception) but noted for its colours and the will of his people to move forward. Stands out by its simple but delicious cuisine, which creates with a few ingredients nutritive and wonderful meals, admirable characteristic of those countries that have gone through terrible periods of food shortage and during which housewives were able to create and bring to the table dishes that stood out for the simplicity of the ingredients but at the same time managed to give the necessary nutrition for the family.
During our stay in Warsaw, I had the opportunity to taste a delicious dish called "Pierogi" a kind of ravioli dish. The dough is very simple and filling varies, I found them stuffed with mushrooms, ricotta cheese, sauerkraut, potatoes, onions, etc.
My husband loved it, so since we got back, he was constantly dropping the hint about how much he would like to eat again the famous Pierogi from Warsaw, so well, this humble cook and wife, decided to put her hands on work and to fulfill the craving of her husband.

Here is the recipe (hoping not to offend Poland for my attempting to replicate this delicious recipe) and I hope you enjoy it as much as we did.

Ingredients:
For the dough
Flour - 2 ½ cups
Eggs - 1
Water - Lukewarm, ½ to ¾ cup
Salt - a pinch

For the filling

Potatoes - 5 large
Onions - 2 medium diced
Cheese - Gouda, or whatever you prefer, shredded
Salt
Pepper
Butter / oil - 3 tablespoons

Butter, oil, sauces, your choice

Directions:
Wash and peel potatoes, boil and mash them. Meanwhile caramelize onions in butter or oil until golden. Mix the onions, potatoes puree with cheese and season.

Mix all ingredients for the dough until everything comes together . Don’t over and do not add too much water, add just enough water to get together all ingredients.
Put the dough covered with a tea towel and let rest for no more than 30 minutes.
Roll out the dough on a floured surface, should not be too thick, but rather allowing fine enough so it doesn’t break.
Cut dough into circles (you can do with a glass of wine) and add the filling. Seal the ravioli (I did brush a little water on the edges) in a way to avoid a mess and they open during cooking.
Boil enough water in a pot with a little salt. When it boils add the Pierogi, which will go to the bottom of the pot and then will go back to the surface; when the Pierogi rise to the surface continue cooking for another 4 minutes. Transfer to a plate and add some olive oil or melted butter with mushrooms, onions, or whatever you want, I added truffle sauce and it was delicious.

Crema Catalana


Uno de mis restaurantes preferidos en mi ciudad natal, Santiago, se llama “La Cocina de Javier” donde hemos pasado memorables momentos con mi familia, graduaciones, aniversarios, cumpleaños, y tantas innumerables situaciones por el sólo hecho de estar juntos y celebrar. Javier Pascual, para quienes no lo saben es un conocido Chef Vasco en Santiago, recuerdo que participaba hasta en programas televisivos con mucho éxito. Una cosa que me gustaba tanto de ir a su restaurant es que en un momento de la cena, el mismo Javier dejaba todo en cocina e iba a saludar a todos y cada uno de sus comensales, preocupándose por cada uno y asegurándose que todo estuviese bien, haciéndonos sentir como si estuviéramos en nuestra propia casa. Era grandioso sentir ese acento, y ver a este señor de unos 70 años con su boina negra y su traje de chef, es un grande autor en cocina y fue gracias a él que me enamoré de la cocina española.
Cada vez que vuelvo a Chile, mi papá, sabiendo que la Cocina de Javier es mi preferida, reserva una o dos veces una cena ahí, y en la espera de volver a degustar esos magníficos platos, me consuelo con esta delicia de Crema Catalana y aprovechando que mi maridito me regaló el soplete de cocina, no me aguanté para estrenarlo.
Espero que la disfruten tanto como yo. Aquí les dejo la receta.

Para 2 – 3 personas (dependiendo del tipo de molde que usen)
Ingredientes:
Leche – 500 ml
Huevos – 4 yemas
Azúcar – 8 cucharadas
Canela - 1 palito
Limón - ralladura de 1/2
Naranja - ralladura de 1/2
Vainilla - 1 cucharadita de extracto
Maizena – 1 cucharada
Azúcar de caña – cuanto quieran, yo usé unas 4 cucharadas

Preparación:
En una olla ponemos a calentar la leche (de los 500 ml reservamos a parte un poco de leche para mezclarla con la maizena, basta 1/3 de vaso de vino) con la canela, la vainilla, la cáscara de limón y de naranja. Hervir y dejar infusionar por unos 5 minutos. Mientras tanto batir las yemas con el azúcar hasta que resulte espumoso. Agregamos la leche caliente, colándola a la mezcla de yemas y agregamos también la maizena mezclada con la leche. Mezclamos bien y ponemos todo nuevamente en la olla a fuego bajo. Cocinar revolviendo continuamente hasta que habrá adquirido consistencia.
Poner la crema en los pocillos, dejar a enfriar a temperatura ambiente antes de llevar al refrigerador.
Refrigerar. Yo la dejé toda la noche. Luego antes de servir ponemos el azúcar de caña en la superficie y con el soplete la caramelizan. Servir.

One of my favorite restaurants in my hometown, Santiago, is called "La Cocina de Javier" where we spent great times with my family, graduations, anniversaries, birthdays, and many countless situations for just being together and celebrate. Javier Pascual, for those who do not know is a popular Basque Chef in Chile, I remember that he used to make several appearances in TV shows with great success. One thing I liked so much about going to his restaurant is that in a certain time of dinner, the same Javier was stopping everything in the kitchen in order to greet each of his guests, taking care of everyone and making sure everything was OK , making us feel like we were in our own home. It was great to feel that accent, and see this gentleman in his 70 years with his black beret and his chef outfit, he is a great author in the kitchen and it was through him that I fell in love with Spanish cuisine.
Each time I return to Chile, my dad, knowing that Javier's Kitchen is my favorite, reserves a table there, and waiting to return to enjoy those great dishes, I console myself with this delicious Crema Catalana taking the occasion that my hubby just bought for me a kitchen torch.
I hope you enjoy it as much as I did. Here is the recipe.

For 2 to 3 people (depending on the type of mold used)
Ingredients:
Milk - 500 ml
Eggs - 4 egg yolks
Sugar - 8 tablespoons
Cinnamon - 1 stick
Lemon - zest of 1/2 lemon
Orange - zest of 1/2 orange
Vanilla - 1 tsp of vanilla extract
Cornstarch - 1 tablespoon
Sugar cane - all you want, I used about 4 tablespoons

Directions:

In a pot, heat the milk (reserve aside a little milk to mix with cornstarch, just like 1/8 cup) with cinnamon, vanilla, lemon zest and orange juice. Boil and leave to infuse for 5 minutes. Meanwhile beat the egg yolks with sugar until it becomes frothy. Add hot milk (strain it first) to the eggs mixture and also add the cornstarch mixed with milk. Mix well and put everything back into the saucepan over low heat. Cook stirring constantly until consistency will be acquired.
Pour the cream into the moulds, let cool at room temperature before taking into the refrigerator.
Refrigerate. I left it overnight. Then before serving put the sugar cane on the surface and caramelize with the torch. Serve.

Soufflé de Queso al Pesto – Cheese Souffleé with Pesto




Whole kitchen en su Propuesta Salada para el mes de Enero nos invita a preparar todo un clásico de la gastronomía francesa, un Soufflé.
El Soufflé es ideal para una entrada o un acompañamiento. Personalmente lo prefiero como entrada, porque su textura suave nos prepara para los platos a seguir. Y como siempre, basta un poco de imaginación para crear con una receta básica de Soufflé distintos tipos de éste.
La receta me gustó mucho, la unica cosa es que aumenté un poco el tiempo de cocción.
Asi que aquí vamos con el resultado, pero antes quiero agradecerles tanto a todos ustedes por vuestras lindas palabres durante este periodo...vuestras palabras han sido de gran conforto. Mil Gracias!!
Ahora si, aquí vamos con la receta a la cual agregué solamente el pesto.

Ingredientes:
por Michel Roux
Mantequilla ablandada – 50 gr
Queso Gruyere rallado – 50 gr
Mantequilla – 20 gr
Harina – 20 gr
Leche – 250 ml
Sal y pimienta recién molida
Una pizca de pimienta de cayena
Yemas de huevo - 6
Claras de huevo - 10
Queso Gruyere finamente rallado – 240 gr
Pesto – 4 cucharadas

Preparación:
Precaliente el horno a 200ºC. Bata las claras con una pizca de sal hasta que esté a punto de nieve.
Engrase el interior de 8 recipientes de 8 cm de diámetro (o 4 recipientes para suflé de 10 cm de diámetro) con la mantequilla.
Ponga 50 g de gruyere rallado en uno de los recipientes, gírelo para cubrir el interior y luego vierta el gruyere sobrante en otro de los recipientes. Repita la operación pra recubrirlos todos.
Para hacer la bechamel, funda los 20 g de mantequilla en una cacerola. Añada la harina y cocínela durante 2 minutos. Sin dejar de remover, añada la leche fría y deje que hierva a fuego medio durante uno o dos minutos.
Vierta la bechamel en un cuenco. Sazónela ligeramente con sal, pimienta y cayena e incorpore las yemas con las varillas. Cubra el cuenco con film transparente y deje que se enfríe un poco. Agregar el pesto y mezclar.
Incopore enseguida, con unas varillas, una tercera parte de las claras con una mezcla templada para el soufflé y luego con una cuchara larga, vaya introduciendo el resto con una mano mientras espolvorea el gruyere con la otra. Deténgase cuando la mezcla esté amalgamada.
Introduzca esta mezcla en los recipientes de modo que quede 5 mm por encima del borde. Allane la superficie con una espátula y use la punta de un cuchillo para retirar la mezcla de los bordes de cada recipiente y así ayudar a que la mezcla suba.
Coloque los recipientes en una bandeja profunda resistente al calor, recubierta con una capa de papel encerado, y vierta dentro agua hirviendo para cubrir la mitad de la altura de los recipientes. Hornee los soufflé 8 minutos, dependiendo de la medida del molde.

Servir.

Whole kitchen in its salty proposal for the month of January invites to prepare a classic from the French cuisine, a soufflé.
The Soufflé is ideal as starter or side dish. Personally I prefer it as a starter, because its soft texture prepares us for the dishes to follow. And as always, just with a little imagination we can create from the basic recipe of the Soufflé different types of it.
I really liked this recipe, the only thing is that I increased a little the cooking time.
So here we go with the result, but first I want to thank you all so much for your kind words during this time ... your words have been of great comfort. Thanks a lot!
Now, here I go with the recipe to which the only variation I made was adding the pesto.

Ingredients:

Softened butter - 50 g
Gruyere cheese, grated - 50 g
Butter - 20 g
Flour - 20 g
Milk - 250 ml cold
Salt and freshly ground pepper
Pinch of cayenne pepper
Egg yolks - 6
Egg whites - 10
Finely grated Gruyere cheese - 240 g
Pesto - 4 tablespoons

Directions:
Preheat oven to 200ºC. Beat the egg whites with a pinch of salt until stiff peaks form.
Grease the inside of 8 containers or ramekins of 8 cm in diameter (or 4 soufflé containers 10 cm in diameter) with butter.
Put 50 g of grated cheese in one of the ramekins, turn to coat the inside and then pour the remaining cheese in the rest of the ramekins.
To make the bechamel, melt the 20 g of butter in a saucepan. Add flour and cook for 2 minutes. Stirring, add the cold milk and bring to a boil over medium heat for a minute or two.
Pour the bechamel in a bowl. Sprinkle lightly with salt, pepper and cayenne and stir in the egg yolks. Cover the bowl with plastic wrap and let cool slightly. Add the pesto and mix.
Then add a third of the whites with to the soufflé mixture, then with a long spoon, you introduce the rest with one hand and sprinkle the gruyere with the other. Stop when the mixture is amalgamated.
Pour this mixture in into the ramekins. Flatten the surface with a spatula and use the tip of a knife to remove the mixture from the edges.
Place the ramekins in a deep pan heat resistant, coated with a layer of wax paper and pour in boiling water to cover half the height of the containers. Bake the soufflé 8 minutes, depending on the measure of the mold.

Serve.

Quiche Lorraine


Esta receta estaba entre mis pendientes, con tantas cosas por hacer, finalmente me decidí a prepararla, es bastante simple de preparar y el resultado es óptimo.
El Quiche Lorraine es una receta típica francesa, pero vamos que este rico plato se disfruta en todas partes.
Aquí les dejo esta deliciosa receta.

Ingredientes:
Para la masa:
Harina – 200 gr cernida
Mantequilla – 100 gr fría en cubos
Huevos – 1 batido
Sal

Aceite de Oliva – 1 cucharada
Tocino – 175 gr
Cebolla – 100 gr
Huevos – 4 (2 enteros y 2 yemas)
Crema – 200 ml
Perejil – 1 cucharada
Queso rallado – 100 gr (cheddar, gruyere o parmesano)
Sal y Pimienta


Preparación:
Para la masa el modo más rápido es poner harina, mantequilla y sal en un procesador de comida y mezclar hasta obtener migas. Agregar de a poco el huevo batido hasta que la masa se una. Envolverla en papel transparente y llevar al refrigerador por al menos 30 minutos.
Luego la ponemos en un molde de torta o de kuchen, cubrir con papel de horno y poner porotos secos (judias secas) para que la masa no se levante. Llevar al horno precalentado a 180ºC por unos 15 minutos, luego retiramos el papel con los porotos y continuamos la cocción por unos dos minutos. Dejar enfriar.

En un sartén calentar el aceite y cocinar el tocino. Remover y secar el exceso de aceite. En el mismo sartén agregar la cebolla y cocinar por unos 10 minutos. Dejar enfriar.
Batir los huevos, con la crema, perejil, queso y agregar el tocino y la cebolla. Mezclar bien y salpimentar a gusto.
Poner la mezcla sobre la masa y llevar a horno precalentado por 180ºC por unos 40 minutos hasta que el centro esté firme.
Servir.

Ingredients:
For the shortcrust pastry:
Flour – 200 g sifted
Butter – 100 g chilled and diced
Eggs – 1 beaten
Salt

Olive oil - 1 tablespoon
Bacon - 175 g
Onion - 100 g
Eggs - 4 (2 whole and 2 yolks)
Cream - 200 ml
Parsley - 1 tbsp
Grated cheese - 100 g (cheddar, gruyere or parmesan)
Salt and pepper


Directions:

To make the shortcrust the fastest way is to put flour, butter and salt in a food processor and mix until crumbly. Pour slowly the beaten egg until the dough just comes together. Wrapped in cling film and refrigerate for at least 30 minutes.
Line the tin with the pastry, cover it with greaseproof paper and add dry beans so the pastry does not rise. Bake in preheated oven at 180 º C for 15 minutes, then remove the paper with the beans and continue cooking for about two minutes. Allow to cool.
In a skillet, heat oil and cook the bacon. Remove and blot excess oil. In the same skillet add the onion and cook for about 10 minutes. Allow to cool.
Beat the eggs, cream, parsley, cheese and add the bacon and onion. Mix well and season to taste.
Pour the mixture over the dough and place in the oven preheated to 180 º C for 40 minutes until center is firm.

Brigadeiro


Me ha siempre gustado el Brasil...su gente, sus paisajes, su comida, sus playas, su música y la alegría a flor de piel de su pueblo. He siempre tenido un gran respeto y afecto por esta tierra, sintiéndola casi como si fuera parte mía. Nosé si pasa solo a mi, pero es como si sintiera de tener una segunda patria...Adoro mi país y también Italia, pero Brasil me ha siempre cautivado...He visitado varias veces este hermoso país, del cual conservo sólo hermosos recuerdos y siento una “saudade” que me hace querer volver a la primera oportunidad.
Los caminos de la vida me han llevado a construir una larga y linda amistad en ese país, una de esas amistades que duran y sobreviven a pesar del tiempo, la distancia y la falta...Conocí a mi magnifica amiga brasileña hace ya 12 años, a lo largo de los cuales hemos testimoniado y seguido la vida del otra, diplomas, universidad, trabajos, matrimonios y recientemente me ha hecho tia.
Mi querida amiga hace un tiempo me mandó esta deliciosa receta de estos dulces típicos que se preparar especialmente para las fiestas y celebraciones, sobre todo para los más pequeños. Es muy fácil y rápida de preparar y el resultado es fantástico.
Aquí les dejo esta receta llena de nostalgia por esta tierra.

Ingredientes:
Leche condesada – 1 lata
Margarina o Mantequilla sin sal – 2 cucharadas
Cacao en polvo – 4 cucharadas
Chocolate granulado para decorar


Preparación:
En una olla ponemos a fundir la leche condesada, con la margarina o mantequilla y el cacao.
Cocinar a fuego medio y mezclar con una cuchara de palo. Cocinar hasta que la mezcle se empice a desprender de la olla. Cuando veamos que pasandola cuchara de palo en el fondo de la olla, la mezcla de separa.
Dejar enfríar. Untarse las manos con mantequilla y hacer las bolitas cubriéndolas con el chocolate.
Dejar reposar un poco en el refrigerador, en modo que tomen consistencia.

I have visited several times this beautiful country, of which I keep only beautiful memories and I feel a "saudade" that makes me want to return at the earliest opportunity.

Ingredients:
Condensed milk - 1 can
Unsalted margarine or butter - 2 tablespoons
Cocoa powder - 4 tbsp
Granulated chocolate to decorate

Directions:

Melt in a pot the condensed milk, the margarine or butter and cocoa.
Cook over medium heat and stir with a wooden spoon. Cook until the mixture starts to detach from the pot. When we see that passing our wooden spoon at the bottom of the pot, the mixture separates, then it’s ready.
Allow to cool for a while. Grease your hands with some butter and make balls then cover them with the chocolate.
Let them stand a bit in the refrigerator, so can take consistency.

Chili con Carne - Chili with beans and Ground beef



Whole kitchen en su Propuesta Salada para el mes de Octubre nos invita a preparar todo un clásico de la cocina Tex-Mex, un Chili con Carne.
Nunca había probado preparar el chili con carne en casa, y la verdad es que el resultado fue muy satisfactorio, por lo que atesoraré esta receta para mis cenas y almuerzos de tacos y burritos!

Aquí les dejo esta deliciosa receta.

Ingredientes:
Cebolla - 2 medianas
Dientes de ajo - 2
Zanahorias - 2 medianas
Apio – 2 pencas
Pimientos rojos - 2
Guindilla en polvo – 1 cucharadita
Comino molido - 1 cucharadita
Canela solida - 1 cucharadita
Sal marina
Pimienta negra recién molida
Porotos rojos cocidos ** - 700 gr
Tomate en lata troceado – 800 gr
Carne de ternera picada – 500 gr
Cilantro fresco – 1 manojo
Vinagre balsámico – 2 cucharadas
Aceite de oliva
** Podéis poner alubias blancas, o mitad y mitad, también garbanzos, lo dejo a vuestro gusto.


Preparación:

Pelamos y picamos muy fino las cebollas, el ajo, las zanahorias y el apio. Continuamos partiendo por la mitad los pimientos rojos, retiramos los tallos y las semillas y lo picamos (aquí podéis hacerlo fino o grueso, según vuestro gusto).

Ponemos en una olla a fuego medio el aceite y vertimos todas las verduras que hemos picado, añadimos la guindilla, el comino, la canela, la sal y la pimienta, lo dejamos freír todo durante unos 7 minutos sin dejar de remover o hasta que veamos que las verduras estén tiernas.

Agregamos la carne picada, y la vamos deshaciendo con la espátula de madera hasta que nos quede suelta, seguidamente añadimos el tomate y las judías. Agregamos unos 400 ml. de agua.

Del cilantro solo vamos a utilizar los tallos, que picaremos muy finito, lo añadimos a la olla. Añadimos el aceto/vinagre balsámico, lo salpimentamos un poco más.

Lo llevamos a ebullición y una vez llegado a este punto lo dejamos cocer todo a fuego bajo con un suave hervor, con la olla medio tapada durante una hora, removiendo de vez en cuando para que no se pegue.

Servir tibio.

Red beans - 700 g cooked
Canned chopped tomatoes - 800 g
Ground beef - 500 g
Fresh coriander - 1 bunch
Balsamic vinegar - 2 tablespoons
Olive oil
** You can use white beans, or half and half, also peas, I leave it to your liking.

Directions:
Peel and finely chop the onions, garlic, carrots and celery. Continue cutting in half the red peppers, remove stems and seeds and chop (here you can cut it thin or thick, according to your taste).

Pour in a pot over medium heat the oil along with all chopped vegetables, add the chili, cumin, cinnamon, salt and pepper, let it all fry for about 7 minutes, stirring or until we see vegetables are tender.

Add ground beef, and press it with wooden spatula until it loose , then add the tomatoes and beans. Add about 400 ml. water.

From the coriander we will just use the stems, chop them very finely, and add them to the pot. Add the balsamic vinegar, and season it a bit more.

Let it boil and once it gets to this point let it cook over low heat to a gentle boil, with the pot partially covered for one hour, stirring occasionally to prevent sticking.

Serve warm.

Burritos de pollo y Margarita (Chicken Burrito and Margarita)


Me encanta la comida mexicana, sus ingredientes, la mezcla de éstos que conjugan intensos sabores que resultan una delicia para el paladar. Me encanta preparar burritos y guacamole cuando estamos en compañía dado que siempre tienen una excelente aceptación entre los comensales.
El fin de semana invitamos a nuestros vecinos, una pareja jóven como nosotros, muy agradable y simpática a cenar con nosotros, dado que nunca habían probado la comida mexicana, decidí preparales un clásico burrito de pollo acompañado con un delicioso margarita.

Aquí les dejo la receta.

Para 4 Tortillas
Ingredientes:
Tortillas – 4
Pollo – 130 gr trutos
Pimentones – 130 gr
Tomate – 130 gr
Cebolla – 1 pequeña
Ajo – 1 diente
Aceite – 2 cucharadas
Sal y Pimienta – a gusto

Para el guacamole:
Tomate – 1
Palta (Avocado) – 1
Sal
Pimienta
Picante
Ajo (yo uso en polvo un poquito)

Para el Margarita:
Tequila – 1 medida
Jugo de Limón – 1 medida
Triple sec – ½ medida
Sal
Hielo

Preparación:
En una olla calentamos el aceite y salteamos la cebolla y el ajo. Agregamos los trutos de pollo y doramos por unos minutos. Agregar los tomates y los pimentones. Salpimentar y tapar la olla. Dejar cocer a fuego dulce por unos 45 minutos. Controlando que no se queme el pollo.
Una vez que el pollo esté cocido, con dos tenedores, lo desmenuzamos. Reservar.
Preparar el guacamole. Cortar en trocitos el tomate. Moler la palta y mezclar con el tomate y condimentar.
Calentar las tortillas y agregamos el relleno de pollo y de guacamole. Envolver la Tortilla y servir.
Para el margarita, preparamos las copas decorando con sal el borde. Mezclar todos los ingredientes y servir.

I love Mexican food, its ingredients, the mixing which gives intense flavours that are a delight to the palate. I love to cook burritos and guacamole mostly because they always have a great acceptance among the guests.
A few days ago, we invited our neighbours, a young and adorable couple for dinner and I decided to cook for them a Mexican dish since it’s easy, delicious and it was a whole new experience for them! I chose to cook chicken burrito served with a delicious Margarita and we all passed a very pleasant evening with a Mexican style.

Here is the recipe.

Serves 4
Ingredients:
Tortillas - 4
Chicken tights - 130g
Bell peppers - 130g
Tomato - 130g
Onion - 1 small
Garlic - 1 clove
Oil - 2 tbsp
Salt and pepper - to taste

For the guacamole:
Tomato - 1
Avocado - 1
Salt
Pepper
Spices, chilli
Garlic (I use a little powder)

For Margarita:
Tequila - 1 measure
Lemon juice - 1 measure
Triple sec - ½ measure
Salt
Ice

Directions:
In a saucepan heat the oil and fry the onion and garlic. Add the chicken tights and cook for a few minutes. Add the tomatoes and bell peppers. Season and cover the pot. Cook over gentle heat for about 45 minutes. Controlling it will not burn the chicken.
Once the chicken is cooked with two forks, shred the chicken. Set aside.
Prepare the guacamole. Chop tomatoes. Grind the avocado and mix with the tomato and seasoning.
Heat the tortillas and add the chicken filling and guacamole. Wrap the tortilla and serve.
For the Margarita, prepare the glasses decorating the rim with salt. Mix all ingredients and serve.

Falafel


El falafel es un plato originario del Medio Oriente que consiste en una croqueta de habas o garbanzos. Generalmente se sirve como entrada acompañada de salsas o bien como relleno del pan pita.

Desde hace tiempo que quería probar esta receta, así que aprovechando de unos garbanzos que tenía en casa, decidí animarme y aventurarme. Es una receta muy simple e ideal para vegetarianos, pero hasta los carnívoros disfrutarán sin duda de este plato.

Aquí les dejo la receta y que pasen una excelente fin de semana.

Ingredientes:

Garbanzos – 350 gr
Perejil -3 cucharadas
Cilantro – 2 cucharadas
Ajo – 2 dientes
Harina – 5 cucharadas
Bicarbonato – ½ cucharadita
Comino
Sal
Pimienta
Picante
Aceite para freír

Preparación:

Como primera cosa, la noche anterior, dejamos remojando los garbanzos en un bowl con agua fría (al menos unas 12 horas). Luego de que, colamos.
En una procesadora ponemos los garbanzos crudos y colados, el perejil, el cilantro, el ajo, la harina, el bicarbonato el comino, y condimentamos. Pasamos todo por la procesadora hasta que resulte una pasta bastante harinosa.
Formamos bolitas con la pasta, aplastándolas muy ligeramente con la palma de la mano. Ponemos en un plato y dejamos en el refrigerador por al menos unas 2 horas, en modo que las bolitas tomen consistencia.
Calentamos el aceite en una olla y disponemos las bolitas (no poner más de 4 -5 bolitas) y freímos hasta que estén doradas.
Servir frías o calientes en pan pita o acompañadas con salsas.

Falafel is a dish original from the Middle East that consists of a croquette of fava beans or chickpeas. It’s usually served as an appetizer with sauces or as a pita filling.

I’ve wanting to try this recipe for a long time, so this time I found in my kitchen some chickpeas and BINGO!, I decided to experience this adventure. It is a very simple recipe, ideal for vegetarians, but even the carnivores will definitely enjoy this dish.

Ingredients:
Chickpeas - 350g
Parsley -3 tbsp
Coriander - 2 tbsp
Garlic - 2 cloves
Flour - 5 tbsp
Baking soda - ½ tsp
Cumin
Salt
Pepper
Chilli
Oil for frying

Directions:
To begin, we need to pre-soak the chickpeas the night before in a bowl with cold water (for at least 12 hours). After that, we strain them.
In a food processor put the drained chickpeas, parsley, coriander, garlic, flour, baking soda, cumin, and condiments. We pass all by the processor until you get a soft paste.
We form the dough into balls, crushing them slightly with the palm of the hand. Put them on a plate and leave them in the refrigerator for at least 2 hours, so that the balls get consistency.
Heat the oil in a pot and add the balls (do not put more than 4 -5 balls) and fry until golden brown.
Serve hot or cold in pita bread or served with sauces.
